30th visit - Peru, Alto Amazon, Tipica, Washed Democratic Republic of the Congo, Lukeno Washing Station, Blue Mountain, Natural Not your typical Blue Mountain. It has a refined taste with a hint of elegance. It was delicious as expected. Thailand, Doi Saket, similar to what I had last time.

I used to pass by this coffee shop without reason once I knew there was one here. The door was open, and at first, it smelled like cigarettes, but that eventually disappeared. Today is the day I leave Hiranishi after spending 20 years and 1 month. All that's left is to return the keys, so it's my first visit to this shop. As soon as I entered, the owner said, "You're looking for coffee, right?" and probably the owner came over. He showed me how to make coffee in the same way I do and let me taste it. It was sweet and very delicious coffee. When I mentioned that I can only use a propeller-type grinder due to circumstances, he still gave me hints on how to brew delicious coffee. He also recommended a good and affordable grinder for my next purchase. The owner focused on coffee talk without asking any private questions. I learned things that I couldn't find on the internet at this shop. I was actually going to buy a 200g blend, but at the owner's suggestion, I bought a 100g tea blend (beans) to see the size of the ground beans clearly. He also gave me 100g of Guatemala Guavador Parkswine (powder) as a bonus. He said he gives 100g as a bonus to first-time buyers. I think he chose this for me in our conversation because I like beans from Central and South America. I tried it at home. I was worried that the powder would become hard once opened, but it expanded for almost a week! What was I drinking before (laughs). It was all good. Looking back, the reason I wanted to live in Hiranishi was because there were many shops on Hiranishi Street that dealt with old books, old records, and old movie flyers. They are no longer there now... I never thought I would become a coffee lover and end my day with coffee. When I started living in Hiranishi, I used to put a cone-shaped filter in a trapezoidal dripper and say, "That's strange," and so on (laughs). The owner also said that this shop is the first place to come to when you start to become interested in coffee. But it's hard to enter, you know (laughs). The next customer after me was probably a teenage girl who came in like, "I'm here!" No need to be scared at all (laughs). I'm glad I could come here at the end. I won't be able to brew my own coffee with Hiranishi water anymore.

Brazil Fazenda Dona Lina Catuai Peaberry/Natural, not oily, well-trained, nicely put together. Guatemala Oriente Wet Mill Natural, irresistible♡ Sweet and sour fruits, sweet>acid, delicious. Panama Berlin Farm/Typica Cherry Terroir Smooth, slightly light and acidic. Experimental beans (name forgotten) They shared some with me. Slightly thick with a lingering fruity sensation, rich and mellow with a balanced roundedness, not leaning heavily in any direction. In the near future, established concepts may be overturned. Roasters are like chefs.

I visited the shop for the first time, and the owner kindly offered to introduce me to their favorite beans if I had time. I took up the offer and learned a lot about coffee, including tasting samples. The Tea's Blend was easy to drink with a clean, noble, slender taste, which was the opposite of my preference. The Ethiopia Idido Mountain Dry Natural had a bouquet aroma and gentle acidity, which I preferred over the blend. It not only had acidity but also a good balance of sweetness and bitterness. I felt like I wanted to try all the beans they had.

"I was asked to buy beans!" when I was about to go out. Today, it's rare that both of us have a day off, but surprisingly, we are going out separately. I am going to Sapporo alone, while my wife is going to Obihiro with some friends. So, I ended up having to buy the beans. I went to Hiranishi and found a coffee bean specialty store called "Teas Coffee." There was no information on the memo, why didn't I write it down! From "D Gelato" to "Teas Coffee," what's going on? It's not that strange. When I arrived at the store, I didn't smell the strong coffee aroma. As soon as I entered, I saw the beans displayed on the right. The owner came out and asked, "What kind of beans are you looking for?" Despite the appearance, there weren't many dark roasted beans. I didn't want to say it, but I clearly said, "The deep ones." However, as I mentioned earlier, there was no sense that they were recommending the deep ones. He suggested, "Sumatra," is it? Then he said, "A slightly high-quality Mandelin," which I chose. It costs 600 yen, a normal price. Then, we had a little coffee chat, which was interesting. The owner clearly has a passion for coffee. When I asked, "Why do you insist on dark roast?" he replied, "I don't like acidity." He said, "That's right, acidity is necessary, but if it comes first, it's not good," and explained various things. And this surprised me, "For first-time customers who buy dark roast, we give away light roast beans." "I want you to try both," he said. I was delighted because I could try two types for 600 yen, and I got a souvenir for my wife. At work, I drank "Indonesia Sumatra Tiger French," and at home, I drank "Guatemala Republic Plan Del Cuayo Farm SL29 Waini." The "Sumatra" was almost black even when ground, and I was worried it might be over-roasted. But it turned out to be delicious without any coarseness, with a moderate weight and no vulgarity. I also tried the other one, which was not a direct opposite of the dark roast in terms of color. It had a moderate acidity, bitterness, depth, weight, and sweetness. It was also very delicious coffee. It's enjoyable to have coffee bean discussions with the owner in the lovely store. I recommend everyone to visit this place."

I went to a coffee shop in Hiragishi. The location is a few minutes from exit 2 of the Namboku Line Hiragishi Station towards Nakajima. I had never noticed it before. It is part of a residential area. The entrance has a wooden sign, a yellow sandwich board, and a simple exterior. As soon as you enter the shop, you see glass jars of coffee beans lined up. There is also a large roaster and a few seats in the cafe area in the back. The owner greeted me and explained the coffee beans to me. The glass jars have detailed descriptions of the coffee beans. Not many shops provide such detailed information. The owner is enthusiastic about the explanations and it's very likeable. There are so many brands available. There were about 5-6 types of coffee beans from Brazil alone. I purchased 4 types while consulting with the owner. 1) Costa Rica (Donia Haeru Farm Honey) City Roast (650 yen/100g) When you taste it, a moderate bitterness and a fragrant taste spread with a refreshing acidity. It's enjoyable how the taste changes. Overall, it's a light coffee. 2) Brazil (Santa Catarina Farm Cafe Vigno) City Roast (610 yen/100g) A pleasant richness and a faint sweetness mix with a floral aroma in balance. It has a smooth taste, so you can feel the richness well. There is hardly any acidity. 3) Guatemala (Parasha Farm Tipica Wainee) High Roast (620 yen/100g) A rounded bitterness, floral aroma, and taste accompany you. There is acidity, but it comes out behind the bitterness and richness. When you swallow, a cherry or red wine-like taste emerges. 4) East Timor (Corina) City Roast (630 yen/100g) A deep richness appears the moment you drink it. The richness seems to outweigh the bitterness. As it cools, the acidity comes out. This coffee leaves a lingering aftertaste of bitterness and acidity. The selection of specialty coffee beans is abundant, and you can choose from a wide range of beans from various countries. The quality of the coffee is excellent. In my conversation with the owner, I learned that the shop has been around for 17 years. I wish I had visited earlier. I will now visit occasionally to buy rare beans.

I went to Teas Coffee in Hiragishi, Toyohira Ward. I found it by chance on my way to the Yakuji Hall. I first visited in February this year and have been back several times since. It's conveniently located near Hiragishi Station on the subway. They have a variety of specialty coffees available in the shop. While you can't drink coffee like in a cafe inside, you can cup the beans you're considering purchasing. It's a kind service from the shop, so please use it with good manners. I cupped the coffee at the counter this time. I usually only drink "Geisha" beans when it comes to Panama, but I didn't know there were beans like this. It had a refreshing fruity taste with a hint of fruitiness. It was delicious. By the way, this shop is owned by the roaster Tomikashi. That's why it's called Teas Coffee? Tomikashi is very knowledgeable about coffee, and I always learn from him. He recommended the Cherry Terroir 100g (670 yen) to me, which he secured 40kg out of the total production of 450kg. It's a precious coffee bean. I bought it immediately. Also, he brought it from Panama to Colombia for cultivation. I also tried the Geisha from Colombia. It's interesting how the flavor is right in the middle. Teas Coffee is one of my favorite shops, along with Katayama, Amami, and Marumi. Tomikashi is a busy person, and there are times when he goes out for deliveries. Please confirm their business hours by phone before visiting. I enjoyed it once again this time. Thank you very much.

There is a shop a short walk from the subway station. If you go by car, you can park right in front of the shop. As soon as you enter the shop, you will see coffee beans on the right. The shop owner will greet you as soon as you start looking at the beans. When you tell them your taste preference, they will let you smell the aroma of the beans. For the first time, you will receive beans that are different from what you purchased before. I brew at home using a paper drip, and I have purchased beans from several shops, but I think the beans here are among the best in Sapporo. The shop owner is someone who clearly loves coffee. The more you talk to them, the more you can feel their unique personality and passion. I won't go into detail because I want you to go and experience it for yourself, but they are a wonderful person with a lot of character.
