This shop is run by a classmate from high school who is known to serve delicious food, although it may be a bit pricey in Chitose. They have two generations of chefs who trained in Kyoto, and their cooking skills are quite impressive. On the day I visited, as a treat from me, they specially prepared the "phantom freshwater fish" called Chippu (landlocked salmon or Hime salmon) that they had caught themselves. I had never heard of "Chippu" before, and honestly, I could only think of "potato chips" when I heard the name, but it was truly delicious. It was incredibly fresh, with no fishy smell, a delicate flavor, and a rich umami taste that I can't put into words. They served both sashimi and grilled fish, both of which were exquisite. I had never tasted such delicious fish before. After enjoying various delicious sashimi dishes and feeling quite full, they brought out a tempting unagi (eel) rice bowl. Even though I felt like I couldn't eat anymore, this unagi rice bowl was also delicious. I don't drink alcohol, but my friend had quite a bit of sake, and I thought it would cost around 30,000 yen at a Kyoto ryotei, but surprisingly, the total bill for the two of us was only 12,000 yen. It may be on the pricier side in Chitose, but considering the opportunity to enjoy the phantom Chippu, high-quality unagi, sushi, and premium sake, 12,000 yen is quite a reasonable price. However, I believe this price was a special rate for my classmate, so the regular price may be higher. Also, since the Chippu is caught by themselves, it may not be available at all times. Regardless, this is a restaurant that caters to those who appreciate authentic and satisfying food. It's definitely worth a visit.
