Hakodate Salt Jingisukan - No Name Yet. [First Visit - July 2018] A reservation-only restaurant that operates as a ramen shop called "Local House of Ebi Dashi Ramen" during the day and as a salt Jingisukan restaurant called "No Name Yet." from 6:00 pm. The exterior of the restaurant looks like a typical ramen shop with just a new curtain, so be sure not to miss it. We ordered the following items: Special Hakodate Salt Negi Jingisukan (100g per serving / 890 yen), Raw Lamb Jingisukan (100g per serving / 850 yen), Lamb Chop (890 yen per piece), Asparagus (200 yen per piece), Seasonal Grilled Vegetables - Nagaimo (300 yen for 2 pieces), Homemade Hokkaido Wasabi Salted Fish Roe (300 yen), Chopstick Rest - Octopus and Pickled Radish Marinated in Lemon (500 yen), Grilled Foil with Hokkaido Mozzarella Cheese and Kimchi (450 yen), Half Ebi Dashi Ramen Salt, Half Ebi Dashi Ramen Miso, Sapporo Classic Draft Beer (550 yen), and more. The Special Hakodate Salt Negi Jingisukan offered a unique way of enjoying Jingisukan. The raw lamb shoulder loin is marinated in the restaurant's original sesame oil and homemade salt sauce. The meat is then grilled with plenty of Hokkaido green onions on top. The meat is juicy and fresh, with no unpleasant odor, showcasing the quality of the lamb. The Raw Lamb is not seasoned and served with three condiments - red pepper, kombu salt, and thyme salt. The meat is cut into thick slices, offering a tender and juicy texture. The Lamb Chop is well-grilled on the surface and served with wasabi ponzu sauce. The vegetables are also delicious, including seasonal items like asparagus and nagaimo. The menu offers three types of lamb meat, with additional ramen and side dishes to complement the meal. The restaurant has a cozy atmosphere, perfect for a 1 to 1.5-hour dining experience. The Ebi Dashi Ramen, especially the salt version, is a must-try. The only drawback may be ventilation, as the restaurant was originally a ramen shop and could get smoky. However, the delicious salt Jingisukan and fresh lamb make it a recommended dining spot in Hakodate.
