I'm weak when it comes to brands and titles (sweating). On a certain day in August, as I was walking to have lunch, I noticed a stylish bistro with a sign saying "Ramen with a Serious Commitment to Taste" in front of it. It mentioned "Ramen and Curry made by a French Chef with dedication." A French Chef, huh... Sounds delicious. I automatically think that way based on the title. When I hear French, I immediately think of the creative flavors of "Nui" and "Sengin" made by the same French Chef... I was drawn in and entered the shop. The shop had a chic bar style. I sat at the counter and looked at the menu. The ramen menu consisted of old-fashioned soy sauce, rich miso, shrimp broth, spicy miso, and spicy oil soba, a total of five types. I promptly ordered the "Rich Miso Ramen" for 850 yen. It arrived in about 5 minutes. The noodle bowl, black as lacquer, contained brown miso soup, seared chashu, nori, white and green onions, spinach, and menma. The visual presentation was beautiful. Now, let's dig in♪ First, the soup. The miso aroma is fragrant, but I didn't feel much of the umami supporting the miso sauce. It was a light and mild soup. Personally, I would have liked a bit more richness, saltiness, and depth. The noodles were thin, loosely curled noodles. They were provided by Nishiyama Seimen. Next, the menma and spinach. Both were slightly cold due to being added later, which was a bit disappointing. On the other hand, being a meat specialist, the chashu was delicious. It was made from thick slices of pork belly that were seared. It was thick and had a nice chewiness. So, once again, I finished every last drop of the soup and cleaned my bowl. Well, it was quite a "mild ramen overall." If you're going to compete in the competitive ramen field, you may need a different perspective from the French approach. I feel like it needs a little more, maybe a little extra something. The taste might be divisive. On the other hand, I had a good impression of the service. Also, the reviews for things other than ramen were highly rated. Their expertise in wine and meat dishes may be amazing. Thank you for the meal. *107th bowl in 2021 (visited on August 17, 2021).
