This is a business trip to Hakodate. I stayed at the usual hotel in the Odori area, checked in, and went out for dinner around 8 pm. This time, I visited a restaurant that had caught my eye before, with a red lantern hanging outside, called "Sakura". The window had a sign saying, "Feel free to come in even if you are dining alone!" so I took up the offer and entered the restaurant alone. Inside, it seemed like the first round had just finished, and there was a slight smell of grilled meat in the air. I sat at the counter on the left and ordered the "Evening Drink Set" for 1600 yen since I was dining alone. Soon, a glass of beer and a bean sprout namul-style dish were served. The staff said, "You can have one more beer," as I quenched my dry throat. Then, a charcoal grill with red-hot coals was placed in front of me, along with plates of salted hormone, pork "turami", and "sagari", along with lemon juice. Feeling hungry, I placed the hormone, turami, and sagari on the grill. When I asked a young staff member what "turami" was, they said it was the part of the pig's face. It's a local specialty using the head part, similar to "kashira" in yakitori. Just like fish, it's a part that is well-exercised, so the meat has a satisfying texture. The hormone, made using the rectum, had an irresistible texture and flavor. Both the meat and hormone were seasoned with salt, so there was no sauce, just lemon juice, but they were grilled to perfection on the charcoal grill. The meat and hormone were exceptional.
