I ordered the Night-crying Chinese soba (1,000 yen) and the Green onion rice (400 yen) for a total of 1,400 yen. I visited on Friday at 8:00 PM. There was one staff member, a college student, and four customers already seated. There were dishes left by the previous customers for two people. The owner was not present, as they were at a new location. It would be better if the used dishes were cleared quickly. It's a bit uncomfortable to see leftover food from strangers next to you. Considering it's a standing eatery, the prices are on the high side. The strong seafood-based soup was decent, but a bit pricey. The Chinese soba would be more reasonable at 600 yen. The Green onion rice at 400 yen had poor cost performance. For this price, it should come with meat! (laughs) Green onion rice at 200 yen would be more acceptable. It seems they are promoting the fact that an active college student is running the place, but it seems they may have intentionally taken a leave of absence for marketing purposes. It's a good selling point. Depending on the daily special noodles, I may consider revisiting. Thank you for the meal.

First visit to #ramenichi. RAMEN ICHI is located in Chuo Ward, Sapporo, Hokkaido. It opened in April 2021. This is my second visit on a food expedition. A ramen shop that appeared in Susukino like a comet. The young owner seems to have attracted attention by opening the shop when he was still a student. This time, I ordered the Night Crying Soba as a finishing dish.
- Soup: A broth rich in the umami of fish with the aroma of dried fish and kelp. The seasoning is relatively modest, allowing the broth to take the lead in a balanced way. The combination of bitter dried fish and kelp creates a lingering umami in the soup. You can feel the sweetness and fragrance from the surface oil.
- Noodles: Flat and chewy noodles made by Maruyama Seimen. The hand-kneading process in front of you adds a sense of presence. The chewy and random texture of the noodles complements the soup well.
- Toppings: Pork cha-shu, green onions, onions, clams, seaweed.
Overall, I was able to enjoy a ramen with a rich broth that makes you want to eat it after drinking. I felt like there was a bit too much oil, but this may be a matter of personal preference. I look forward to the future of the still young owner. Thank you for the meal.

After a reflection meeting, I visited RAMEN ICHI for a closing ramen. This place specializes in a single menu item for the night, which I like for its simplicity. I ordered the "Night Crying Chuka Soba" and it arrived promptly after a few minutes. The atmosphere is standing-only, which I found appealing. The soup had a strong seafood base, more on the "seafood" side rather than just "fish", with a decent amount of saltiness. The noodles were handmade flat noodles in Kitakata style, which had a good texture and mixed well with the soup. However, as I continued eating, I felt that the seafood flavor didn't quite match the noodles. I tried adding freshly ground black pepper from the counter, and it completely changed the flavor profile, making it taste more like traditional Chuka Soba and eliminating the seafood taste. This version was much more delicious. After the flavor change, my appetite increased and I finished the bowl quickly. Overall, this ramen as a closing dish was a good choice.

Today's final stop is RAMEN ICHI. After discussing with colleagues where to end the night, we decided to try this new place for the first time. We arrived around 11:20 PM and found only one group of 4 customers inside, with one person waiting. There were no chairs in the restaurant, so it was standing room only. Since we were already drinking, we wished there were seats to sit and relax.
Our order for the night was:

- Green onion and egg rice: 400 yen
Our food arrived in about 5-6 minutes. The ramen had a unique visual presentation that we had never seen before. The soup had a strong seafood flavor with a good balance of umami and saltiness, despite appearing light. It was really delicious! The noodles were medium thickness, slightly wavy, and chewy. I ordered the New Burdock and Young Chicken Soba for 1400 yen. It arrived - I took a sip of the soup. It's almost all chicken broth, like a soba dipping sauce. Wow, I can't believe I found ramen here that's like soba! The thin noodles are to my liking, sliding smoothly down my throat. The crispy texture of the new burdock floats in the dipping sauce. It goes well with the soup, Mr. Burdock. The young chicken is cut thick and adds a nice touch. I thought I might leave half of it, but I finished it all. Oh, it was so delicious. On March 17, 2023, I had a meal at Teppanyaki Kudou to welcome a guest from Kyushu. I wanted this guest to try the signature dish here, so a total of 4 people came to Ramen Ichi. We had to wait outside for about 10 minutes before being seated. Without looking at the menu, I ordered the limited dipping noodles, while the guest from Kyushu had the default Yonaki Chuka Soba. The appearance of the dishes was beautiful, with thin noodles that had a good firmness to them. The dipping sauce was smooth and had a refreshing aroma of new burdock and trefoil. The chicken meat was tender and flavorful, and when combined with the dipping sauce, it created a delicious and satisfying meal. The guest from Kyushu also seemed to really enjoy the meal. I have visited this place many times. The Yonaki Chuka Soba is really delicious. When I have it for dinner, I order the Negi-Tama Meshi and eat it with rice, and I also come here often for a late-night meal. The limited-time items they announce on social media always catch my interest, so I end up going to try them out. In the past six months, this ramen shop, ICHI, is definitely the one I have visited the most, haha. The Tsukemen Tan Tan Mazemen they had this time was incredibly tasty, even though I don't have a photo. I hope they bring it back many times this year!
