Visited the evening section of "Susuriya Sakaba Maruishi" for the first time in August 2023. The daytime ramen shop has a green curtain, while the evening sushi izakaya has an orange one. The dishes I tried included: Tuna Oyster Soy Sauce Pickles (complimentary), Salted Fish Roe (400 yen), Shrimp Salted Roe (600 yen), Miso Cheese with Tatami Sardines (450 yen), Hormone Stew (680 yen), Shiitake Mushroom Cheese (630 yen), Squid Ink Potato Salad (600 yen), and Nigiri Sushi (varies). The pre-made dishes like the salted fish roe and shrimp salted roe were well-selected and surprisingly tasty, especially the refined flavor of the shrimp salted roe. The dishes, including the complimentary one, were all intricately prepared and did not feel like typical ramen shop fare. My top recommendation from this visit is the Hormone Stew! The tenderly stewed hormone had a taste reminiscent of the Motsu stew sold at the Fukasawa Butcher Shop in Minami Tarumi and Shin-Minami Tarumi Market, but with a more refined touch. However, to avoid influencing the preparation process too much, it is only available in limited quantities (and may be sold out at times). I also tried a few pieces of Nigiri sushi, and it was evident that the sushi chef's experience and expertise were top-notch, with carefully selected toppings. The only downside was the slightly disappointing state of the sushi rice. Despite this, I believe this restaurant shows great promise and is worth looking forward to in the future.

Visited "Sosuriya Sakaba Maruishi," which opened on the 20th of this month next to the liquor store "Bikkurikki" along the Spar Street in Hanazono. The shop serves ramen and seafood bowls during the day, and will shift to a sushi-focused izakaya at night starting from August 1st. The owner in his 40s has over 10 years of experience working in various establishments, including traditional sushi restaurants, medical facility cafeterias, and a large tourist-oriented store. While specializing in sushi, he also offers ramen during the day. The "Shio Ramen" for 880 yen features a pork and chicken bone base with just the right amount of saltiness and a slightly retro flavor. The noodles are from Kobayashi, a classic Sapporo-style ramen shop, and are served with bean sprouts, white leeks, and tender pork belly chashu. The limited edition "Mini Seafood Bowl" for 900 yen includes scallops, salmon, ikura, sweet shrimp, and tuna on 150g of sushi rice. Although the rice is not vinegared, the seafood toppings are of good quality, especially the thick-cut tuna which leans towards medium fatty tuna. The shop will expand its menu and operating hours in August, offering more ramen variations and continuing to serve quality dishes. Looking forward to what this friendly owner has in store for the future!
