I had the miso ramen with chicken broth. The mild chicken broth with a hint of miso flavor is delicious. The medium curly noodles are tasty when mixed with the soup. The moist chicken chashu and hearty pork chashu are both delicious. Although the soy sauce option is more popular, both have a rich chicken broth base and a refreshing aftertaste that is tasty. The chashu toppings offer great value. Despite being short-staffed, the service is attentive, and the atmosphere is good.

It was a day when I was feeling a bit down. Even though I didn't feel like eating, I found myself being drawn to Sapporo Ramen Soh-san. I usually avoid wheat, but for some reason, this place and Ureshii-san's ramen always seem to be exceptions. I was undecided on what to order. In the past, I always went for soy sauce ramen, but now there's the tempting option of clam ramen. After some hesitation, I decided on the clam ramen. It looked really beautiful. Every ingredient served had its purpose and none could be left out. They all came together to create a perfectly balanced dish from start to finish. It was delicious, and the owner was very nice. I truly want to support this restaurant. By the way, I heard that the chicken here is from Sapporo, but I wonder what makes it special. I'll have to try it next time. Thank you for the meal!

This place is a place where shops change frequently, as soon as you think of going to the previous shop, the next one appears, like rotating flower petals. Nishioka Sugenjido Street is a busy road with a lot of traffic, and there is no room to back into the two parking spaces in front of the store. You just have to drive in headfirst and park your car. Once inside the store, there is a counter on the right with a face-to-face kitchen, and box seats lined up on the left. The bright and clean interior exudes a sense of cleanliness. Looking at the menu, the large letters immediately catch your eye with "Chicken White Soup" and even labeled as a "Recommendation". So, without further ado, I order the "Chicken White Soup Shoyu Ramen (880 yen)" and also add a side of "Ume Rice (150 yen)". After a few minutes of waiting, the ramen is served. The creamy white soup with a red ladle creates a lovely visual contrast. The soup is rich and velvety, clearly the result of simmering chicken bones meticulously. The noodles are medium-thick curly noodles that perfectly complement the rich soup. The chashu consists of two pieces each of moist chicken breast and seared pork belly, both offering different textures and flavors. The wood ear mushrooms provide a unique texture, while the watercress adds a hint of spiciness. The chicken white soup is flavorful and rich, but could benefit from a bit more complexity in flavor. The staff members are still young, so there is room for improvement in the future. Oh, and the pickled plum in the rice is sweet and well-prepared. Thank you for the meal!

I visited a ramen restaurant located along the Mizumi Street in March 2023. They have a parking lot in front of the store. After looking at the menu, I ordered the chicken white broth soy sauce ramen with rice set. It took about 10 minutes for the food to be served. The soup was served piping hot! It had a rich chicken white broth flavor with not much soy sauce taste, but it was still deliciously rich. The frothy soup was also very nice. The toppings were carefully prepared, and the char siu was tender and tasty, and the noodles were to my liking. The table-side sansho pepper paired well with the soup. The rice was freshly cooked and topped with a plum paste, which added a nice touch.

On a certain weekday, I visited a ramen shop bookmarked for lunch in Nishioka 4, Toyohira Ward. The shop has a parking lot for about 2-3 cars in front. The interior consists of a counter and table seats, maintaining the same layout as the previous ramen shops that have been there for generations. Japanese pop music popular among young people plays in the background. From the menu, I ordered the "Chicken Paitan Shio Ramen (880 yen)" as it seemed to be the specialty of the shop. The dish arrived shortly after. The noodles were yellow, medium-thick curly noodles with a slightly firm and chewy texture, but slightly stuck together. The white, foamy soup, similar to what I had seen at a shop in Kikusui, Shiroishi Ward, had an interesting flavor when tasted. It had a unique taste of ginger before the rich chicken flavor took over, leaving a convincing depth that some might find different. The toppings included shredded chili pepper, watercress & kaiware, green onions, finely sliced wood ear mushrooms, seared pork chashu, and tender chicken chashu. Overall, the soup had a distinct "personality" that sets it apart from others. It remains to be seen if this uniqueness will appeal to a wider audience. Thank you for the meal.

This time, I visited a ramen shop that recently opened in Sapporo, having previously operated in Mikasa. I ordered the salt ramen, which was similar to what I had in Mikasa. The soup was a light chicken broth with a hint of vegetable flavor, although a bit salty for my taste. The noodles were medium-thick, curly, and yellow, slightly overpowering the soup. The dish also included chilled, thinly sliced chicken breast, lightly sautéed bean sprouts, sliced wood ear mushrooms, and chopped scallions. Overall, the salt ramen at the Sapporo location was very similar to what I had in Mikasa.

11:14, the restaurant was full but there was no line outside, probably because it was cold. I had to wait for a seat inside. I was seated at the counter next to Nogu-chan, who was just finishing his meal. When I asked about the Chicken and Onion Ramen, I was told it's a soup made with chicken and onions. There are two options: salt and miso, and I chose miso this time. The soup is creamy and light, but almost too creamy that it's hard to tell if it's miso or salt-based. The bowl is small and only has bean sprouts as vegetables, but I think onions would go better with this soup. It's a light and healthy ramen, but I prefer stronger flavors. It might be a hit for those who like light flavors though.
