In August 2020, "Nishiyama Seimen" is a company that makes Sapporo ramen, known for its thick and chewy noodles with a lot of water. Originally, it was a noodle-making department that branched off from "Daruma-ken" in the current Nijyo Market. In 1947, "Seiji Nishiyama" opened a ramen stall called "Daruma-ken" in Tanukikoji 2-chome. At that time, it was difficult to obtain noodles, so he made noodles during the day and sold ramen at a stall at night. Later in 1949, he stopped the stall and opened a "Daruma-ken" store in the current Nijyo Market. The supply of noodles to other stores increased dramatically. As a result, a large amount of raw noodles needed to be produced. Therefore, in 1950, his cousin, Takayuki Nishiyama was called from Toyama Prefecture to take charge of the noodle-making department. In 1953, a business-use raw ramen factory called "Nishiyama Seimenjo" was established in the central area of the city. In 1963, "Nishiyama Seimenjo" became independent as "Nishiyama Seimen Co., Ltd." with his cousin Takayuki Nishiyama as the first president. That's "Nishiyama Seimen." They also sell a variety of raw ramen and soup at supermarkets. We use their products frequently at home. I visited their direct sales store with my usual companion for lunch. This store is located in the Heiwa-dori area of Higashi-ku, Sapporo, along Heiwa-dori street. Please check the exact location of the store on Tabelog. I visited on a weekday around 12:30 pm. The high two towers that can be seen from afar are the symbol of Nishiyama Seimen. Inside the tall towers, wheat flour for making raw noodles, typical of a noodle-making company, is stored. There is a banner for the direct sales store at the entrance gate. You can park in the parking space for direct sales store customers next to the entrance gate. As you enter the entrance, there is a reception desk on the right. The reception also serves as a direct sales store. When you say "direct sales use," they will give you a thick catalog for direct sales. I think it covers all the general products of Nishiyama Seimen. There are so many products that it's easy to get lost when looking at them. (laughs) My usual companion and I bought the "Gokuen Kinmiso" that we both like. My usual companion made it for dinner. There is a high-quality umami taste. The soup has much more umami than the miso ramen at regular restaurants. However, the price for this type of "packaged raw noodles" is also top-notch. (laughs) That's why it's not widely available at supermarkets. It's convenient to buy directly from the store. Next time, I might try the "Gokuen Kuroshoyu." It was delicious, thank you for the meal.
