Shime ramen at Takaryu. Located in Honcho, a drinking district. It was only 10 pm, but the owner seemed rushed as there were few customers. This area used to have many ramen shops, but due to generational changes and closures during the pandemic, they have become scarce. It had been about 2 years since my last late-night meal. This place is recommended for its salt hormone ramen that is served late at night. I was craving sugar after drinking, and the hormone was delicious and also added flavor to the broth. With extra green onions and vegetables, it was a lifesaver. It had been a while since I felt such a sense of excitement and happiness. Thank you for the meal.

Met up with a friend for drinks at two different places, and on the way back we got hungry so we decided to stop by a ramen shop in the same building as the second bar. They recommended the Miso Hormone Ramen. It arrived in about 7-8 minutes after ordering, and well, it looks pretty much as expected, haha. Now, taking a sip of the soup... It's strong, huh? Well, I guess I'm craving strong flavors since I'm a bit drunk, but just having a strong taste isn't enough for a high rating, especially at night. It's kind of lacking in uniqueness or character in the flavor... It's decent for a late-night meal after drinking, but it doesn't leave a lasting impression that would make me want to come back.

Located in the area of Goryokaku Park, this ramen shop is nestled in a drinking district. I visited for a closing ramen. The interior has counter seats and table seats, and the shop is run by a male owner. Since it was a bit early for closing time, there were no other customers. The owner recommended the ramen with hormone, so I ordered the "Negi Hormone Shio Ramen (850 yen)." I had drunk a bit too much alcohol, so my memory of the taste is uncertain, but I do remember that the hormone in the ramen was delicious with no smell and a soft texture. The shio ramen broth was not too light, with a decent amount of saltiness, making it a satisfying closing ramen. The shop is open until late at night, and the regular ramen prices are around 700-800 yen, so it's not too expensive for a closing ramen.

We used it as a place to finish drinking. It was cold, so I ordered spicy miso hormone ramen, and my companion ordered salt hormone. The miso had a strong saltiness, but the combination of miso was to my liking and delicious. We also shared fried rice, which was simple but quite tasty. Thank you for the meal.
Local favorite miso hormone ramen! Curly noodles, rich soup. When you're drinking, you'll definitely want to eat it. Be sure to try it when you visit Hakodate!

I had some delicious chashu earlier, but even though I have plans tomorrow, I couldn't resist getting some ramen on the way home. I decided to try a popular ramen shop in Hakodate, even though my colleagues didn't have great things to say about it. I ordered the salt ramen for 700 yen. It arrived quickly, within 4-5 minutes. The presentation could have been better, as it looked a bit messy. The soup seemed to be chicken-based and was light and slightly salty. The noodles were thin and had a smooth texture. Overall, the soup and noodles were good for finishing a meal. However, the chashu and menma were disappointing. The chashu had too much fat and was tough and gamey. The menma was overly sweet and had a strange sesame flavor. In conclusion, I might have said it was good if it was just for the broth, but I won't be returning to this restaurant. At least I can say I tried it, as it was a "challenge" shop. (laughs)

What should I do! I ended up drinking highballs alone at the post-drinking party and eating ramen for my last meal... After the post-drinking party, I couldn't eat at all, even though I'm usually a light eater. I was hoping to go home this time, but it was closed again. I asked Kabocha if it's only open at night, but it didn't work. The taxi driver also said we need to be later, but I can't stay out too late. The area around here has a lot of shop owners outside, which adds to the atmosphere. So, I decided to go into a ramen shop. The atmosphere was a bit awkward with a family there, the mother scolding the children. I ended up sitting at the counter. I wanted a homey feeling, so I ordered a salt-based ramen. It had a light taste with a hint of pork bone flavor. It was a clear pork salt soup, even though it was late at night. The noodles were thin and smooth. The pork slices were tender and thin, the bamboo shoots had a sweet taste, and the sesame oil flavor was unusual. The soup had a clear chicken broth taste, but the saltiness was overpowering. I tried not to drink too much of the soup, but it was hard with the thin noodles. The soup was too strong, but the soft-boiled egg was a nice touch. Maybe the strong saltiness was to complement the alcohol, but I prefer a lighter ramen for lunch. I won't be revisiting this place.

Located a little off the main street, this shop seems to specialize in ramen for a late-night meal, as it opens at 7 PM. Despite arriving a bit early at around 7 PM, the owner assured me that it was okay to enter. I quickly ordered the "Tonkotsu Miso Ramen" and it arrived in about 10 minutes. The owner kindly warned me that it was hot. The miso and tonkotsu broth was rich and flavorful, with a smooth texture. The curly noodles were slightly firm, and the toppings included chashu, flavored egg, bamboo shoots, green onions, and bean sprouts. The portion was generous and satisfying. The ramen was more on the creamy side than heavy, making it easy to eat. The friendly and attentive service from the owner left a great impression. Overall, it was a delightful dining experience.

This is a ramen shop in the bustling street of Goryokaku that stays open late at night. I visited with three colleagues for a late-night meal. I had the recommended Negi Horumon Ramen, while the other two had Hakodate Salt and Soy Sauce ramen. It was so delicious that it would be a waste to just have it as a meal to end the night. The lunch menu must be popular too, if they have it. The soup is made from animal ingredients but has almost no odor, and is refreshing with just the right amount of salt. The prices are for late-night dining. I would love to visit again after drinking in Goryokaku. Thank you for the meal.

Welcome.---------- August 2016 ----------A busy street in the Goryokaku Park area with a prominent sign on a mixed-use building, a ramen shop. The owner seemed like a skilled Chinese chef, but turned out to be a calm and gentle person when we spoke later. The shop has a long L-shaped counter with about four tables along the wall, and it gets full late at night. The menu offers a variety of light Chinese dishes and a wide selection of ramen. I'm curious about the "mapo tofu" ramen, but I wonder what time they open. Despite being in Hakodate, I'm in the mood for tonkotsu shoyu ramen today. The broth is moderately oily and light in taste, with a slight richness from the soy sauce seasoning and a slightly strong finish that is satisfying. The thin straight noodles have a firm and al dente texture similar to spaghetti, which I really like. The flat and meaty chashu has a great chewy texture and flavor. The visual presentation with bamboo shoots, half a boiled egg, and slices of leeks is appealing. I might also enjoy the "tonkotsu miso" flavor, but overall, this ramen still tastes more like Chinese cuisine to me. Drunk people prefer high salt content, thanks for the meal.
