I was invited to a meal with acquaintances and visited a restaurant where the chef runs the show solo behind the counter. It's a self-service for drinks. The cuisine is a mix of Japanese and Chinese, with a focus on using natural flavors and umami instead of artificial seasonings. They also offer creative dishes like Singapore Bak Kut Teh. Kudo-san, the founder of a popular ramen shop in Sapporo, runs a Chinese restaurant that I had heard great things about and had been wanting to visit. Thanks to an invitation from friends, I finally had the opportunity to visit this exclusive, reservation-only restaurant in Susukino. Located on the first floor of the Keiwa Building, the restaurant's entrance is discreet and easily missed if you don't know about it. The interior has only counter seats, creating a private and intimate atmosphere. The menu is omakase style, and drinks are self-service with all-you-can-drink options. With only one chef, the self-service style makes sense, allowing guests to enjoy drinks at their own pace. We started with bak kut teh, and from the beginning, Kudo-san's unique style shined through. Dishes like sweet and sour pork, shrimp chili, water spinach, and liver with leeks were all of high quality, paired perfectly with pot-brewed Shaoxing wine. One of the advantages of dining in Sapporo is that you don't have to search for a ramen shop for the perfect ending to your meal. Kudo-san, who founded Yukikaze, offers ramen in miso and soy sauce flavors, providing a satisfying conclusion to the meal. The selection of sake available in the restaurant is impressive, with unique and rare options. The meal continues with a savory steamed egg custard topped with crab meat, scallops, and clams in a delicious soup. You may already know, but at the shop where Mr. Kudo, who made the delicious Yukikaze ramen in the past, you can eat the most delicious Yukikaze ramen of that time. The current Yukikaze has changed management from Mr. Kudo, and it seems that the taste, contents, and way of making have changed, just the name remains. Compared to the Yukikaze from Mr. Kudo's time, it's a completely different thing. The flow of Yukikaze after the change of management, the shining wind, is also completely different from the Denyang. The ramen is delicious, but my favorite restaurant for Chinese cuisine is still the best! It's not heavy at all, with a gentle seasoning, and you can eat it lightly, the opposite of greasy Chinese food. They make it with your favorite ingredients and cooking methods, so there's nothing more to say. Just ask for what you want to eat and eat until you're full! I visited "Wachuka and Men Tanyo" on this day. The restaurant is located in a corner of Susukino in Sapporo, on the first floor of the Daigokei Building. I made a reservation in advance with a friend who is a regular at the restaurant and we entered at 7:00 pm. The restaurant is run by the owner, Mr. Kudo, who opened this place in 2016. He is the founder of "Menya Yukikaze," which created the legend of Sapporo miso ramen, although the management has changed, the name of the restaurant remains the same. I heard that before running Menya Yukikaze, he worked at a Szechuan restaurant in Tokyo, and he used the skills he cultivated there to start this new restaurant. The Chinese cuisine he offers is a complete omakase course, where you can enjoy a variety of delicious Chinese dishes in small portions while considering the customer's stomach condition. On this day, we had the following dishes:
- Chicken wing and daikon soup
- Cloud white meat (pork with Szechuan-style spicy sauce)
- Scallop and Chinese chive stir-fry
- Beef oyster stir-fry
- Three kinds of shrimp, squid, and fish roe
- Shark fin and crab egg omelet stir-fry
- Sea cucumber stir-fry
- Jumbo shrimp shumai
- Vegetable stir-fried with fermented tofu
- Clear soup ramen
- Miso ramen
Drinks we had:
- Daiyame (sweet potato shochu with soda)

- Shaoxing wine (20 years) (paired with beef oyster stir-fry)
The drinks are self-service, and you can choose from a variety of bottles lined up on the counter or in the refrigerator behind the seats. The owner will tally up the total later, depending on the dishes served. As for the taste, the Chinese course started with the soup to open the stomach, followed by a series of small Chinese dishes leading up to the eagerly awaited ramen dishes. The ingredients were luxurious and the dishes were impressive. Before visiting, I couldn't quite imagine what kind of Chinese cuisine a ramen shop owner would serve, but it was the opposite, and it made sense once I learned that a Chinese chef was running a ramen shop. Furthermore, to my surprise, the bill was unbelievably low at 12,000 yen for all the items mentioned above. It was a fun and delicious feast, and I can't believe the value for money. Today, I had the pleasure of attending a private party with customers from Fukuoka, and I'm so happy to be back after a long time. We started with a toast with beer and then enjoyed champagne. All drinks are self-service here. Everyone I met today was new, but they were all food professionals, so we had a great time. The scallops, broccoli, and eringi mushrooms were actually from Sarufutsu, but they looked like matsutake mushrooms from Hokkaido. I'm glad they're still available. This time, we tried three types of ramen: clam ramen from Abashiri, salty ramen with thin noodles, and rich miso ramen with curly noodles. The beef bone soup with flat noodles was also delicious. It was delightful to be able to try various Chinese dishes in small portions – a treat that many women would appreciate. Every dish was delicious, and the finale of ramen was simply divine in both quantity and taste. It was another fantastic dining experience, and I will definitely be returning. Today, I started with golf in the morning and ended up having a drinking session. Kudo-san's world began with a pre-ordered shark fin dish, which was a large portion for a good price. It was cooked in a soy sauce-based broth and was delicious. Even though I didn't eat much, the shark fin dish and dim sum were filling, but I reset my stomach with a bacteria soup. We also had a couple more dishes, but we ended up drinking two bottles of Shaoxing wine, so I forgot to take photos. Finally, we had a half ramen with a shark fin sauce base. Eating and drinking all this made me very satisfied. Looking forward to the next time!

I attended an offline meeting for the first time in 2 and a half years with a friend. Started with a toast of beer, but forgot to take a picture of the firefly squid appetizer and the drool-worthy dish. Changed to sake, my favorite liver and leek dish. Shrimp chili... forgot to take a picture. Fried rice... forgot to take a picture. Cashew nuts and stir-fry... forgot to take a picture. Ate and drank while talking about various things. I visited the restaurant after 5 months since my takeout at the end of the year. It was my first time having the place all to myself. Despite being run by just one person, the hospitality was truly amazing as always. I ate until I was about to burst. I got so caught up in eating that I almost forgot to take photos. I had gyoza, liver and leek shrimp chili (photo is halfway eaten, sorry), sweet and sour pork, a dish with squid, scallops, and asparagus stir-fry, tempura of pickled shallots, and spicy ramen.

Before I knew it, it had been a while since my last visit. It was a long-awaited return. The restaurant only has a counter, and the interior has a charming local Chinese feel. As soon as I sat down, various appetizers were brought out. They were all delicious - scallops, jellyfish, shrimp, followed by a dish similar to Bang Bang Chicken. The spring rolls had oysters in them. The king crab fried rice was amazing. The pork belly and cucumber dish was also incredibly tasty. The dumplings, shrimp chili, scallops with asparagus - each dish that came out was packed with flavor. By this point, I was quite full. Then came the finishing touch - ramen. It was like Sapporo-style soy sauce tantanmen. Every dish was delicious from start to finish.

In Sapporo, I always go to the same restaurants at night, so it was nice to try a different one for a change. I had heard about this place before, but it was quite far away. I also had dumplings, shrimp chili, crab fried rice, eggplant dishes, and liver with garlic chives. The dishes were filling, and we even got some white rice. My friend and I have different appetites, so we ordered different amounts of food. There were many types of ramen to choose from, and I tried the basic ones - salt, soy sauce, and miso. I didn't enjoy the thick and intense miso flavor, but the salt ramen was good. You can help yourself to drinks from the fridge or cooler at the back. I recommend using this place as a second stop for trying a variety of dishes at a reasonable price.

In the midst of the year-end party season. I decided to skip the group activities for the first round and went solo. I entered the restaurant easily, thanks to good timing on the phone. I mentioned that I just wanted to have a light meal and a drink, and ordered beer with mapo tofu and stir-fry. I had a nice chat with the owner and the person at the next table. It was surprisingly fun (laughs). For the finale, I chose a rich miso soup. It's the type of miso soup that makes you thirsty, but I couldn't resist the urge to eat it (laughs).

In early May 2019, it can be a bit daunting to try Chinese cuisine with a small group. When I mentioned this to my senior colleague, they revealed that they also wanted to visit such a restaurant. They recommended a small, counter-only restaurant that offers a Nouvelle Chinoise-style cuisine, introduced by the owner of their favorite sushi restaurant. Despite my low expectations due to the small size and single chef handling everything, the experience turned out to be fantastic. As expected, the quality of the dishes in a restaurant recommended by a top chef in Sapporo exceeded my expectations. The char siu was exquisite, the stir-fried sea cucumber was incredibly delicious, and the Sichuan-style mapo tofu had a strong and satisfying numbing spiciness that I love. I couldn't help but envy Sapporo for having such amazing dining options, and I wish there were similar restaurants in Akita.
