I moved from Asahikawa to Sapporo and as soon as I arrived at Sapporo Station, I made a reservation call. The restaurant I originally wanted to go to was already fully booked, so this place was the next option. Due to the so-called state of emergency in the Kanto region, many shops in Sapporo city are closing early, making it difficult to make reservations at popular restaurants. The restaurant was a 2-3 minute walk from the Tozai line "Toyohira Susukino" station, and although I had visited it about 10 years ago, my memory was vague, giving me the illusion that it was my first time there. I enjoyed the sushi at the counter alone, so I ordered a non-alcoholic beer and the special nigiri set (¥5,500). I didn't understand the meaning of the two soy sauce dishes lined up, but the young chef told me, "The dish on the right side is easier to use." The sushi was served in the order it was made, without any additional garnishes like pickled vegetables or salt. - Sea bream: The type of sea bream was not explained, but it had a good texture and harmony with the sushi rice. - Surf clam: Instantly tasted like the sea, with a crunchy texture. - Botan shrimp: A combination of firmness, sliminess, and the unique appearance of raw shrimp. Delicious. - Bluefin tuna: A personal favorite, but I wished for a bit more tuna aroma. Still, it was tasty. - Snow crab: As expected from Hokkaido. - Yellowtail: Neither good nor bad. - Engawa: The fat content was moderate, allowing the flavor of the engawa to come through. - Conger eel: Not too sweet, well-cooked, and a refreshing conger eel. A personal favorite. - Medium fatty tuna with sear: Some may like this, but personally, I prefer it without the sear. - Sea urchin: Served by hand, a true sign of being in Hokkaido. (Forgot to take a picture) - Salmon roe: Served in a battleship roll with soy sauce. Another sign of being in Hokkaido. The special selection ended here. After this, you can choose as you like. - Kohada: The vinegar flavor was a bit weak for my taste. Didn't quite match. - Swordtip squid: Standard squid. - Mackerel sushi roll: The kelp was too thick, overpowering the mackerel. - Egg: I requested it without being made into sushi. It was made in this restaurant. It lacked a bit of sweetness, but anything made here tastes good. I think this restaurant is excellent in terms of cost performance. I added some more items and ordered 2-3 drinks, and the total came to 10,000 yen with change. Next time, I'll invite someone to come with me.
