We purchase fugu directly from Kyushu according to reservations, so please call us as soon as possible if you need to change the number of people or cancel your reservation. Cancellation without notice on the day of your visit will be charged 100% of the reserved course fee, cancellation on the day of your visit will be charged 80% of the reserved course fee, and cancellation from 5 days prior to your visit to the day prior to your visit will be charged 50% of the reserved course fee.

First visit. In the cold season at the end of the year, it must be "fugu," so I searched the net with the thought of whether I can eat delicious "fugu" in Sapporo. I came across a restaurant called "Fugu Dokoro," raising my hopes of encountering authentic "fugu." On the day of the reservation, fitting for the season to eat "fugu," Sapporo was quite chilly. The restaurant had a small counter and about 8 small raised seating areas, making a reservation seem necessary. This time, I wanted to eat fugu shirako, so I chose the Shinken Jodan course, which was of such quality that fugu lovers might think this course alone is sufficient. The most surprising part was the "tessa." As shown in the attached photo, it was packed on a fairly large plate, and each person had their own plate, which felt like pure bliss! "Fugu" really brings happiness. Tessa, shirako-yaki, fugu kara, tecchiri, and zosui were all satisfying, and with the fugu fin sake overflowing with fugu fin extract, it was a night in December when my body was warmed to the fullest.

We visited Fukusho Shinken for the annual year-end appreciation party. We opted for the special course that included shirako sashimi, in addition to the regular menu. The course consisted of boiled fugu skin, fugu sashimi, shirako sashimi, grilled shirako, fried fugu, fugu chiri (with shirako), fugu porridge (with shirako), and dessert. The price was reasonable for the amount and quality of food we received. The course featuring generous use of shirako was a nice touch. Everything was delicious. Thank you for the meal!

With two people at the counter, we ordered the middle course. We started with the boiled fugu, made only with fugu, which had a refined and rounded sweetness and umami. The following tessa, aged for 8 days according to the head chef, indeed had an enhanced texture and flavor, as described. The tetchiri that followed also surprised with the delicious homemade ponzu sauce! The zosui ➡︎ and the finale of tofu cheese? This was delicious! Even compared to past Chinese, Italian, and French meals, this is top-notch! You can enjoy delicious fugu in Hokkaido! I will definitely come back again.

This evening, I organized a farewell party for one of my few close friends at a dinner with 4 people. The first stop of this important night is "Fukusho Shinken". This fugu restaurant offers a unique "Mencoi Fugu Set" with 3 items for 2000 yen, which is great for those who have never tried fugu before. We made a reservation for a weekday and visited the restaurant. The atmosphere outside the restaurant was very inviting, with a clean yet warm curtain and a welcoming attitude. As we entered the restaurant and gave our reservation name, the master and mistress guided us to our seating area with soft smiles. We started with the following: 1) Fugu fin sake, 2) simmered fugu skin, and 3) fugu sashimi and skin in hot water. The fugu fin sake was prepared by the master in a dimly lit setting, with a generous amount of grilled fin. The simmered fugu skin had a gentle traditional flavor, including both skin and meat. The sashimi and skin in hot water were beautifully arranged and the fugu sashimi had a great texture. The fugu used is imported from Kyushu and aged to enhance flavor and texture. The green onion and other condiments were fresh and added to the overall experience. We finished with sweet potato tea. The restaurant staff explained the ingredients, preparation, and origins of the fugu dishes. The timing of the dishes was perfect, and the husband and wife owners provided exceptional service. Although we were only trying the trial set, we felt like we received top-notch hospitality. I look forward to trying their course menu in the future. The fugu dishes were delicious and the service was outstanding. I can't wait to visit again. Thank you, Fukusho Shinken, for a memorable dining experience!

I made a reservation online and visited the restaurant at the opening time of 5:00 PM. I tried the very reasonable "Menkoifuku Set" available only on Mondays to Wednesdays, which includes fugu sashimi, simmered fugu, and fin sake for 2,160 yen. It seemed like a great deal. The fin sake had the alcohol slightly removed to enjoy the aroma. The lighting was dimmed, and they put on a show with flames. The aroma was strong, with a fragrant and sweet taste, made using Chitose crane. The simmered fugu was made using fugu gelatin only, giving it a sweet and delicious taste after being aged for a few days. It was served with grated radish and green onions, offering various deep flavors. The green onions are sourced from Yamaguchi and cost 800 yen per bunch! Since there were no other customers, I was able to chat with the chef. While he usually runs the place alone, his wife helps out when they have many reservations. He is originally from Tokyo and holds a high rank in kendo. It was a short but enjoyable time spent there. I would like to revisit for a different set next time. Thank you for the meal. Also, the incredibly thin Yanagi-ba knife that has been used for 20 years is a must-see!

It was a wonderfully satisfying restaurant. Today, the pre-drinks were at Fukudokoro Shinken, which I had been curious about and had reserved online. The completely smoke-free space was cozy and calm, making it a highly satisfying choice for a pre-drink, but since there were no reviews for the place, it was risky to invite someone to join for the main event, which is why we ended up choosing a restaurant with a rating of 3.8 or higher for the first round. Even though it was a top 1000 restaurant, it ended up being a bit disappointing. We may have missed the timing, but there were various memorable things about the first round restaurant that made it hard to forget. Leaving aside those anecdotes, here are the details of what we ate and our impressions. We started with Sapporo Classic draft beer. Delicious. It was really delicious. Even the foam was delicious. It was a delicious draft beer served from a well-maintained tap that was impressive. It had a floral aroma and a refreshing taste, with no unpleasant aftertaste, cold and smooth going down the throat, with a clear taste that was both delicious and rich. Next was the Fukudokoro Set, which included Nigiri-style Fugu Sashimi (trial size) and a cup of Fugu fin sake. This was a trial set that could be ordered on the day itself, and it was a very satisfying set despite being a loss leader. For the regular course, a reservation is required at least 4 days in advance, and it was clear that they put effort into providing the customers with the most delicious timing. The Nigiri-style Fugu Sashimi had a satisfying volume and appearance, and it was a delight to look at and savor for a while. One piece tasted great. Two pieces tasted even better! And when you combined three pieces together, it was simply delicious! The flesh was tender and bland, but delicious, and by adding various condiments, the taste could be enjoyed in a myriad of ways. The homemade ponzu sauce at Fukudokoro Shinken is made with carefully selected ingredients such as daidai vinegar from Yamaguchi Prefecture, aged mirin, and soy sauce from Hokkaido. It is finished slightly sweet, creating an elegant and well-balanced rich flavor. The Fugu fin sake, slightly heated, had a good aroma! It was a deeply satisfying Fugu fin sake that penetrated deeply into the stomach. The owner was friendly and easy to talk to, exuding a calm demeanor, and although I'm not sure if they were family, the female staff were also pleasant, and we ended up adding a few more dishes that were available on the day and felt like staying longer. But, we had to hurry to the meeting place.
