It was a wonderfully satisfying restaurant. Today, the pre-drinks were at Fukudokoro Shinken, which I had been curious about and had reserved online. The completely smoke-free space was cozy and calm, making it a highly satisfying choice for a pre-drink, but since there were no reviews for the place, it was risky to invite someone to join for the main event, which is why we ended up choosing a restaurant with a rating of 3.8 or higher for the first round. Even though it was a top 1000 restaurant, it ended up being a bit disappointing. We may have missed the timing, but there were various memorable things about the first round restaurant that made it hard to forget. Leaving aside those anecdotes, here are the details of what we ate and our impressions.
We started with Sapporo Classic draft beer. Delicious. It was really delicious. Even the foam was delicious. It was a delicious draft beer served from a well-maintained tap that was impressive. It had a floral aroma and a refreshing taste, with no unpleasant aftertaste, cold and smooth going down the throat, with a clear taste that was both delicious and rich.
Next was the Fukudokoro Set, which included Nigiri-style Fugu Sashimi (trial size) and a cup of Fugu fin sake. This was a trial set that could be ordered on the day itself, and it was a very satisfying set despite being a loss leader. For the regular course, a reservation is required at least 4 days in advance, and it was clear that they put effort into providing the customers with the most delicious timing. The Nigiri-style Fugu Sashimi had a satisfying volume and appearance, and it was a delight to look at and savor for a while. One piece tasted great. Two pieces tasted even better! And when you combined three pieces together, it was simply delicious! The flesh was tender and bland, but delicious, and by adding various condiments, the taste could be enjoyed in a myriad of ways.
The homemade ponzu sauce at Fukudokoro Shinken is made with carefully selected ingredients such as daidai vinegar from Yamaguchi Prefecture, aged mirin, and soy sauce from Hokkaido. It is finished slightly sweet, creating an elegant and well-balanced rich flavor. The Fugu fin sake, slightly heated, had a good aroma! It was a deeply satisfying Fugu fin sake that penetrated deeply into the stomach.
The owner was friendly and easy to talk to, exuding a calm demeanor, and although I'm not sure if they were family, the female staff were also pleasant, and we ended up adding a few more dishes that were available on the day and felt like staying longer. But, we had to hurry to the meeting place.
