I visited the pre-opening of the building "MOYUK SAPPORO" at the corner of South 2nd Street and West 3rd Street, Tanukikoji, where the promising urban-style aquarium "AOAO SAPPORO" is newly established on the 4th to 6th floors. Unfortunately, I couldn't stop to eat this time. The entrance fee varies depending on the season, but on this day it was 2,200 yen for adults, half price for children. There are about 10 food and beverage outlets on the 1st and basement 2nd floors. The one I visited was "Mamezara Cuisine and Sake Sobamae moyuk Sapporo Store" operated by Sapporo Beer Group's Hokkaido Sapporo Lion. It was introduced as an "out-of-state company" in TV media, but both "Sapporo Beer" and "Lion" have moved their headquarters to Tokyo, so they are now respectable companies from Honshu. Shortly after the start of the evening business at around 4:30 pm, it was a large-scale operation with 86 seats (official site disclosed value) and a large number of staff, with 10 in the kitchen and 6 on the floor. It seemed a bit too enthusiastic for a "Lion" project in Hokkaido after a long time. All menu browsing and ordering are done through tablets. The food menu is extensive, focusing on soba as well as sake appetizers served on mamezara plates and sweets, emphasizing the concept of "sobamae" as the store name suggests. Even the beverages are well stocked with national brands of sake and shochu. I ordered the "Assorted Soba @880" and it was served in about 7 minutes. The tray included two types of soba, wasabi, chopped green onions, mountain wasabi, grater, soy sauce decanter, sake cup, and chopsticks. The mountain wasabi is self-grated, and although grating it yourself is a bit of a hassle, the freshly grated one has a good aroma and a sharp flavor, making it delicious. The two types of soba, "Inaka" and "Sarashina," were chilled and had a firm texture with a strong elasticity, although the fragrance was weak, they were sufficiently tasty. The soy sauce was a flavorful dipping sauce that complemented the soba well, and when poured over the soba, the aroma gently rose, making it twice as delicious. It was a finished product that made you feel the aggressive attitude of a large company. However, I noticed that despite the large number of staff, the floor service was somewhat negligent, and the soba-yu (soba dipping sauce) was not served unless requested, and even when I pressed the "call staff" button on the tablet, I did not receive a smooth response, and the preparation of the soba-yu was done in a rushed manner. However, it may be that the service is not yet established during the pre-opening period. It is a restaurant where you would want to take your time and enjoy the "sobamae," but it is likely to be very crowded for a while after the grand opening. I will visit again when things have settled down. Thank you for the meal.
