After visiting my mother in the hospital, I headed to Susukino and checked into my accommodation at 15:00. I took a refreshing bath and ended up falling asleep until around 17:00. I planned to start my activities around 21:00, so I decided to have a light drink beforehand. I went to Ushisuke for a quick drink. When I arrived at 17:30, the curtain was up but the charcoal grill seemed to be taking a break as the young master was preparing it. I sat at the counter and ordered a Sapporo beer and grilled beef tongue without even looking at the menu. Later, I added tofu salad and bamboo shoots. The tender tongue and refreshing bamboo shoots were as delicious as always, but the tofu salad was a new experience. The tofu was special (silk tofu) and had a rich flavor that didn't lose to the dressing. It was also very good. I had two beers and two highballs, and by 18:30, I was feeling a bit tipsy, so I decided to leave. Thank you for the meal!

After work, I really wanted to eat beef tongue, so I visited for the first time and had the beef tongue set meal for 2,100 yen. The beef tongue is thinner than at a certain chain restaurant, but it is tender. The saltiness is a bit on the mild side. I enjoyed the oxtail soup. I'm curious about the beef tongue ramen, so I'd like to try it next time.

The "challenge" this time ended successfully. The afternoon session was a bit tough, but I managed to get through it. Since I have some errands on Monday, I decided to take a day off and booked a hotel in Susukino Minami. I thought about how to enjoy the evening and ended up heading to the basement of Urban Sapporo Building. I realized that I hadn't been there at all in 2022. When I arrived after 7 pm, there were no other customers, and the owners seemed to be taking a break. I greeted them and took a seat at the counter. I ordered a small bottle of beer and some snacks like bamboo shoot fish cake, beef tongue meatball, and seasoned bamboo shoots. The bamboo shoot fish cake was fluffy, the beef tongue meatball had a nice texture, and the seasoned bamboo shoots were soft and flavorful. The grilled beef tongue, as always, was tender and delicious. I enjoyed it with beer, then switched to highball and finally had a 2-cup cold sake from Ichinokura. I added pickled vegetables along the way, which complemented the alcohol perfectly. It was a pleasant and enjoyable time, with good conversation with the other customers. I thought about getting ramen as a finishing touch, but I had another restaurant to visit, so I decided to hold off. Overall, it was a delightful experience.

The atmosphere of the restaurant is very nice. It has a cozy feel, and the chefs are polite and professional. The Tail Ramen costs 980 yen, which is a bit on the higher side, but the soup is amazing. Today is Friday, but for some reason it's a day off. So, I decided to visit this place that I've been wanting to go to. The shop is closed on Tuesdays, which happens to be my personal day off too. I arrived a little after the opening time of 11 am. There were no other customers. The staff (or rather, the son of the founder) was relaxing until I entered the shop. He suddenly turned on the lights, started the ventilation fan, and brought me water and a handwritten menu. I already knew I wanted the beef tongue set meal, so I ordered it for 2100 yen. The menu had said 1600 yen in a photo from last December, but prices might have gone up for a small business. The beef tongue set meal came with 7 pieces of grilled beef tongue and 3 types of pickles. The barley rice wasn't very barley-like, and the oxtail soup was light and not gamey. The beef tongue was tender and flavorful, not too heavily seasoned. It would have been nice to have some lemon. Overall, it was a satisfying meal. I refrained from ordering beer due to the price. The owner, who must be close to 90 years old, was present when I paid. It's impressive to see him still working actively. I used to visit this place occasionally when it opened 37 years ago. It was a nice visit after a long time.

On this day, I didn't have any particular plans during the day, so I decided to go to J***k Onsen for some relaxation. I spent a good time there reading a book and then headed to Nijo Market again. The restaurant I wanted to go to was full, so I felt a bit disappointed. However, I still wanted to have a drink during the day, so I went to my usual spot, Ushisuke. I arrived before 2 pm and ordered two bottles of beer with grilled beef tongue meatballs and bamboo shoots as appetizers. I also ordered grilled beef tongue when I finished the first beer. Everything was perfect for a daytime drink. The pickles that came with the grilled beef tongue were also delicious. As I finished the beer, I switched to cold sake (Ichinokura, 2 cups) and continued enjoying the grilled meat, pickles, and bamboo shoots. Even after finishing the 2 cups of sake, there was still some time before the horse racing Grand Prix, so I also enjoyed some sweet potato shochu on the rocks (forgot to take a photo). I ended up getting nicely drunk, checked the Grand Prix results, and then paid the bill. I returned to my accommodation, took a bath, and prepared for the evening. By the way, I won on the Grand Prix with a trifecta, and I couldn't help but declare "I did it!" and do a little victory pose at the restaurant.

Susukino Station is a 2-minute walk away. The restaurant is located in a food and drink building on the underground floor. Although it has some years on it, the maintenance is well taken care of. The atmosphere is friendly yet elegant, with a sense of age. The interior of the small restaurant has counter seats and raised seating. I visited for lunch on a Sunday. On this day, I ordered the Gisuke set for 1,650 yen and added grated yam for 380 yen. It was a hot day, so I decided to treat myself. The beef tongue had a nice texture and was full of flavor from the charcoal grilling and skilled knife work. There were two different cuts of tongue that day, which was a nice surprise. The seasoning was also well done. The tail soup ramen was delicious as well. The soup had a gentle flavor typical of a beef tongue restaurant. The simple saltiness of the soup really brought out its goodness. The green onions paired well with it, making it easy to eat.

I had a medical check-up scheduled for when the new variant of the virus in the capital city was expected to hit bottom, and it turned out to be right on time for my human dock appointment. Normally, you can have breakfast at the medical facility, but the appointment ran late and the restaurant was crowded, so I decided to skip the meal and head to Gyuusuke-san. I ordered the Gyuusuke set with charcoal-grilled tongue, barley rice, and oxtail ramen, with extra large barley rice, of course! The atmosphere in the restaurant was welcoming, and the food was served promptly. The tongue was juicy and flavorful, the barley rice was delicious, and the oxtail ramen had a clear soup with tasty noodles and toppings. The combination of tongue, ramen, and barley rice was a perfect collaboration. It had been two and a half years since my last meal at Gyuusuke, and I will definitely be coming back again soon for another satisfying meal.

I first came to this restaurant when I was around 20 years old, accompanied by two older sisters who still treat me kindly to this day. Back then, I could only drink a little beer and mostly sour drinks. I didn't know that there were restaurants specializing in beef tongue, as I had only eaten it during barbecue sessions. Over the past 20 years, I have been coming here a few times a year. The menu has changed gradually, with some items being added and others disappearing. I first tried the beef tongue sashimi here, at a place called "Gyusuke," and it was so delicious that the three of us ended up ordering five servings! We also enjoyed some sake. Although they no longer serve sashimi, I still come here to enjoy good food and get a little tipsy. On my most recent visit, which was the third stop of the night, I only ordered one serving of grilled beef tongue because I was already quite drunk. I didn't take any pictures, but I had a great time chatting with the staff. Strangely, I did take a photo of the bottle of shochu we ordered. Drunk people do strange things, don't they? Next time, I'll make sure to take a picture of the beef tongue and share it!

On a certain holiday, I visited a beef tongue restaurant located in the basement of a building at the corner of Minami 3-jo Nishi 4-chome in Chuo Ward. Despite other tenants in the building being closed for various reasons, this particular restaurant was still open for business. The interior of the restaurant consisted of a counter with low acrylic panels and a raised seating area. The background music playing was a young man's relay race on TV. On this day, I ordered the "Gisuke Set (1650 yen)" which caught my attention from a magazine clipping at the building entrance. The set included tail ramen. The beef tongue on the plate was thick and flavorful, making me quite excited as it had been a while since I last had beef tongue. The set also came with light kimchi, a pickle that was a cross between takuan and tsukemono, and a miso dish with a strong miso flavor. The tail ramen, which arrived a bit later, had thin yellow noodles with a medium curl. The texture of the noodles was excellent, and the soup was a deliciously seasoned salted tail soup with a hint of black pepper. I couldn't help but finish every drop of the soup. The toppings included green onions, menma, and tail meat, all of which were good. The rice served was barley rice, with a slightly barley flavor and a bit more moisture than I expected. Considering the current circumstances, I hope this restaurant can continue to thrive with a little more patience. Thank you for the meal.

Handmade Menma Menma is a favorite of mine. I don't eat it often except with ramen, but I actually like it. After meeting briefly with my mother, I checked into a hotel on the outskirts of Susukino. Mandatory temperature checks were conducted at check-in, and I was relieved to see that my temperature was in the 36°C range. After dozing off for a bit in my room and taking a shower, it was already past 6 PM. Since I had the opportunity to visit Sapporo, I decided to quickly visit some of the restaurants I frequent. First, I headed to Urban Sapporo Building. As I descended into the basement, I saw the familiar signboard that always shines brightly. I walked through the noren curtain of Gyu-suke, a long-established beef tongue specialty store, and was greeted by the energetic owner. It has been over 25 years since my first visit to this restaurant. The counter had fewer seats than usual, and there were acrylic dividers in place. It was clear that they were determined not to let customers leave their area. I sat near the TV in the back and ordered a beer, but due to the current situation, they only served bottled beer. I usually drink Classic beer at home, so it was no problem for me. For food, I ordered beef tongue, sasakama, and menma, which are my usual choices. The beef tongue was tender and well-prepared, the sasakama had a fluffy texture, and the menma had the perfect seasoning – all of which made me feel glad that I had come. I had two beers and two barley highballs. I had a pleasant time chatting with the owner and his family about the self-restraint period and other topics. After leaving the restaurant, I found out that one group came in after me, and there was a phone reservation as I was leaving, so I was recognized as a "man who can bring in customers" today. I don't know how long this recognition will last, but it was a fun experience (laughs).

In June 2020, I revisited a restaurant called "Gisuke" in Sapporo. It had been over 25 years since my last visit, and I noticed that the restaurant had aged along with the owner. Although I didn't have any alcohol this time, the ramen reminded me of the one at Nakamura in Tobetsu-cho, which I consider to be the "queen" of tail ramen. I ordered the "Gisuke set for 1650 yen", which includes "tail ramen" and "grilled beef tongue". My usual companion ordered just the "tail ramen". After waiting for 7 minutes, the "grilled beef tongue" and "barley rice" arrived. We shared the beef tongue and barley rice amicably. When we finished the beef tongue and barley rice, the two "tail ramen" dishes arrived. The "Gisuke set" includes a large serving of grilled beef tongue with four thick slices. It was tender and perfectly cooked. It comes with miso sauce and pickles. The tail ramen has medium-thick curly Sapporo noodles cooked just right. The soup is rich and flavorful with a delicious beef tail soup. It has a savory saltiness and the hot soup doesn't cool down easily. The two slices of beef tongue are incredibly tender and flavorful from being simmered for a long time. The menma and green onions complement the dish well. I apologize to the organizer, but there were almost zero expectations for the meal at the first gathering of the day (although it wasn't as bad as expected). After enjoying tempura at Yagisan and relaxing at the hotel for about two hours, even though we were still drinking, our full stomachs started to feel restless (laughs). So, we decided to visit Ushisuke for a second gathering in drinking mode. Leaving the hotel near Sosui River and entering the noren at Urban Sapporo Building's basement, despite it being past 4:30 PM, there were already two groups of customers, and they were drinking. I greeted the owner and said, "We're here for a second gathering today," and took a seat at the counter, ordering a highball, charcoal-grilled skewers, and bamboo leaf-wrapped rice cakes. The charcoal-grilled skewers were prepared perfectly, with all unnecessary tendons removed, just the way I like it. I slowly enjoyed my highball, switching to barley shochu, knowing that the bamboo leaf-wrapped rice cakes would get cold. After finishing my second barley shochu, it was 15 minutes before the start of the first gathering. The approximately one-hour second gathering ended smoothly, and we headed to another building in Susukino for the first gathering. It was the leisurely enjoyment of barley shochu here that contributed to boosting my condition for the day. Drinking heavily during the day might not be such a good idea (laughs).

So, I ended up in an underground area in urban Sapporo, far from the bustling streets. It was quiet during the day, almost eerie. I couldn't quite put my finger on it, but it had that vibe. I mustered up the courage to enter a restaurant, worried about it being crowded during lunchtime. Surprisingly, there were no other guests. I asked if there were any available seats for two, and they welcomed us to choose any. I arrived around 9 pm and when I entered, I saw someone sleeping in a tatami room. There was one other customer at the counter. I asked if it was okay to sit at the counter and ordered a bottle of beer for 650 yen and a large Gyutan set meal for 1,800 yen, totaling 2,450 yen. The beer was cold and delicious. Soon, the Gyutan arrived and it was so tasty. I also enjoyed the barley rice, tail soup, and pickles. When I was leaving, the owner asked me how everything was, and I replied that I loved Gyutan and the soup was delicious. Thank you for the meal.

After having ramen and fried rice, I finally checked into my accommodation in Susukino around 5 pm. My stomach was quite satisfied, but not uncomfortable. After taking a shower and resting in my room for about 3 hours, I started craving for beer. So I changed and headed to Urban Sapporo Building, to Gyuusuke-san. I arrived around 8 pm. The girls' party in the sunken kotatsu area was lively with wine. I sat at the end of the counter, right next to the TV. Before sitting down, I ordered a draft beer. When it arrived, I also ordered "grilled bamboo fish cake, seasoned bamboo shoots, and grilled beef tongue". The homemade bamboo fish cake was lightly grilled and had a fluffy texture. The seasoned bamboo shoots were delicious, and I saved them for the last sip of sake. The beef tongue was rare and juicy, especially with added spiciness. Since I wasn't very hungry that day, I stuck with this order, having 3 beers, 1 highball, and 2 servings of cold sake. Looking back, I wonder if this was the right amount for the night. Next time, I'd like to post about a meal after a long time.

For me, Urban Sapporo Building means Gyuusuke-san's restaurant. Inside the small restaurant, there was one female customer at the counter near the register. I sat at the counter near the TV and greeted the owner, then ordered bamboo fish cake, seasoned bamboo shoots, and a draft beer. The first beer was excellent! Soon, the grilled bamboo fish cake and homemade bamboo shoots arrived. The bamboo fish cake had a soft texture and a natural sweetness, while the bamboo shoots were not too strong in flavor. Both went perfectly with the beer. During my second beer, I ordered grilled beef tongue and it arrived with a highball. The carefully prepared tongue was tender, and I enjoyed changing the flavor with sansho pepper and shichimi pepper while savoring it with the highball and cold sake.
