Whether this is only for this day or always is unclear. The clear golden soup has a strong umami flavor without any off-flavors. The soup was of high quality. The umami flavor seems to be mainly from seafood. The noodles are thin, providing a chewy texture and a smooth throat sensation. The light soup goes perfectly with it. The toppings such as thick menma and rare chashu were all of high quality. I finished it all in one go. It doesn't have a strong impact, but it was a bowl of ramen that I truly felt was delicious. The balance of quality and price is probably the best in Tokyo. I would be really happy if this shop were nearby... Thank you for the meal.

The noodles were on the firmer side, which isn't my preference, but I thought they paired well with the clear salt broth. The broth had a refreshing saltiness, and I initially thought it was made from fish stock, but later realized it was actually made from dried sardines, giving it a delicious umami flavor without any fishy taste. The chashu had a peppery pastrami-like coating on the surface, which didn't quite suit my taste. The bamboo shoots were thick and had a darker color, but tasted average. Overall, the ramen was decent, with the standout being the flavorful salt broth without any unpleasant aftertaste.

The restaurant only has 6 counter seats, so I ended up waiting for about 30 minutes! As I got closer to my turn, I was instructed to purchase a meal ticket first. For my first visit, I ordered the "Salt Ramen" for 850 yen. The ramen arrived shortly after, with a rich and complex fish-based soup with a strong bonito flavor, paired with perfectly straight noodles. It also came with thick menma, large slices of tender chashu, and finely chopped green onions. The ramen had an elegant appearance and a simple, refined taste. The chashu was soft and fluffy, and even after finishing the soup, I felt light and satisfied. It was a guilt-free ramen experience. According to my ramen enthusiast friend, the beef bowl is also amazing, so I plan to try the soy sauce ramen and beef bowl on my next visit. Despite being run by only the owner and one staff member, the operation was smooth and the service was attentive. It seems like a place where even solo female diners can enjoy a delicious meal.

Ramen Dangan Tokyo #5, a famous restaurant that I had not visited before. The thin, straight noodles were smooth and had a good texture when slurped with the soup. The soup had a nice blend of seafood and dried fish flavors, and the saltiness was just right. The hot soup allowed the umami flavor of the seafood to shine through as it cooled down. I visited this restaurant for the first time on Sunday, September 10, 2023, just before 12:00 pm. There were 7 people waiting outside the store when I arrived, and I joined the queue. A male staff member guided me to the ticket machine inside the store, where I purchased tickets for salt ramen, beef bowl, and seasoned egg in advance. After about 15 minutes, I was seated at the counter and my order arrived in about 10 minutes. The salt ramen had thin straight noodles, tender pork loin chashu, flavorful menma, green onions, and a seasoned egg on top. The soup had a refreshing salty taste and was very delicious, but I felt that the strongly seasoned menma didn't quite match the soup. The rare chashu in the beef bowl was very tasty, complemented well by fried onions and sauce. I thoroughly enjoyed both the salt ramen and beef bowl. The restaurant's name is said to be the same as the name of the grocery store that the owner's family used to run in Seijo. The total cost for the salt ramen, beef bowl, and seasoned egg topping was 1,150 yen. I was a little indecisive, but I also wanted to try the beef bowl so I ordered it as a set. It seemed like the set was a good deal. Lately, many places offer sets with extras for around 1,500 yen, so the cost performance was quite good. My order arrived in about 5 minutes. The bowl arrived in about 3 minutes, featuring a clear soup, beautifully drawn noodles, chashu, and green onions - a simple yet elegant dish. The aromatic oil on the surface adds a glossy finish. However, the real surprise was the rich and sophisticated flavor of the broth. Made from kombu and dried fish, the broth is incredibly fragrant and full of umami. It is clear and delicate yet robust in flavor. The low-hydration, springy thin noodles perfectly complement the soup. The sous-vide chashu was tender and soaked in the essence of the broth, enhancing its flavor. For only ¥800, this bowl of ramen is truly impressive. Michelin recognized the pinnacle of salt ramen. I've always wanted to visit this shop at Ashikaga Park. I arrived around 3 pm on a holiday, and there were about 10 people waiting. But the turnover was surprisingly quick, and I was seated in about 45 minutes. I ordered the salt ramen (regular size) as expected. Shortly after being seated, the ramen was served. Since they took my food ticket while I was waiting in line, it came out quickly. It looks beautiful. First, I took a sip of the soup... Wow, it's delicious. What is this? The umami of seafood is so concentrated, it's my favorite soup! The fact that the soup was coated with aromatic oil meant it stayed piping hot until the very end, which was a nice touch. However, the noodles seemed to stick together quite a bit, maybe because the staff used a unique method of draining them (placing them on a sieve and pushing them with chopsticks to drain the water). If they had been more separated, personally, I would have given it a perfect score. I wonder if it would be different if the owner drained them. Overall, it was a satisfying bowl of ramen. The summer queue at this restaurant was tough. Waiting in an outdoor space where you can feel the harsh air conditioning wind from other nearby stores, I found myself considering leaving. When I finally entered and my ramen was placed in front of me, there was a mosquito inside the restaurant that ended up biting me. Instead of focusing on the taste of the food, my main goal became to finish eating quickly and escape outside. With mosquitoes inside the restaurant, I don't think I will be visiting this place again in the summer.
