The staff are numerous, so the service is excellent and the food and drinks are served quickly. The head chef is friendly and easy to talk to, which is nice for asking questions about the sushi or the meal. The sushi pieces are generally thick and satisfying. The steamed egg with plum and bonito flakes was delicious. The sushi pieces included flounder, young sea bream, marinated tuna, horse mackerel, squid, medium fatty tuna, gizzard shad, salmon roe, and Pacific saury, all of which were delicious. Located behind Kabuki-za, diagonally across from Magazine House, it's easy to find, but the entrance is on the side street so be careful. Access to the underground restaurant is only via stairs. The course consists of 10 pieces of sushi. The daytime course, Tsubaki, costs 7,500 yen. The rice is firm and refreshing. The aftertaste is short, allowing the toppings to shine. The fluffy katsuo and perfectly cooked anago were delicious. The fluffy katsuo and loosened rice, along with the perfectly warm anago, made me happy from lunchtime. I was worried if 10 pieces would be enough, but starting with a gentle chawanmushi and a well-balanced meal, it was just right. The meal included: Chawanmushi with plum, Hirame, Buri, Aoriika, Akami marinated in soy sauce, Katsuo, Chutoro, Kohada, Aji, Maki with new ikura, Anago, Miso soup, Maki with kanpyo, and Soy sauce-marinated tamagobou.

I thought about walking from Shinbashi, but it was too hot so I gave up. I headed to the East Ginza Station on the Hibiya Line, exit number five. I opened a door that looked like a "secret room" and went downstairs, then another door opened to reveal a counter with about eight seats. It had an adult, beautiful and calm atmosphere. Two people served us with smiles, and we had a pleasant conversation in a friendly atmosphere. The mobile phone signal is a bit weak. The first dish that came out was a steamed plum chawanmushi with bonito and plum flavor, which was irresistible to me as a plum lover. It was quite hot! I decided to go down the stairs first, following the principle of ladies first. The interior of the restaurant was cool and modern, with a combination of concrete and white wood that I really liked. As I entered, I greeted the staff and ordered a bottle of Ebisu beer. Unfortunately, the beer was poured poorly into the glass, but I didn't let it bother me. The atmosphere inside the restaurant was harmonious and well-designed, creating a comfortable dining experience. The chef greeted me and I appreciated that he didn't use the term "master" as I find it pretentious in high-end dining establishments.
