With the head chef Sano-san branching out from the main branch at Tsukiji Aozora Sandai Marunouchi, it seems that there has been a refresh in the staff. (Kodama-san, who was well-known at EDOMAE SS, has returned to the original Marunouchi branch.) Despite being located in a food and beverage complex facility, the restaurant takes its Edomae preparation seriously, and it offers a delightful experience that exceeds its price, making it a very accessible and user-friendly establishment.※As a result, it is quite popular and almost always fully booked. It is necessary to make a reservation before visiting. Reservations are time-based, but even with around 10 pieces, the sushi is carefully prepared without shortcuts, so it takes time until the reserved time slot. Please be aware of this before visiting. The vinegared rice is mainly red vinegar with a salty taste typical of Edomae sushi. The rice is cooked firm, the rice balls are large, and the harmony with the toppings is excellent. It is a different experience from the current trend of "sushi for the purpose of serving alcohol." (This time, the rice balls were slightly smaller than last time.) The toppings are directly passed down from Tsukiji Aozora Sandai Marunouchi, and there is a strong emphasis on the tuna in particular. Items like ark shell are lightly blanched on the spot from raw, and the eel is provided grilled, showing no shortcuts. They are served with a topping of nikiri. Drinks include seasonal local sake, beer, various sours, and soft drinks. Unlike Tsukiji Aozora Sandai Marunouchi, which serves one cup of local sake in a small sake cup, here they serve about four small glasses. This time, the business was conducted without masks, which may be a strategy unique to Shinjuku, which attracts many inbound tourists. Considering the current infection situation, I have deducted one star. Despite its appearance, the restaurant seems to offer the same toppings prepared in a central kitchen, but I believe it is a valuable establishment that puts in consistent effort every day. The restaurant is non-smoking. Behind it is a sweets shop, and at times, a sweet smell reminiscent of butter pancakes may waft through. Towards the back of the restaurant is a yakiniku shop, which may get smoky during dinner service, although they do not serve lunch. Given the nature of being located in an open complex facility without partitions, it is inevitable to have some odor issues. The storage space is limited, and if you are pulling a carry-on bag, you may not be able to store it. It is recommended to dress casually as if you were "stopping by a food stall." ===========
