[Date and Availability] I visited the restaurant on Sunday at 10:55 am. I lined up and just made it into the second round starting at 12:30. That day, lunch ended after the second round, so even though there was prior notice, people behind me had to give up after waiting for about an hour. [Food] I had the 4500 yen course, featuring Goto konoshiro, with different ways of placing the toppings on the rice, hotate from Hokkaido, saba from Kyoto with yuzu pepper instead of wasabi, ika with uni, tako from Tottori, iwashi from Hokkaido Hakodate, shiraouo from Miyagi, yuriage toro anago, shiro-yaki, ikura tekka maki, and miso soup. [Impressive Points] The saba was especially delicious. When I put it in my mouth, the scent of yuzu and the fatty texture were delightful. Shiraouo was a first for me, but each one was fresh and had a strong presence. It was pleasing that they explained the origin of each piece clearly and in an easy-to-understand voice. [Final Thoughts] Luckily, the head chef's service spirit allowed for some extra treats little by little, creating several lively moments. For the final ikura tekka maki, when asked whether we wanted ikura or a mix, the majority chose a mix, so we received a generously topped tekka maki. The head chef seemed to intentionally maintain a slow pace, but for the 105 minutes from 12:30 to 14:15, having 10 pieces without alcohol felt a bit slow. Also, for the male companion in his 20s, the quantity was not enough. I felt that it is highly recommended for guiding foreigners around Japan, as it allows for a leisurely pace and conversation with the head chef. ~Star Rating Criteria~ 4.5 Stars: Will make time to visit again. 4 Stars: Would revisit if location and time align. 3.5 Stars: Can have a good time. 3 Stars: Neither good nor bad. 2.5 Stars: Some negatives present.
