Ginza Sushi Hachizaemon is a highly skilled sushi restaurant that previously won a Michelin star. Originally located in Yokohama, they moved to Ginza a few years ago. Moving to Ginza to compete requires a lot of skill. However, the head chef seems to prioritize customers over profit, offering great value for the quality provided. The interior is a bit dark but has a nice atmosphere. I apologize for the poor quality of the sashimi photo. I didn't expect to receive 15 pieces of nigiri. Plus, they also provide appetizers. I am very satisfied. Based on the reviewer's name, it seems like a restaurant with great skills but not very popular. If it becomes more well-known, it will likely become difficult to make reservations. It made me realize that in the restaurant business, popularity matters more than taste. Thank you for the meal. I went to this restaurant for a meal. The interior is calm and made of wood. After two plates of sashimi, I had 13 pieces of sushi. There was a lot of tuna. I prefer smaller shari, but this one was slightly soft and the vinegar wasn't to my liking. Overall, it was delicious, but not quite what I expected. The clam was tasty, but the eel was so-so.

I visited a restaurant that I used to frequent during my time in Yokohama, after a quarter of a century. The interior was calm and lovely, and the chef was as kind as ever. I was very satisfied. The meal started with sashimi, and the flounder was served with its fin attached, fresh and with a nice texture. The highlight of the day was the bonito, which seemed to be from Himi. The fat content was amazing, and it was so delicious that I was almost moved to tears. The sushi was carefully crafted and delightful. The tuna was top-notch, especially the lean cuts. Thank you very much.

Sashimi and nigiri only, with Heartland small bottles and Kyoto's Matsumoto sake available. The restaurant had a very refreshing atmosphere, with only our group due to overlapping cancellations. The menu was the opposite of recent trendy overflowing dishes, which was quite appealing. There seemed to be a limited variety of fish, with some overlap between sashimi and nigiri options. It would be nice to have a greater variety of fish. The head chef was very friendly.

I visited Hachizaemon-san! Enjoyed some fresh sushi~! The ark shell was incredibly beautiful and delicious♡ Everything that came out was delicious♪ The course was more focused on nigiri rather than appetizers! This was my first visit. I had the omakase course for dinner. The atmosphere was very calm and nice. Overall, the dishes were very light. The appetizers were sashimi, including sashimi and oysters only. The sashimi that came out for the appetizer (flounder, fatty tuna) also appeared as nigiri (same taste) in 2 pieces each. It was quite surprising. The interpretation of sushi here seems completely different from other places I've been to, which was refreshing. The portions were on the smaller side, but it felt like I had eaten a lot of fish. If I had a preference, I would like to have both eel sauce and salt. Also, I prefer more variety in the fish selection, but this was a unique experience. Thank you for the meal.

I enjoyed the "omakase" at Sushi Hassaemon in Ginza, Chuo-ku, Tokyo. The nearest station is Ginza Station on the Tokyo Metro Ginza Line, Hibiya Line, and Marunouchi Line, about a 7-minute walk away. I ordered omakase and started with a Heartland beer. The first dish was sashimi, served on a large plate with maguro (from Iwate), hirame (from Chiba), ika (from Aomori), hirame engawa, awabi (from Iwate), and kohada. The flavors were rich and delicious! Next, I had nigiri sushi, including ika, hirame konbu-jime, Edomae kuruma ebi, mirugai, Awaji Island aji, Hokkaido ezobafun uni, Edomae kohada, chutoro, otoro, saba, anago, tamagoyaki, and anago. The sushi was relatively light and delicious overall. Lastly, I enjoyed kanpyo and tekka maki rolls. The price was quite high, but the food was definitely delicious!

This is Sushi Hachizaemon, located right between Ginza and Shinbashi. I had been curious about this place as it was recommended by a fellow reviewer. I was able to easily make a reservation for a business dinner on a weekday at 7 pm. The chef here is quiet and doesn't engage in much conversation, so it may not be suitable for those who like to chat with the chef while eating. Personally, I enjoyed the serene atmosphere and appreciated that the chef responded when spoken to. The sashimi of flounder, abalone, bonito, and shrimp were all made with high-quality ingredients. The bonito, in particular, was exceptional. The sushi, including conger eel, salmon roe, and fatty tuna, was also very good. Overall, I was satisfied with the taste of everything. The drink selection is a bit limited, with options like beer, shochu, and sake. I had 3-4 drinks per person and didn't order any additional sushi, and the bill came out to around 30,000 yen per person. The price is definitely on the higher side, typical of Ginza, but I was happy with the quality of the ingredients.

Actually, while I have a familiar sushi restaurant that I frequent, I tend to be a bit fickle and explore various places in Ginza through Tabelog. I tried about 3 places that didn't quite suit my taste. Thinking that Michelin-starred restaurants might be a better option, I ended up here. I have a policy of not writing negative reviews about places that don't suit my taste. Sometimes, one visit is not enough to make a decision. As for this place, it is located in an area with many hostesses, so I thought there would be a lot of accompanying customers, but on the day I visited, there were only two women and a businessman-like customer. My husband and I were the only elderly couple. The restaurant is very, very clean. The cutting board is also very clean. Of course, there is a pure hinoki wood counter. We enjoyed the sushi slowly over about 2 and a half hours. The quiet atmosphere made my husband drunk. I found the taste of the rice a bit light and the firmness of the last piece of sushi a bit bothersome, but overall, it was delicious. And it was very affordable.

It is conveniently located near Ginza Station (Hibiya Line C2 exit) and Shimbashi Station (exit 5), both about a 4-minute walk away, as well as Yurakucho Station, which is about a 5-minute walk away. The interior of the restaurant features a high-class atmosphere with a white wooden L-shaped counter that exudes a refined air. Starting with the appetizers, the squid is finely sliced with a delicate touch of the knife, making it easy to eat and showcasing the chef's attention to detail. The ark shell is impressive, with a sweet taste and a pleasant texture. The horse mackerel is lightly pressed, offering a refreshing finish with a clear umami taste. The fatty tuna has a clean, refreshing taste with a lingering aftertaste. Lastly, I enjoyed the red miso soup and tamago (egg), made with naturally grown rice that is free from chemical fertilizers and pesticides. The chef has been a sushi artisan for 40 years and creates a warm and welcoming atmosphere. I had a wonderful experience savoring traditional Edo-style sushi and look forward to visiting again. The restaurant serves Edo-style sushi made with natural ingredients, offering a light and elegant taste. The head chef, a veteran sushi chef with 40 years of experience, ensures a quality dining experience that even earned a spot in the Michelin Guide. We started with a selection of sashimi and some Heartland beer. The freshness of the fish was evident, and the presentation was beautiful. The squid sushi was a highlight, with a clean and sweet taste. The shrimp sushi was large and had a firm texture with a sweet flavor. The ark shell sushi had an amazing crunch and a perfect balance of flavors. The fatty tuna sushi was cut perfectly and had a rich flavor without being overwhelming. The mackerel sushi was also excellent. We finished with rolls, including a delicious sweet gourd roll and a spicy tuna roll. The quality of the food was exceptional, and the omakase menu, priced at 18,000 yen, was well worth it. It has been about 7 years since their ambitions were realized... They had been operating in Shin-Koyasu for a long time, but had to move to Ginza due to the demolition of their outlet. At the age of 60, it was a decision made after hearing their voice, so rather than admiration, it is more of a prayer for their success. Their commitment to traditional Edo-style sushi is almost non-existent now, as they have taken a completely different direction from the current sushi chefs. Sushi is defined by the vinegared rice. Sushi Sho in Ebisu stood out for their vinegared rice.
