I had red miso ramen. It had been a while since I last visited. The bowl included chashu, menma, green onions, bean sprouts, mizuna, and wood ear mushrooms. They used to be open until morning, but now they close around 5-6 pm. I wanted to try the fried rice too, but I was worried I wouldn't be able to finish it, so I gave up.

I chose the mixed miso ramen, while the person I went with chose soy sauce ramen. Since there were two of us, we also ordered fried rice. The flavors were nostalgic and delicious. The ramen had ingredients like mizuna and wood ear mushrooms, so we didn't get tired of eating it. The fried rice was simple but tasty as always. Thank you for the meal.

Sapporo Snow Festival is until Saturday. When I gave up on going to the restaurant I wanted to visit in Susukino area on the following Sunday night, I found this restaurant. The ramen here is priced at 1000 yen each, which is quite expensive. There were various types of miso ramen, but I ordered the one recommended. The red miso flavor was strong and the taste was rich. It stayed hot until the end without getting cold. Thank you for the meal!

It was around 8 am or 9 am when I visited. There aren't many options for ramen around that time, maybe just Hokuyu or Yamaokaya. The building has changed its appearance now, but it used to have a rainbow-colored entrance and was known for attracting men who had a feminine side. As for the ramen itself... well, it's not my favorite. Hokuyu is the only place open until morning, but their hot ramen always burns the roof of my mouth.

It was around 8 o'clock in the morning, I think? Maybe 9 o'clock? They are open until that time, so if you want ramen around 6 o'clock in the morning, your only options are Hokuyu-san or Yamaokaya. The building's appearance has changed now, but it used to have a rainbow-colored entrance and was part of a certain association. There were often men who looked like women inside. As for the ramen itself... well, it can't be helped. Hokuyu-san is the only place open until morning. I'm not a fan of hot ramen, so I always end up burning the roof of my mouth.

I had been keeping an eye on it, and recently, I noticed that the curtain was up, and I was drawn in. The tsukemen here is a light style perfect for the morning, so I decided to go all out and order the large portion! When you order the "tsukemen large portion," you can choose between shoyu and salt, but if you don't specify, it automatically comes with shoyu, so be careful. It's a bit more expensive, but this was actually my first time ordering the large portion. The thin straight noodles were chewy and slightly soft. When you dip them in the shoyu-based dipping sauce, the soft salty broth clings to the thin noodles, and before you know it, the large portion of noodles is gone because it's so delicious. The toppings are all well-seasoned and gentle in flavor. I also like to sprinkle table chili oil on the noodles towards the end. The saltiness is moderate, so even if you drink the dipping sauce directly, it's not overly salty, which is great. To avoid consuming too much salt, I intentionally didn't ask for extra soup and finished my meal. This light tsukemen in the city stands alongside classics like Hosogawa, Donsan Funmen, Bon, and Akariya. I just love it. Thank you for the meal.

So, I walked from home to visit. I was aiming for the Tsukemen Shoyu (^-^)v There were no other customers when I arrived, just 2 customers after me, showing that there is still demand even in the morning. Bam! Here it is♪♩♬ It's a rare shop that shows there is demand even in the morning. Let's dig in. The noodles are reminiscent of Hiyamugi, thin and smooth. Dip them in the soy sauce-based soup and slurp them up quickly. The toppings on the noodles are warmed in the soup before eating. Finally, take a bite of the noodles with some soup and adjust the flavor with the chili oil on the table. I also got a soup refill, but since the dipping sauce is not too salty, I only had about 80% of it. I need to watch my salt intake lately. Thank you for the meal! (*˘╰╯˘)ゞ

- Date: 2021/01/10/SUN - Restaurant: Ramen Kitakuma - Dish: Tsukemen with Shoyu (soy sauce) dipping sauce for 950 yen I feel like having some light and refreshing tsukemen. So, I decided to go here for lunch. But wait, they removed the Cantonese noodles from the menu! It was the best in town... What a bummer! But oh well, let's focus on what we have now. Let's dig in! The slightly soft boiled thin noodles have a delicate white color. Dipping them into the Chinese-style soup base and slurping up the long strands of noodles in one go is pure happiness. I warm up the chashu and menma by dipping them into the soup before enjoying them. As I reach the second half of the meal, I add a bit of garlic to the dipping sauce and sprinkle some chili oil on the noodles for some self-adjustment. The light and refreshing dipping sauce allows me to finish every last bit without needing to dilute it with extra soup. It was a satisfying meal. Thank you and bon appétit!

I came to this popular ramen shop along Route 36 in October 2020 because I heard their morning ramen is delicious, but I have to wait 20 minutes until they open. Impatient, I decided to come to this shop where I can be served right away. The shop only has counter seats. I ordered the soy sauce ramen. It was served in about 5 minutes. The soup was piping hot. It lacked the umami flavor and instead had a strong artificial seasoning taste. The aftertaste had a lingering animal-like taste. The noodles were soft, making it feel like a ramen you would have as a nightcap. It was a ramen that I haven't had in a long time.

After finishing work, I was feeling hungry! I know, I'll go to Kitakuma-san's place. I really like the simple and well-cooked fried rice here, so I often come here. The char siu and the marbled eggs with a strong sear are my favorite. It has that old-fashioned ramen shop fried rice feel to it. I sprinkle plenty of pickled ginger on top and dig in. And then I drink the soup. I can get lost in this cycle of eating. Writing about it is making me crave it again.

On June 21, 2020, I visited Ramen Kitakuma for their light soy sauce tsukemen, which I had been craving for a while. I thought they were closed, but they were actually open. I ordered the light soy sauce tsukemen and it was delicious. The noodles were thin and white with a chewy texture, and when dipped in the broth, they had a hint of acidity along with the sweetness of the sauce. The saltiness was not overpowering, allowing the noodles to shine. The toppings were also flavorful, showing the care put into each ingredient. Occasionally, noodles other than tsukemen noodles would sneak in, which I found a bit disappointing. Adding some chili oil from the table for extra flavor was a nice touch. As the meal went on, the broth slightly diluted, but it was still enjoyable without adding extra soup. On 2020/04/05, I went to Ramen Kitakuma and had their Chinese noodles for 900 yen. I felt like I've been going to Yamakaya too much lately and needed a change, so I decided to visit this place after a long time. It's a rare shop where people from the nightlife industry come in the morning. I usually go for tsukemen in the morning, but I wanted to try something different this time, so I chose the Chinese noodles. The soup was light and hot, perfect for the morning. The noodles were thin and chewy, which I really liked. The vegetables had a buttery flavor and the chashu was delicious. The topping menu had an option for "sea" for an extra 100 yen, and I wonder what that is. Overall, it was a bit pricey for a morning meal, but I was very satisfied.

On the morning of February 9th, I couldn't resist trying out the Tsukemen Shoyu at Ramen Kitakuma for breakfast. The noodles were thin and long, with a smooth texture, perfect for dipping into the savory soy sauce-based broth. The variety of toppings added a nice touch, but my favorite was the crunchy and fragrant greens that reminded me of butter. I added a spoonful of garlic halfway through to enhance the flavor. I have only eaten Chuka Soba here, and it is so delicious that I am truly grateful. It is a traditional and delicious Chuka Soba. Unlike Sapporo Ramen, there is no finishing with aromatic oil, just a pure desire for Chuka Soba leads you here. I once got so addicted that I went three days in a row, haha. Furthermore, this shop is a long-established place that is open until morning, which is really convenient. I always think about trying other menu items, but I end up ordering Chuka Soba every time. I wish there was a name for this phenomenon. Although my acquaintances and friends do not rate it highly, they all say they have never tried Chuka Soba. I just love Chuka Soba, but I really want you to try it once. And please tell me about other items on the menu, haha.

After finishing a meal and drinks with colleagues in Sapporo for work, the fun night in Susukino comes to an end. Reluctantly, we head back to the hotel and notice a ramen shop right next to it. Despite already eating and drinking quite a bit, we couldn't resist the temptation and decided to have some ramen as a final meal. The shop had only counter seating and there were two other customers, also enjoying ramen after drinking. The menu recommended their miso ramen, but I decided to go for the salt ramen this time. Although it wasn't listed on the menu, there was a sign on the wall mentioning "Mongolian sun-dried salt". The ramen arrived quickly, and at first glance, it seemed a bit oily for a salt ramen. It had a simple topping of chashu, menma, negi, and large pieces of wood ear mushrooms. I love menma and wood ear mushrooms, so I was happy to see them in abundance. The soup seemed light at first, but then the umami from the salt and the oiliness kicked in. The noodles were typical Sapporo-style egg noodles. The chashu had a nice chew to it, and the menma was slightly soft. The crunchy wood ear mushrooms added a nice touch. I later found out that the shop is open from 9 pm to 9 am, making it the perfect spot for late-night ramen in Susukino. I might have to try their morning ramen next time!

Woke up early for no reason this morning. Found myself with extra time after cleaning and doing laundry, so I decided to come here before 9:00 am♪♩♬ Realized I've never had the salt ramen here before, so I ordered it this time. Surprisingly, there were customers here even at this early hour! Exciting! Let's dig in. The light yet flavorful soup paired with the thick curly noodles is a great combination. The crunchy, uncut wood ear mushrooms and hearty chashu pork are delicious. Towards the end, I added a bit of grated garlic, which only enhanced the flavor. After a drinking party, I stopped by on my way home. I ordered the mixed miso ramen and poured water into a glass while looking around the restaurant. Before I knew it, the ramen was served! It was quick! Maybe because I had been drinking, I found the taste a bit lacking in richness. I liked the char siu though. They're open until 9 in the morning! Amazing. Thank you for the meal.

Welcome. ---------- March 2019 ---------- I usually go for the combination of miso, spicy miso, and soy sauce, but today I tried the Cantonese noodles with steam rising up, and it was amazing! The thick, dripping consistency of the sauce coated the noodles and vegetables perfectly. The soy sauce base provided a great umami flavor and aroma, and the crunchy vegetables like cabbage, komatsuna, bean sprouts, carrots, and wood ear mushrooms were stir-fried just right. Even though bamboo shoots are not typically included, they were a great addition. And just when I thought it couldn't get any better, I found some squid in there too. The chashu pork was tender and just the right amount. The straight noodles from Sagamiya were chewy and gradually melted into the soup, making it a satisfying meal. The portion was generous, so it definitely filled me up. At 950 yen, it's a bit on the expensive side, but I think it's reasonable for this area considering the amount you get. It's definitely not a light meal, but it's worth it. Maybe next time I'll try the Mongolian sun-dried salt "shio" flavor? And I'm starting to crave some dumplings and shumai as well.

A few times a year, I suddenly crave the tsukemen here for some reason. I can't really pinpoint what's so special about it, but in a way, that uniqueness is what makes it stand out. I ordered the tsukemen with shoyu. Bam! Yes, that's it! This type of tsukemen is hard to find elsewhere now. The noodles are thin and white, looking delicate at first glance, but they are cooked just right, giving a nice chewy texture. The dipping sauce is like a slightly stronger version of the soup from their "shina soba" menu, and it's the kind of dipping sauce that you don't see much of these days. It's so easy to slurp up like somen noodles. The only downside is that the toppings on the noodles are cold, so the soup cools down quickly as you eat. But that's just how tsukemen is supposed to be. Overall, my craving has been satisfied! Thank you for the meal!
