The sushi rice, made with Niigata Koshihikari rice, complements the ingredients perfectly, creating a harmonious balance. The seared Sakura Buri and tenderly melting thick slices leave a lasting impression. The friendly chef and the experienced gourmet @erika0825erika made the dining experience delightful. The menu consists of an omakase course carefully crafted to showcase the unique world of Sushi Matsumoto. The course includes clam dashi, medium fatty tuna, assorted appetizers, snapper, seared Sakura Buri, charcoal-grilled squid, hairy crab sashimi, Uni and Kinmedai Small Bowl, marinated tuna, ikura battleship sushi, crab and shark fin steamed dish, seared mackerel, seared fatty tuna, conger eel, rolled omelette, and seaweed miso soup. The paired drinks, Burgundy sparkling wine "Simone Feuillatte Cremant de Bourgogne" and Bordeaux white and red wine "Michel Lynch Blanc," along with a variety of fruit wines, were of high quality.
