Soul food in Hokkaido! The first thing I did when I returned to Sapporo was to visit this Hokkaido soul food spot, which originated in Hokkaido, but now has branches all over Japan.----------------------------------Name: Ramen Yamaokaya New Susukino StoreAddress: G4 Building 1F, 4-5 Minami 6-jo Nishi 4-chome, Chuo-ku, Sapporo, HokkaidoBusiness Hours: Open 24 hours, Closed: None----------------------------------Drawn in by the aroma of tonkotsu (pork bone) that extends outside the shop, I visited after a long time. Similar to Yokohama-style ramen, but Yamaokaya has its own unique style. The soup is not made in a factory, but each store simmers the tonkotsu on-site, so the smell of tonkotsu fills the area outside the shop, and I feel like the taste may vary depending on the store. The difference from Yokohama-style ramen is that it uses pure tonkotsu broth with pork fat. The original sauce is also addictive. This New Susukino store is located in the heart of Susukino entertainment district, on the main street near the station, and it always seems crowded especially late at night and early in the morning. I was able to enter smoothly around 9 pm today. Compared to other stores, this store seems to have less smell both outside and inside. I ordered: - Shoyu Negi Ramen 820 yen - Rice 180 yen I also added spinach (140 yen) as a topping. The taste can be adjusted, and I usually go for "regular, rich, extra" (normal noodles, rich flavor, extra fat). With extra fat, there is a visible thick layer of fat on top of the clear broth mixed with tonkotsu and soy sauce. The soup has a strong flavor with the umami of tonkotsu hitting you hard. There is little unpleasant odor, and the aroma of tonkotsu spreads throughout the mouth, which is good. It has a strong umami taste, salty and flavorful, with a lingering tonkotsu sensation. The noodles are medium-thick straight noodles. The surface is soft but the core is firm, providing a chewy texture. The toppings of spinach, white leeks, chashu, and seaweed soaked up the soup well, making it hard to stop eating the rice. The garlic on the table can be added generously for flavor variation, which is great. It's been a while since I've had it, but Yamaokaya was as reliable as ever.
