White illumination was sparkling and shining beautifully just a little while ago, so I decided to stop by Sushi Kozuka, which I had noticed by chance on its opening day. When I searched for Sushi Kozuka online, I couldn't find any information, but when I searched by the name of the restaurant, I found Sushi Keiji, and the image of a man named Kozuka appeared in the staff introduction. However, when I entered the restaurant, the current head chef was Mr. Nagai, not Mr. Kozuka from Sushi Keiji. I'm not sure how long Mr. Kozuka was at Sushi Keiji. He had a long career at places like Kousushi and Sushi Keimei, and his skill as a sushi chef is evident. This time, I didn't have any alcohol, but I asked for the chef's choice. Originally, this place was a sushi restaurant called Sushi Ootomo. The location is 1F, Susukino 5-5 Building, Minami 5-jo Nishi 5-chome, Chuo-ku, Sapporo, Hokkaido. The nigiri was chef's choice, starting with about 6 pieces and then adding a few more, ending up with 8 pieces, tamago, and miso soup. The rice was well balanced with the toppings, creating a harmonious finish. Here is a list of what I ate: Hirame (flounder), Hotate (scallop), Akami (lean tuna), pickled ikura (salmon roe), Shime saba (marinated mackerel), Anago (sea eel), Temaki (hand roll) with Aji (horse mackerel), and Tamago (egg) with Maitake mushroom miso soup. The Shime saba had a gentle firmness and rich umami flavor, the Anago hand roll had a crispy and fragrant finish, and the nori was crispy with a good texture. Overall, the sushi was delicious. The restaurant played light jazz music, and the interior had a counter with 7 seats and two 4-seater table seats. The friendly head chef, possibly working alongside his wife, created a comfortable atmosphere, allowing me to enjoy the sushi. I look forward to trying the chef's choice with some drinks next time.
