A sushi restaurant operated by a completely membership-based Pro Lab Holdings, with a concept of inner beauty that sets it apart from regular sushi restaurants. I was invited by a friend and visited. Since I could only vaguely hear the menu, here is a reference menu. Charcoal-infused water, tuna tartare, avocado, mullet roe, caviar, tofu and miso mayonnaise dip, bonito tataki, additive-free turnip cold soup, red-fleshed bream, firefly squid, firefly squid skewers, conger eel, steamed nodoguro with sake, clams, grilled anago, seared otoro, four sho of dashi and one sho of Japanese sake (Tanshu), aged for 3 years, Rishiri kombu, crab kanpyo, scallop and nagaimo, charcoal-infused sweet sake made without adding tamari, fruits (apple, gold kiwi). There were also several additional menu items, but this time we had the standard ones. The unique black "shari" contains no white sugar or chemical seasonings. It is made with low-GI natural agave syrup, ultrafine silicon, 113 types of plant fermentation liquid, and edible coconut shell (palm shell) activated charcoal. The sushi was delicious and satisfying. There are also several drink options. Overall, it was a very interesting experience. I would like to revisit if given the chance.
