I send Toyouke tofu to a friend in Kyoto every year before Bon. In the past, I used to warn them not to travel with tofu because the taste would deteriorate, but that's a thing of the past now. Thanks to advancements in vacuum sealing and refrigeration technology, the taste doesn't deteriorate, and the distribution has also improved, allowing me to send the fresh taste of Nishijin. I usually select and pack the items at the store and send them, which cost me around 6000 yen. But this year, when I started selecting items myself, the staff recommended a set for 4000 yen. It's the Toyouke Service Set (12 items) for 4000 yen, including shipping! It includes soft tofu, fresh yuba, fried tofu, tofu milk pudding, and more. It's quite a diverse set. My friend who received it said, "Thank you every year! This year's set is luxurious!" in an email. I thought I was being extravagant every year by spending a lot of money on a set, but maybe my selection was nonsensical and didn't look luxurious. Well, they were happy, and I saved money, so it's a win-win situation! I'll stick to this from next year. I also bought some tofu for myself. I had handmade silk tofu with nigari as hiyayakko. It has a sweet soybean flavor, smooth texture, and firmness. Even though it's silk tofu, it feels packed. The garnishes like green onions, ginger, and myoga are classic. It's sweet enough to eat as is. The tofu sauce from Toyouke is good, but I prefer it with Shichimi Togarashi from Chobun-ya (Kitano) or with Matsuno soy sauce (Takamine). I enjoy the taste of Nishijin, Kitano, and Takamine with just one tofu. I think the hot summer will continue for a while, so I'll endure it with the cold tofu from here.
