Kyoto Obuya, a specialty shop for dashi chazuke, reopened as Kyoto Obuya Kyoto Station Front on August 31, 2022, with more convenient access. The popular shop with long queues near Nishiki Market, Nishiki Obuya, has been visited before and was impressed by its deliciousness.
At Kyoto Obuya, they use a special "obu-tsukemi" rice from a long-established rice wholesaler with nearly 100 years of history in Kyoto. The basic way to eat is to first pour homemade dashi over the "obu-tsukemi" rice, then add toppings such as ingredients, homemade dashi, and "Obuya special grated bonito flakes" to enjoy rich umami, aroma, and depth of flavor.
You can enjoy three different tastes from the menu, which includes various seafood such as sea bream, kettle-boiled whitebait, and salmon. This time, we tried the luxurious chazuke at Obuya for 1,800 yen (tax included), which comes with 7 kinds of seafood and pickled eggs, the signature product of Kyoto Obuya.
The fish ingredients are carefully selected by a fishmonger with over 90 years of experience in handling fish at Kyoto Central Market, and they are glossy and tender. The grated bonito flakes are a blend of bonito, tuna, and mackerel flakes, creating a delightful aroma from the moment the meal is served.
The soy sauce-pickled egg is also delicious when mixed with the fish. It's also a nice change to pour it over the chazuke rice. The dashi made from bonito and kelp is truly professional, with a mellow and deeply satisfying taste.
They also have an opening commemorative menu, "Obuya's Hitsumabushi" for 2,900 yen (tax included). You can enjoy Kyoto's carefully selected ingredients in a light and refreshing dashi chazuke.
