On this day, there was a party in Kyoto, and I was strolling through the city in a slightly tipsy mood. When it comes to ending a drinking party, ramen is a must. There are ramen shops all over Kyoto, and I soon spotted some signs that looked promising. But I thought maybe tonkotsu ramen would be too heavy? Oh, it's a tonkotsu shop, and the name is "Hachinoya." The sign even has a fancy family crest, typical of Kyoto. I was hesitant about tonkotsu ramen as the last meal, but just to be sure, I checked the menu, and there were various options available! So I decided to go in. I ordered the light and refreshing "Kashiwa Chuka Nikumori" at the ticket machine. Nikumori means extra meat, which is every man's desire (laughs). Surprisingly, the interior of the shop had a white-themed and colorful tile decoration on the wall behind the high counter. While I was admiring the decor, the visual of a bowl of ramen that I was looking for as the last meal, "The Chuka Soba," appeared in front of me. With double the amount of chicken, the chicken oil seeped out nicely, making the surface of the soup glisten. First, I took a sip of the soup... "Oh!" The concentrated flavor of the chicken was excellent, with just the right amount of saltiness. The noodles were straight and thin, similar to Hakata tonkotsu ramen, with a firm texture. The broth was also smooth and excellent. The green onions were cut thinly, enhancing the original flavor of the onions. The bamboo shoots had a crunchy texture and a mild taste, suitable for the classic style. The highlight of this bowl was undoubtedly the chicken! Along with the unique crunchy texture of the parent chicken, there was a rich and mature umami that kept overflowing. The combination with the soup was perfect, and I kept slurping the soup while chewing the chicken. As I reached the middle of the bowl, I sprinkled some coarsely ground pepper, and the flavor instantly became sharper. With the chicken carrying the green onions and dragging the noodles, I took a bite! It's absolutely delicious. This is the best way to end a meal. I'm grateful for this chance encounter! Despite being a tonkotsu ramen shop, I had a perfect Chinese soba that reminded me of Kasokay Ramen, which is hard to find in Kansai. I'll make sure to remember this before the alcohol wears off.
