Located in Gion, Kyoto, "Ramen Nishiki" is a shop known for its ramen made with whole fish from Uwajima, Ehime Prefecture, from the soup to the assorted toppings. The owner started with "ZUND-BAR" in 2001, opened the first store in Ebisu in 2003, and later worked as the head chef at "AFURI," which has expanded with many stores mainly in the Kanto region. After becoming independent, this shop opened in August 2018. I was very intrigued by the elegant Kyoto-style townhouse, the stylish ramen, and the reviews with photos, so I visited for the first time. It's about an 8-minute walk from Gion-Shijo Station, and parking is available at a nearby coin parking lot. I visited on a weekday Friday before 8 pm. The shop has 6 counter seats, and at that time, it was full with one person waiting outside, with a wait time of about 15 minutes. In addition to the signature "Salt Ramen," there are also "Soy Sauce Ramen," "Yuzu Ramen," "Tai Shio Ramen," and the unique "Yuzu Matcha Ramen" on the menu. There are also various limited-time seasonal menus, and on this occasion, the "Apple Ramen" caught my attention. There are also various rice bowl dishes, such as the "Nishiki Bowl" with meat, fish, and salmon roe, which looked very delicious. As it was my first visit, I ordered the most wanted "Salt Ramen." This time, I ordered the signature dish of Ramen Nishiki, the "Nishiki Gozen," which includes salt ramen with toppings, tai-meshi, and a dessert. The soup is carefully made with a base of tai fish broth and over 10 kinds of seafood and mountain delicacies, without using any chemical seasonings. The seasoning is slightly strong, with a refined umami taste of the broth. The homemade noodles, made with Hokkaido oats and whole wheat flour, are fragrant and initially slightly firm with a good crunch, but even after some time, they maintain a supple texture with a good chewiness. The tai fish on top and in the tai-meshi is crispy and fragrant on the outside, tender and juicy on the inside, bursting with delicious flavor. The toppings also included tender chicken breast and a richly flavored boiled egg with a thick yolk. The tai-meshi had a mild, creamy, and flavorful taste. Just before finishing the noodles and rice, they served a rice cake made from barley used in the homemade noodles, topped with a rich black syrup, which was a perfect dessert. I would like to try the "Yuzu Matcha Ramen" next time, and looking at the shop's Instagram, there are many past limited-time ramen menus that I would like to try, so I would like to check them out again.
