TERMITE
In my 30 years of memories, when I hear about "Ichijo-ji Temple's sacred place with Nagahama ramen shops," I can recall the opening of "Nagahama Ramen Sin" on October 20, 2011, and the subsequent shop "Tonkotsu Ramen Harada" that opened there. The turnover of shops in the sacred place of "Ichijo-ji" has been quite intense, almost like a 'cursed land' for a brief moment. So today for lunch, I visited "Hakata Yatai Nagahama Ramen Nishiki," a new shop that opened on September 16 in the Kyoto ramen sacred place of "Ichijo-ji" for the first time. Upon arrival, I first washed my hands with the alcohol disinfectant next to the congratulatory flowers in front of the shop before entering. Inside the shop, there were counter seats and table seats, and I sat at the counter seats with partition boards. I checked the menu, and there was only one type of "Yatai Ramen." Since it is operated directly by "Banya Nishiki," an izakaya in Gosho-minami, it seemed to be promoting the "Karaage set meal (900 yen)" which is very popular and sells over 150 kilograms a month. So, I ordered the "Yatai Ramen Karaage set meal" with the option of choosing between "Main House Thin Noodles (Nagahama Yatai Ramen)" or "Branch House Normal Noodles (Hakata-style Chuka Soba)." I chose the "Main House Thin Noodles" with firm noodles and requested a large serving of rice. While waiting, I checked the flavoring items on the table. After a while, the "Yatai Ramen" arrived, with pork loin chashu, wide-cut wood ear mushrooms, and chopped green onions topping the well-emulsified tonkotsu soup, sprinkled with white sesame seeds. The ramen had a delicious aroma of pork bones without any gamey smell, and the pork bone soup was very appetizing. I took a sip and found it to be smooth with a light feel, but with a solid pork bone broth flavor and umami spreading throughout my mouth, complemented by the rich soy sauce base. It was quite delicious! The extremely thin straight noodles I ordered had a supple firmness, a crunchy texture when bitten, and a smooth noodle surface that was comfortable to swallow, blending well with the light tonkotsu soup due to its low water content. The pork loin chashu, well-seasoned and moist, released a burst of meaty flavor with each chew, and when combined with the light tonkotsu soup, it was extremely delicious! Furthermore, the wide-cut wood ear mushrooms and chopped green onions added a pleasant crunch, enhancing the overall flavor. Adding the red pickled ginger and pickled mustard greens on the table halfway through, the flavors and acidity complemented each other, resulting in a successful flavor change! After finishing the noodles, I first tried the recommended karaage as is, then dipped it in ponzu sauce. The karaage had a crispy exterior, and the juicy chicken meat flavor spread directly in my mouth with each bite, well-seasoned and paired perfectly with the ponzu sauce, making it very satisfying! Moreover, with three pieces, I was completely satisfied! I quickly finished the delicious tonkotsu soup and the three pieces of karaage. It is quite rare to find a "Nagahama ramen shop" in the sacred place of "Ichijo-ji" in Kyoto, but personally, I found both the tonkotsu soup and karaage to be extremely delicious, with generous portions and a very high cost-performance ratio, leaving me thoroughly satisfied and delighted! Thank you for the delicious meal!
