We came to this restaurant to celebrate my birthday this time, as we celebrated my subordinate's birthday last time with their first dipping noodles. This time, we ordered regular dipping noodles. It was a simple dipping noodle with a soy sauce base, quite the opposite of the rich fish and pork bone dipping noodles from last time. It was similar to a slightly seaweed-flavored dipping noodle. The toppings included chicken and pork chashu, menma, and small chashu pieces in the dipping sauce. It was a refreshing and delicious dipping noodle. We finished by adding soup at the end. Soy sauce ramen for 900 yen (tax included). Since the inbound demand has returned, there are often long lines during meal times. I wonder if this place is being shared among foreign tourists because it's so delicious? I usually don't finish the soup when I eat ramen, but the soup here is really delicious and it feels like a waste to leave any. The first time I visited, I tried the soy sauce flavor and it was really delicious, so I've been sticking to soy sauce ever since... haha I should try something else next time!

Today I was working in Shijo-Karasuma again, and decided to go to Eiseitei for the first time in a while, but to my surprise, they were closed for the day. As a Plan B, I headed to Menya Ichiryu Takamatsu in Teramachi, a popular ramen shop known for their tsukemen. Even though it was just before 3 PM, there was already a long line. I ordered the soy sauce ramen with pork shoulder chashu and chicken breast meat, topped with rare bamboo shoot menma. The noodles were made with whole wheat flour, and the original soup was made with the finest Osan chicken. The dish arrived in just 5 minutes, and although it was a bit small, the soup was delicious with a deep flavor that made the noodles incredibly slurp-worthy. The two types of chashu were both delicious, and I especially enjoyed the bamboo shoot menma. I added Sansho pepper and Chidori vinegar to the soup halfway through to enjoy a change in flavor, and the Sansho pepper in particular paired wonderfully. I've been to the Sanjo branch of this shop before, and the Teramachi branch was just as delicious. The maze-soba had delicious noodles that were slightly flat, making them easy to coat in the sauce. I ordered the special soy sauce ramen for 1100 yen and the seared soft-boiled egg and chashu rice bowl for 500 yen. The soup has a nice soy sauce flavor. The soft-boiled egg is a bit cold. The chashu is rare and made from chicken. The noodles are between soba and Chinese noodles. The chashu rice bowl is a bit bland. There was a small line before opening, but it didn't get full. There is only one ticket machine, so it takes time to buy a ticket if you line up before opening. Around 30 minutes after opening is a good time to go.

Today around 11 o'clock, I excitedly visited my favorite restaurant, Inoichiran, but there was a huge line!! It seems like the increase in tourists is causing this... (T . T) I gave up and started looking for another restaurant when I remembered Hitotsubamanbai. I've had their ramen and maze soba before, but this time I decided to try their dipping noodles for the first time. The special rich fish and pork bone dipping noodles. The dipping noodles had a hint of wheat fragrance from the bran, but it was a bit weak. The noodles are advertised as smooth and chewy, but they were actually quite firm and lacked the supple elasticity that is usually associated with chewiness. The dipping sauce prominently featured the fish flavor with a depth added by the pork bone, and it was tasty. However, it was quite salty, don't you think? The chashu (sliced meat) was tender and delicious, and the soft-boiled flavored egg paired well with the soup! I wasn't sure if they offered soup refills, so I asked the staff and they did provide it! They gave me a bowl and poured bonito soup to mix in, but even that was too salty! In the end, I gave up on finishing the soup and left the restaurant. Since I ordered dipping noodles, they should have explained about the soup refill during serving or had a notice on the table. Also, the soup refill should be customizable to suit individual preferences. The taste and service were not bad, but it fell short... Thank you for the meal!

The perfect way to end my last night in Kyoto was with a bowl of ramen! The soup wasn't too salty, unlike in Kanto where you often have to leave 3cm at the bottom because it's too salty. I finished work early and suddenly felt like eating ramen, so I decided to visit this shop. I arrived at the shop around 8:30 PM, just before the last order. I purchased a ticket for the "Special Salt Ramen" (1,100 yen) and sat at the counter seat. The bowl that was brought to me was topped with chashu pork, bamboo shoots, seasoned egg, chopped green onions, and mitsuba. The soup was made from whole chicken and duck, with the chicken adding flavor and the duck providing richness, while the salt seasoning enhanced the taste and the chicken oil added depth. It was light yet flavorful with a rich taste. The noodles were made from whole grain flour from Kaneko Seimenjo, and had a strong aroma of whole grain with a good texture that complemented the soup well. There were two types of chashu pork used, with the pork shoulder loin having a strong meaty flavor and the chicken chashu being moist and delicious. The seasoned egg had a soft, runny yolk and a well-seasoned taste that paired well with the light salt soup.
