TERMITE
Today's lunch was at the Kyoto ramen mecca "Ichijoji", where I visited for the first time "Kyoto Ichijoji Ramen Shino" after separating from the "Mugai Group" on April 22nd. I entered the restaurant and washed my hands with the alcohol disinfectant in front of me, then stood in front of the ticket machine. Looking at the menu on the ticket machine, I saw that they only offered "Thick Pork Bone" and a "Super Thick Pork Bone" that was labeled as "Coming Soon". I selected the ticket for "Thick Pork Bone with Extra Noodles (830 yen)" and handed it to the female staff. I chose curly noodles and asked for garlic, then sat at the counter with a transparent partition. After a while, the "Thick Pork Bone" arrived with pork belly chashu, bamboo shoots, leeks, bean sprouts, and cabbage on top of the richly emulsified pork bone soup. I took a sip of the well-emulsified pork bone soup, and the strong garlic aroma hit my nose. It was "thick", but had a smooth texture, spreading the flavor and umami of the pork bone broth in my mouth. The sweetness of the back fat, along with a slightly salty and soy sauce-like richness, made it delicious! Although the name has changed and they have become independent, the taste is almost the same as when it was "Buta Jin Kyoto Ichijoji Store". The medium-thick curly noodles had a resilient firmness and a satisfying crunch, blending well with the soup, and tasted incredibly delicious! The pork belly chashu was so tender that it crumbled easily, releasing the savory meat and fatty sweetness. When combined with the soup, it was extremely tasty! The well-seasoned bamboo shoots added a crunchy texture and flavor, while the leeks, bean sprouts, and cabbage provided a fresh and crisp accent, creating a great combination! After finishing the noodles, I asked the female staff for an extra serving of noodles with thin noodles and very firm texture, and went to the homemade topping corner at the back of the store to pick up spicy bean sprouts, pickled mustard greens, and spicy chili flakes. Just as I returned to my seat from the topping corner, the extra noodles arrived! I first tried the pork bone soup, which was now enhanced with the flavors and spiciness of the additional toppings, making it even richer and delicious! The straight thin noodles for the extra serving were very firm, with a chewy texture and a smooth surface that was easy on the throat, blending well with the soup due to the low water content, and tasted incredibly delicious! I left the pork bone soup unfinished but quickly finished the extra serving of noodles, enjoying every bite.
