I walked leisurely along Rokkaku Street. I came across a traditional townhouse that seemed to be the place, but there was no sign outside and it appeared deserted. Bravely entering, I found a self-service machine with printed tickets. Taking the ticket to the second floor, I saw a stylish counter overlooking a small garden. Behind the counter, two sharply dressed gentlemen were preparing my bowl of Hōramen tsukemen. The broth, infused with bonito flavor, was delicious. They also provided a broth for finishing the meal, served in a white Nambu iron kettle, which was rich and flavorful. When I finished, they directed me to exit through a door next to where I entered, with a close view of the garden. From start to finish, I did not encounter any other customers. As I left the unique ramen shop in the traditional townhouse, I couldn't help but think of the ninja houses in Kanazawa.

Visited after the Kyoto Cultural Museum. The store, cleverly utilizing a machiya townhouse, is impressive. The menu is similar to other affiliated stores. I ordered the curry tsukemen, which I had previously enjoyed at a ramen shop with no name or sign. The curry and motsu were incredibly delicious, but the noodles felt a bit heavy. I remember the ones I had at another affiliated store being smoother and chewier. I wondered if they were overcooked. Nevertheless, I finished by mixing the remaining dipping sauce with rice and felt satisfied. This is a shop without a signboard. The exterior and interior don't look like a typical ramen shop. There are only counter seats where you can see the kitchen, but the space is very spacious. The grilled motsu (offal) had a delicious aroma. It was fun to adjust the condiments by yourself.

The entrance is hard to find. Luckily, a couple in front of me went in first, so I was able to enter. The clinging-type shops are nice because they are stylish, but the best part is the excellent flow of movement. There is no waste. The open kitchen and interior design are very stylish. The dishes are really beautiful. I had the wagyu tsukemen with 1.5 servings and added a seasoned egg topping. They mix in large leaves as a garnish, so it's refreshing. There are so many different options that I want to try them all. I will definitely go back.

Marutamachi's affiliated store has been selected as one of the top 100 ramen shops! It is a stylish and delicious ramen shop with a clean atmosphere. One thing to note is that you cannot gauge the level of congestion before purchasing a meal ticket, and it is completely cashless. I arrived at 18:03 on a holiday, and the line had already completed one round up to the person in front of me. I was able to get a seat at exactly 18:30 (^_^;) Looking back, there was still a long line, so maybe I was lucky. It is recommended to visit early. Compared to the affiliated top 100 shop Takakura Nijo, this shop has more seating and plenty of indoor space to wait, making it easier to wait. However, the staircase on the way out is a dim spiral staircase. It may be better to avoid it for children, elderly people, or those with mobility issues. [What I ate] Tsukemen [with] Yuzu 1.5 servings ¥1000 It is a bit on the expensive side, but the attention to detail in the decor and small items is amazing. The ladle is made by Yuzuki, and the soup is served in a Nanbu ironware pot. If you get this kind of quality for a thousand yen, it's acceptable. Of course, the taste is also delicious. Perhaps because of that, a couple who didn't bother to keep their voices down or laughter in check is lingering. It ruins the atmosphere. Most young people these days are good at reading the room, but there are exceptions, it seems. The taste is as delicious as always. I usually sit at the back, where it's quiet, so sitting at the front counter seat for the first time feels refreshing. I am happy that the coronavirus is settling down, but I can't help but feel a little nostalgic for the quiet dining environment. I think Sugari-san is a great restaurant with no complaints, but I did find it a bit inconvenient that you can't tell how crowded the restaurant is before buying a meal ticket. The four sukari was always crowded, so I went to Gojo to try it out. You wouldn't even know this was a ramen shop if you didn't know. There are no signs, just a ticket machine inside the sliding door where you buy your ticket and go up to the second floor. They only accept electronic payments like credit cards and PayPay, no cash. This time I ordered the char siu tsukemen. The ratio of ramen to tsukemen orders seemed about half and half. They recommend putting vinegar on the noodles, which have a refined taste. The vegetables on top of the noodles were crunchy and delicious. I finished with the final soup pour. It's a stylish and pleasant atmosphere, definitely a place worth visiting.

I visited this restaurant near Karasuma Station for dinner. It has an unusual appearance for a ramen shop. When passing by, I saw a customer purchasing a ticket at the machine, so I knew I was in the right place. The menu is similar to Ajo Ramen, and I bought a ticket for curry tsukemen at the cashless ticket machine and went up to the 2nd floor. The place was quite busy with customers. After a short wait, the tsukemen in the photo was served. They also mentioned that there would be rice at the end. The noodles were pale and slightly thin for tsukemen, almost resembling thin udon noodles. The surface was firm and chewy with good elasticity. The dipping sauce was tangy and had a hint of spiciness, giving it a soup curry-like flavor. The offal in the dipping sauce had a nice chewy texture and added richness to the dish. Other toppings included tomato, leeks, and cabbage in the bowl with the noodles. After finishing the noodles, I requested rice, and it was served in a unique way where the rice was tossed into the leftover dipping sauce container. I unexpectedly felt full after finishing the meal. I would like to visit this place again.

I ordered the motsu tsukemen with 1.5 servings and it was a generous portion. They also offer to dilute the broth if you find it too strong. As you continue eating, the flavor becomes richer, so it's a good idea to ask for the broth to be diluted halfway through. The setup with various items in the drawer is very modern. After finishing your meal, you can enjoy the traditional Kyoto-style garden before leaving.

I don't understand this. It might be a good idea to go early to reassure yourself before entering such a courageous store. The appearance of the store is worth a thousand words. I had the curry tsukemen. They also offer shime gohan here! However, unknowingly, I ordered the motsu don. The motsu don had about five pieces of chewy motsu, sweet and savory sauce, white negi, and plenty of rice, which was very satisfying. The curry tsukemen was medium spicy. The noodles and seared chicken were particularly delicious. Definitely worth a try!

I selected my order using a machine and paid with a credit card before heading to the second floor. I had the smoked chashu ramen for 950 yen and a seasoned egg for 120 yen. The broth had a seafood flavor at first, but then became quite salty and numbed my tongue. Maybe it would be better to have it with rice. Or perhaps the tsukemen would be a better choice. When I went to Soba Sagari, there was a long line outside the store, so I decided to try this place for the first time since I once waited for 2 hours in line. There was no curtain, so I was unsure if I was in the right place or if it was okay to enter. Inside, there was a ticket vending tablet with no staff. Payment is cashless, only credit cards or electronic money are accepted. The eating area is on the second floor, spacious and not crowded, creating a luxurious atmosphere. It was a bit scary as there were no walls or glass at the back and I was afraid of falling. I ordered the motsu ramen. It was served in about 10 minutes. The soup, with a tangy taste of seafood, was delicious. The grilled motsu was fragrant and tasty. It was really delicious! I'm happy that I can enjoy this taste without having to wait in line. Is this a hidden gem?

Looking back to February 2008... I met Takakura Nijo-san and fell in love with whole grain flour noodles like Japanese soba. I had my first tsukemen in Kyoto at Roji-san, and was impressed by the atmosphere of Wajo Ryo-men Sugari-san's "The Kyoto". I visited a ramen shop without a name (commonly known as such) while wandering each time, and then... I discovered "Sugari" which renovated a Kyoto machiya, a hidden gem with no signboard or curtain. Every time I enter, I feel excited! When you open the door, you are immediately greeted by the latest ticket machine. It's a bit too overwhelming for a man in his 50s who is cashless only. Going up the stairs to the second floor, a different space opens up in front of you. "Is this a ramen shop?" It's too stylish for a man in his 50s. The pleasant BGM and wonderful kitchen are too fashionable for a man in his 50s. I always go for the "motsu menu", the perfectly grilled and chewy motsu is exquisite! It goes really well with the seafood pork bone flavored soup! The whole grain flour noodles, like Japanese soba, have recently been slightly thickened. Also, the thick negi that was an accent with cabbage has been replaced with smoked chicken (?), and they are constantly evolving and challenging themselves. The seasoning unique to this store, "Ohara's shiso", goes incredibly well with the soup, allowing you to enjoy flavor variations. It's a blissful bowl that allows you to feel the essence of Kyoto while in this different space. I look forward to the future expansion of the store, thank you for the meal!

Near my workplace, there is Takakura Nijo, a ramen shop that I have visited countless times. When I heard that a new branch had opened, I was eager to check it out. The location is along Takakura Street, south of the main store (Takakura Nijo), near Rokkaku. Just like the shop in Sanjo, there are no signs outside, just a traditional Kyoto townhouse. If the door is open, it means they are open for business. Inside, there is a ticket machine for ordering. Cashless only? Seriously? I only brought cash and my phone with me from work. What a mistake... However, when I asked the staff, they kindly accepted cash (no change given, so exact change is preferred). The lack of signs and cashless policy are quite innovative. It seems like more and more shops are adopting this approach in the future. I went upstairs and ordered the "Wagyu offal tsukemen with 2 servings" (1050 yen). I was planning to dip the noodles in raw egg like I did at Takakura Nijo before, but I couldn't find any raw eggs. The offal in the soup and the noodles were delicious, and the green onions added a nice touch. The shop has a modern "Japanese" concept, with stylish cups for tea. It feels like a mix of the best elements from all the branches in the chain. When I asked for soup refills, they served grated daikon on the plate with the noodles instead of soup. Surprising new rules keep coming! This is the Neo-Takakura style that I discovered. Despite the complex nature of the shop without prior information, I found it enjoyable with its unique atmosphere. I visited around 7:30 PM on Sunday. There were 7 customers before me, but I was seated right away. The back window was wide open, offering a beautiful view of the warehouse and greenery. I had the Smoked Chashu Tsukemen for 950 yen. The flavor of the shiso leaf matched well with the dipping sauce. This restaurant has the most vegetables I've seen, which is great. The sweet leeks and grated daikon may not have been the best match for the dipping sauce in my opinion, but I appreciate getting to eat more vegetables.
