"Do you like yuba?" I was asked by a friend while on a trip to Kyoto. I had never really thought about whether I liked or disliked yuba. It's not a food that I dislike, but I also couldn't quite say that I liked it. In fact, I couldn't even remember what yuba tasted like! So, when I stumbled upon a restaurant serving yuba dishes, I decided to give it a try.
I ordered the Yuba Gozen. Since it was just opening time, there were no other customers, and my food arrived within 5 minutes. I was amazed by the variety of yuba dishes that came out! In the front, from left to right, there were yuba with miso, freshly made yuba, and yuba with sesame dressing. In the middle, there was yuba with wasabi soy sauce, deep-fried yuba, yuba rice, along with miso soup, pickles, and dessert. I had no idea there were so many types of yuba dishes!
The staff recommended starting with the freshly made yuba, so I did just that. And when I took the first bite, I was blown away. "Yuba... is incredibly delicious, isn't it?!" Slightly warm and tender, with a nice thickness to it. I could eat as many pieces as I wanted! Next, I tried the yuba rice, which was unexpectedly delicious. I had doubts about the combination, but it surpassed my expectations. The bean paste on top was slightly firm, coating the yuba and rice perfectly. The wasabi added a nice kick, and the overall flavor was light soy sauce. It's the kind of dish you'd crave when feeling under the weather.
All the other yuba dishes were equally delicious, and I savored each one. Surprisingly, I ended up feeling quite full. The answer to "Do you like yuba dishes?" is a resounding "I love them!" When in Kyoto, you can't go wrong with yuba dishes.
