Ginza Bansuke Hon-ten | Higashi-GinzaAnother day in Ginza. Started the day with coffee at "West" to wake up, and had lunch at "Bansuke" for dried fish. The dried fish at "Bansuke" is not the dry and hard type you might expect at an izakaya lunch, but rather thick and plump, changing the image of dried fish. I ordered the colorful three kinds of dried fish set meal. On this day, it was silver cod, flounder, and salmon. The fish, with its proteins transformed into umami through drying, all looked delicious. The bold typeface of "Bansuke" makes you feel the pride of a long-established restaurant. The most popular silver cod was truly amazing. It was tender and juicy, with a rich and sweet fatty juice overflowing. The flounder had a sticky umami when you bite into it, yet it was refreshing and well-balanced without any astringency. The salmon was crispy and fragrant. The sweet taste that spreads after the strong umami remains even after drying, providing a stable deliciousness. The miso soup was filled with daikon, releasing a rich and sweet flavor that could make you finish all the rice just with the soup alone. We received some dashi to make ochazuke as a finishing touch. Our stomachs warmed up and we felt content and peaceful.

Visited around 12:30 without a reservation. There are many shops that sell dried fish, but the fish here is really recommended. The set of three dried fish is good, but I didn't like the salmon. The sailfin sandfish and mackerel are really recommended. You can have seconds of rice and miso soup, so I think it's okay to have less rice for those who eat small portions. I will visit again.

[3.5 Rating] Visited the restaurant at 3.53pm. It is located a few minutes' walk from Higashi-Ginza Station. I arrived for lunch. About 60% of the seats were occupied by customers of all ages and genders. The interior had a counter, tables for 2, and tables for 4. Background music was playing softly. I ordered the A set lunch for 2090 yen (tax included), which consisted of mackerel, striped mackerel, and red sea bream. Positive points: The service was energetic. The miso soup had chunks of daikon and a sweet taste. The rice was slightly firm and shiny. The fish had a good thickness and a nice fatty texture. The crispy skin was also enjoyable. The bones were well removed, making it easy to eat. The only downside was that it was a bit too salty, making me thirsty towards the end. The pickles were a bit too soft in texture. Thank you for the meal.

I had dried blackthroat seabream for the first time in my life, and it was amazing from the richness of the fish to the way it was cooked. When I saw other customers eating mackerel, I felt like trying it next. The side dishes were also excellent, and I feel like I want to eat here for lunch every day. It's a high-class restaurant in Ginza, and the ingredients are top-notch, so the high prices are justified by how delicious the food is. You can't make a reservation for lunch, so I recommend going early. It seems like you can also buy souvenirs, so next time I'll buy some to take home.

My partner and I came here together. For lunch today, we decided to try this restaurant. They offer a choice between a single dried fish set meal and a variety of fish set meals. I chose the set with mackerel, hokke (Okhotsk atka mackerel), and red sea bream. My partner chose the set with silver cod, flounder, and salmon. First, we had miso soup. It was slightly sweet but incredibly delicious. The fish, all dried, had different textures. Particularly, the mackerel, salmon, and silver cod were outstanding. The red sea bream, which I didn't have high expectations for, had just the right amount of fat and paired well with the rice. The side dishes like the rolled omelette and pickles also complemented the meal. To finish, they brought us dashi so we could enjoy ochazuke. We were very satisfied. Thank you for the meal.

I recently tried the grilled fish set meal here and I loved it. I originally wanted to get takeout, but they only offer it on weekdays, so I decided to dine in. The staff were friendly. I ordered the set with three types of grilled fish (mackerel, red sea bream, and saury). All the fish were delicious. But what really impressed me was the rice. I can't explain how good it was... I even asked for seconds. The ochazuke with the broth they gave me later was also delicious. Just drinking the broth alone was amazing. I want to go back to try other fish and have more rice. The dried fish was rich and unlike anything I had ever eaten before. I had the 3 kinds assortment, while my companion had the extra-large split half & half. The flounder in the 3 kinds assortment was particularly delicious. The miso soup was on the sweeter side with plenty of ingredients. They also offered a clear soup at the end, along with an invitation to have ochazuke, but I found the clear soup too salty for my taste. Adding it on top of the dried fish would make it even saltier, so I declined. It was unnecessary. If they were to serve a dipping sauce, it should be a carefully crafted broth that complements the fish. It's not as simple as just pouring broth over it like in hitsumabushi. The dessert, a kind of sweet rice cake, seemed cheap and unnecessary, like something you'd find in a supermarket's snack section. I felt that the delicious dried fish, rice, and miso soup were satisfying enough on their own. The prices were reasonable, considering the unique and delicious flavor of the dried fish. Therefore, I hope they focus on the quality of the dishes.

The price was a bit high, but the size of the fish was about 1.5 times larger than usual. When I put my chopsticks in, the juices overflowed. The mackerel was tender and full of flavor, with a generous amount of fat. The alfonsino was also very juicy, even softer than the mackerel, and had a rich amount of fat. It had an elegant flavor and sweetness, different from the mackerel. Towards the end of the meal, you can put these dried fish on top of rice, pour broth over it, and enjoy a different kind of deliciousness in ochazuke. You can get refills of miso soup and rice, and the white miso soup with plenty of daikon radish, seaweed, and carrots was subtly sweet and tasty. Just the miso soup and rice alone make you want to have another bowl of rice. The interior of the restaurant is also clean and highly recommended. I will definitely visit again.

At the end, I was served a broth that I could use to make ochazuke (rice in tea). They also provided wasabi, green onions, and seaweed for the ochazuke, making it irresistibly delicious. Although it may be a bit pricey, the miso soup was packed with daikon radish, carrots, cabbage, and seaweed, making it very tasty. If you're looking to enjoy some delicious dried fish, this restaurant comes highly recommended. I will definitely visit again.

I visited Banjo-san for the first time, a place I had wanted to go for a long time. I went on a Monday at 2pm and there was no wait, the restaurant was empty. I ordered a set with three types of fish: mackerel, red snapper, and saury. The lunch set was a bit cheaper than dinner, around 1,800 yen. Along with the grilled fish, the set included a miso soup with plenty of vegetables, rolled omelette, simmered seaweed, rice (which you can later turn into ochazuke with tea, and also comes with trefoil and wasabi), pickles, and water warabi mochi. The boneless grilled fish was easy to eat, with crispy skin and tender flesh...it was incredibly delicious. I still want to eat it right now as I write this review. It's expensive and hard to find, but I want to eat it every day. The ochazuke was a perfect finish, with the fish becoming less fatty and refreshing. I never knew grilled fish could be so fluffy. But this time, we wanted to try some dashi chazuke as well, so we decided to go to Bansuke. It was our first time there, and we loved the calm atmosphere and subtle service. It's located right near Higashi-Ginza Station. I went for lunch after it opened, and it was already quite full at an early stage. The dried fish wasn't too salty, but had a perfect amount of salt that went well with the rice. The miso soup had a gentle and comforting taste. They mentioned that you could have seconds of miso soup and rice, but I was so satisfied with savoring the flavors that I didn't need any more. The way of adding the dashi to the food was also nice!

I was taken to a fish lunch place and was pleasantly surprised by how delicious it was. The fish paired perfectly with the rice, and the tea-soaked rice dish they brought out was amazing. I usually try to control myself from getting seconds, but I couldn't resist today. The tea-soaked rice with leftover fish was a perfect blend of flavors. The rice itself was surprisingly delicious. They also offer bento boxes, and you can purchase dried fish from the building next door.
