Today, I visited a vegan ramen restaurant located south of the Kyoto Imperial Palace, called Vegan Ramen UZU KYOTO. This restaurant features digital art created by teamLab, along with vegan ramen. Upon entering, the staff explained that each person must order at least one drink and one food item. The interior was dimly lit, with digital art that came to life with the music. I chose the sea pine (chlorella) ramen, a unique flavor I had not tried before. The drink options included beer, wine, green tea, mineral water, and a seasonal fruit fermented juice, which had a refreshing rosemary aroma. I also tried the vegan pressed sushi, made with vegetables, edamame, and wasabi. The sea pine ramen had a green-colored soup with white onions and topped with thread chili. The broth was flavorful with a hint of umami, and the noodles were smooth and flat. The meal was satisfying, especially when paired with the pressed sushi. Overall, it was a unique and enjoyable dining experience, perfect for those looking for a healthier and different type of meal. The ambiance of the restaurant was great, making it suitable for special occasions as well.

I made a reservation in advance for my revenge visit, and off I went (laughs). I entered as soon as the restaurant opened. One drink and one order are required, so I ordered the tea vegan ramen set. For the drink, I chose the homemade kombucha. The vegan ramen had a tea aroma and was spicy. As I ate, sweat started pouring from my face (laughs). But it was delicious, so I ended up finishing all the broth. The drink was a refreshing mint soda, not the Japanese kombu tea (laughs). After eating, I had kinako ice cream with black honey, which was also delicious.

I didn't have high expectations when I went to the ramen restaurant featured with teamLab's visuals in Kyoto. I actually thought the taste would be mediocre. I'm sorry. It was delicious! I was aware that they offered vegan ramen made without animal products, including seafood, but I was surprised at how tasty it was using vegetable and kombu broth. I had the "Kokiake" ramen, which had a whole tomato on top and was soy sauce-based. The common soup base for all ramen is made by simmering Rausu kombu, domestic shiitake mushrooms, sansho pepper, onions, celery, ginger, garlic, and more for 12 hours, and the noodle base is made with Hokkaido wheat flour and pesticide-free whole grain flour from Aya-cho, Miyazaki Prefecture. The price is a bit higher compared to typical ramen shops in the city. I saw reviews on Google mentioning that parents were struggling to find a place where their children with dietary restrictions could enjoy delicious ramen, which led them to UZU. It seems to cater to non-vegans as well, expanding the joy of food for both vegans and non-vegans in an art-filled environment that challenges the conventional concept of ramen shops. UZU may be seen as a pioneer in vegan ramen. However, for non-vegans, the price may be a bit high, and with other delicious ramen shops across the country, it's uncertain if I would revisit this one. In a country with a small vegan population like Japan, the strategic branding of being a reservation-only, slightly higher-priced vegan ramen shop is evident, but I hope they will consider opening another shop that is more accessible and casual for vegans. I'll say it again. The quality of this vegan ramen, with its background of being vegan, is high.

On April 1st (Saturday), we went to Kyoto for the "billboard classics LE VELVETS 15th ANNIVERSARY Premium Symphonic Concert 2023." The concert was in the evening, but first, we had lunch with VEL friends at a restaurant that Nobunii and Sugar visited a few years ago. The restaurant is called "Vegan Ramen UZU KYOTO" in Kyoto, located at 146-050-5457-0541 Umenokicho, Nakagyo-ku, Kyoto, Kyoto Prefecture. Ramen shops have been increasing in number, and if the gyoza is also delicious, there's nothing more to ask for. Each customer has their favorite shop and they choose based on their mood at the time. If it's a small shop, it's common to wait in line. Some shops are designed to create lines. This particular shop breaks the traditional design and transforms the interior into an art space. It was featured in the Michelin Guide 2023 as a Bib Gourmand. The interior is very dark, with a large table in the center and seating on both sides. The walls have mirrors, creating an illusion of a larger space. I tried the Vegan Ramen Shoyu for 1600 yen. The noodles were medium thickness with a smooth texture. The soup had a rich flavor from simmering kombu and vegetables. Despite not using any meat, it still had a strong umami flavor. They also offer other ramen varieties like Miso "Yamabuki", Spicy Miso Tsukemen "Sofu", and Vegetable "Yasou". Additionally, they serve pressed sushi, yuba rolls, gyoza, and more. However, due to the dark interior, it may not be ideal for simply enjoying the food. It could be a good topic for ramen discussions though. Note: It's wise to make a reservation before visiting. They also accept walk-ins, but you may end up waiting in between reserved customers, checking the waiting time with a QR code. Unlike a traditional line, it may be convenient but it's hard to gauge progress and utilize time effectively.

The unassuming exterior of the restaurant had an exciting entrance like an attraction, which made me feel excited. Inside, it was dimly lit and felt like a different world! The vegan ramen, although a bit pricey for ramen, was really good for the body and made me feel energized. It had more flavor than I expected and was delicious.

I arrived at 18:30 on Sunday. The 18:00 opening slot was already fully booked. It seems that only the 18:00 time can be reserved. The staff at the restaurant recommended visiting during lunchtime as it is not as crowded. This was my third time trying vegan ramen, and this place is by far my favorite. I wish they had gluten-free noodles in addition to their regular ones, like brown rice noodles. I visited the ramen restaurant "Vegan Ramen UZU KYOTO" near Kyoto City Hall for lunch! It is a Bib Gourmand-listed restaurant. As the name suggests, they serve dishes that do not use any meat or fish. It's hard to imagine ramen without meat or fish, but I'm excited to see what it's like! The interior of the restaurant is a stylish space created in collaboration with teamLab, offering a calm atmosphere away from the hustle and bustle. Despite being a ramen restaurant, it feels more like a high-end restaurant. The customers were mostly foreigners, making it a popular gourmet spot in Kyoto. I visited just before closing time at 2:30 PM, and there was still a small line of people waiting, showing how popular it is! The cozy atmosphere and delicious unique ramen make it worth the visit. At the entrance, they offer a pleasant-smelling oil to put on your hands to make it easier to enter the space. This attention to detail is evident from the start! The ordering style is to choose one drink and one food item. It may be a bit pricey, but the attention to detail in the drinks makes it enjoyable! On this day, I ordered the following: - Deep Crimson (Soy Sauce) 1,600 yen - Suou (Szechuan Spicy Miso Dipping Noodles) 1,800 yen - Non-alcoholic beer Veritas Broy 500 yen - Seasonal fruit homemade fermented juice 700 yen First, the soy sauce-based Deep Crimson arrived! It has a simple appearance with tomatoes as the main ingredient. I took a sip of the soup first. Wow, the soup is rich and incredibly delicious, even better than regular soy sauce ramen! Today's dinner was my second visit to "Vegan Ramen UZU KYOTO" in front of Kyoto City Hall. The ramen remains the same, but they have added new side dishes, so I decided to come back. Upon entering the restaurant, there was a strange wait of 2-3 minutes before being seated, just like last time. I wish they would have chairs available while waiting. After being handed an alcoholic drink, I was asked to apply perfume. I was a bit taken aback by this request, and the perfume was quite strong. I wiped it off with the hot towel provided. I then placed my order for the "Deep Scarlet (soy sauce)" ramen and the "Miyama Gomi Yuba Roll". Oh, was it a one drink minimum? In that case, I'll have the "Seasonal Fruit Homemade Fermented Juice". The seasonal juice options were sweet orange, white roasted tea, and black roasted tea. I wasn't sure if the roasted tea was a juice, so I chose the sweet orange. There were many foreign customers, as expected for a vegan restaurant. I received my juice first, followed by the Miyama Gomi Yuba Roll. It was quite oily, possibly with olive oil. The ramen arrived next, but there was no space on the table to place it properly. The ramen was flavorful, made without meat or fish. I also noticed that the staff did not come around to check on us, so I had to call out in a loud voice to get their attention, which was a bit awkward. After settling the bill, I left the restaurant. The heavy door was not opened for me, and there was no farewell. The service aspect of the restaurant was a bit confusing. Despite this, the taste of the ramen was good. Overall, it was an interesting experience in various ways.

Today's second lunch was at "Vegan Ramen UZU." This time, I tried the cold ramen, which had a delicious soup made with corn, einkorn (oats), and spicy miso. I had been wanting to go there for a while, and I finally went. As soon as I walked into the restaurant, I felt excited because it had a unique atmosphere. At first, it was completely dark, but then a light shone on the table where I was seated. It was such an interesting setup! And when the ramen was served, it was amazing! I ordered the spicy miso ramen, and it had a flavor that I could easily get addicted to! The green tea drink was refreshing and paired perfectly with the ramen. If I have the chance to go again, I would like to try the soy sauce ramen.

It's a bit pricey but still delicious, you can feel the attention to detail in the rice and ingredients. - Shoyu Ramen: Always reliably delicious. The tomato on top has a presence like the chashu. A must-order every time! - Chlorella Ramen: Spicy! It was tasty but not exactly my taste, so next time I'll try the tsukemen! I forgot to put on my apron after finishing eating, and it was a white outfit, so it was unfortunate, but they came all the way to apologize, so I am grateful. Wonderful customer service!

Today, I went to "Vegan Ramen UZU KYOTO" as the restaurant I originally planned to visit was closed due to a staff injury. This place offers vegan cuisine and was recommended in a magazine. Upon entering, I had to wait a bit before being seated at the back of the restaurant where there were sparkling monitors and modern art vibes. The prices were a bit on the higher side, but I decided to treat myself. I ordered the "Vegan Ramen Deep Scarlet," "Vegan Pressed Sushi," and the seasonal fermented fruit juice. The juice had a complex flavor, the sushi was delicious with crunchy lotus root and mild wasabi, and the ramen was flavorful with mushrooms and a tomato that you crush yourself. The broth was rich from shiitake mushrooms, kombu, and vegetables. It's impressive how they can make such tasty dishes without using animal or fish products. The noodles were straight and medium-thin. Overall, the vegan dishes were satisfying and delicious.

I tried a rare vegan ramen in a mysterious space collaborated with teamLab! The nearest station is Kyoto City Hall or Jingu Marutamachi Station. As the name suggests, it is a rare shop that serves vegan ramen. When I heard about vegan ramen, I wasn't very interested, but when I heard about the amazing atmosphere inside the shop collaborated with teamLab, I was intrigued! The menu had an explanation written, "The 'written' 'empty writing' rotates in the same direction throughout the space, but due to the characteristics of 'super subjective space,' visually, left rotation and right rotation are equal. Therefore, depending on consciousness, the writing can be either clockwise or counterclockwise." It was a confusing concept... The whole space was covered with mirrors, so when I looked ahead, I saw multiple reflections of myself... It was a strange space. While waiting for the ramen, while eating, and while drinking juice, I thoroughly enjoyed this space. In addition to ramen, there were also pressed sushi and ice cream on the menu. You have to order both food and drinks, so it will cost around ¥2000, but if you think of it as including the entrance fee for teamLab, it's reasonable! ■ Seasonal fruit fermented juice (¥770) It was yuzu that day. It was delicious with a slight carbonation. I love fruit juices! ■ Non-alcoholic beer Veritas Broy (¥550) ■ Vegan Ramen Yambuki Spicy Miso (¥1320) Not only did the shop pay attention to the atmosphere, but the ramen was also delicious! I finally got to visit a restaurant I was curious about on January 20, 2022, at 11:30 am. I was able to smoothly make a reservation through Instagram DM. I ordered soy sauce and miso dipping noodles, sushi, ice cream, and fermented yuzu and kombu juice for a total of ¥6,435. They put a lot of thought and effort into creating deep flavors by squeezing out the essence of plant-based ingredients, which I found intriguing. The soy sauce had a strong garlic flavor to give it a punch. The miso dipping noodles had a rich taste with mushrooms, chili peppers, and Sansho pepper spices, making it thick and flavorful. I look forward to trying the Yamabuki (spicy miso) and Kaimatsu (chlorella) flavors next time! It would be nice if they had creative limited-time menu items as well. I also thought it would be great if they offered course meals. Thank you for the delicious meal!

I'm not a vegan (in fact, there's no way I could be vegan, lol), but I was intrigued by a vegan ramen shop. They specialize in vegan ramen, meaning no animal products are used. The ramen is well-made and flavorful, even without meat. It must be tough to make this kind of ramen. The atmosphere inside is filled with healing music playing at a decently loud volume, and there's a huge screen on one wall showing strange, abstract visuals that make it hard to focus on eating. 【Vegan Ramen UZU KYOTO】This place was a stylish and lovely, almost fantastical space that made me doubt if it was really a ramen shop. There were many female customers. The ramen here is themed around veganism, without using any meat or fish. Although a bit pricey for ramen, the experience of eating in this otherworldly setting was truly unique. The food was delicious, so I plan to try other menu items as well. The desserts looked incredibly tasty too.
