I saw this on an online news site. It's a salad shop that looks like a chemistry lab, which got me really interested. It's located in Kujo, so I didn't have a chance to visit until I attended a seminar nearby. The place is tucked away in a traditional townhouse, but once you open the stainless steel door, the interior looks like a futuristic chemistry lab. There are lots of neon lights and the staff are wearing lab coats. The menu only has one type of salad, so I wasn't sure what to order. When I asked for a recommendation, they suggested the ROMA salad. It's a NY style salad, but made with plenty of Kyoto vegetables. You can choose from three types of dressing. I asked for recommendations and got Caesar, olive oil & vinegar, and white miso. It's a chopped salad, so they cut the salad with a half-moon shaped knife. The staff could have been a bit friendlier, but then I remembered my days in the lab, and not many female scientists were very sociable, so it made sense. I bought the salad and had it on the Thunderbird on my way home. I didn't have high expectations since it seemed like an eccentric place, but it was surprisingly delicious! The vegetables were fresh and tasty on their own, but even better with the dressing! And being able to change the flavor with three different dressings was a nice touch. I thought 1,400 yen was a bit expensive, but once in a while, indulging in such luxury is nice.

I visited on a regular day. There were no other customers. The building looked like a normal house, but the door was strange, and it was getting dark, so I was hesitant to enter the unfamiliar shop. However, I gathered my courage and went inside. The interior had a research lab on a spaceship vibe! It was very interesting. I ordered the N.Y. Salad for 1,100 yen. It had sunny lettuce, duck, red onion, tomato, avocado, egg, walnut, and kaiware. It was a large salad (compared to the takeout Cobb salad from another place which cost 1,962 yen including shipping but had less quantity). The N.Y. Salad has 211 calories. You can choose from three dressings, but they give you a lot of dressing in each cup, so I couldn't finish all three cups, which was a waste. The dressings were all very appealing, so I ended up ordering three (white miso, basil cheese, Cobb), but they were all strong in flavor, so I realized it would have been better to just stick with one cup for a more satisfying meal.

Saturday 11:05 I visited ROOT2 LABO right after it opened, with no customers in sight. It felt like stepping into a laboratory that suddenly appeared inside a residential house. Upon opening the thick iron door, I entered a space where people in lab coats were working. The menu included a Guilt-Free Sweets Labo Mist for 500 yen and a Violet Smoothie for 650 yen. They only accept cashless payments. The staff, dressed in lab coats, were cool in appearance but provided polite service. At 11:22, my order arrived. The desserts were made using mostly plant-based ingredients, resulting in healthy cakes and smoothies. I could feel the satisfaction from the various angles they had put effort into creating the desserts. I particularly enjoyed the smoothie and thought I would like to drink it every day. Although I was already full at the time and didn't order it, I also wanted to try their salads. I noticed that items that were originally limited edition on Instagram had become regular menu items, and the menu seemed to change flexibly. I look forward to visiting again. Thank you for the meal.

I went to a trendy restaurant that I had heard about. It was located in a mysterious place off the main street, with a quiet logo at the entrance of an old Japanese house. Once inside, the atmosphere was futuristic and very well-coordinated, with a complete cashless system and staff in white coats. Everything in the space was silver or black, and they served chopped salads. The menu was around 1100 yen, but with toppings it came to about 1300 yen, which I thought was a bit pricey. However, being able to see the production process and enjoy the entertainment aspect made it worth it. The salad was delicious, filling, and satisfying, yet only about 200 calories, which was a pleasant surprise. I tried the Cancun salad with Mexican dressing this time, and it was really tasty. The staff were friendly, and overall it was a place I would love to visit again.

I ordered the Christmas limited edition Smoothie Violet! Salad Bowl is a shop specializing in chopped salads that salad bowl lovers can't resist, with many limited-time offers. What's unique is the laboratory concept, which I found interesting and different from other shops. There are several stores in Kyoto and I would like to try other locations as well! The smoothie was easy to drink and I finished the salad quickly! It was good that there were strawberries in it! I think it would be even better if you could choose the dressing yourself~

This is information from a person I follow on the SNS era shop review site. Ponshu Tagram Miyahn-san! There is a parking lot next to it (200 yen for 30 minutes), the shop is two stories high. There is a neon tube in front of the door with a security lock-like device that deters people from approaching. You would never enter if you were just passing by. There is no signboard. Inside, during ordering and payment, the staff wear white coats and rubber gloves, making it feel like a laboratory. There are over 10 types of salads with various toppings such as Kyoto komatsuna, various vegetables, shiba-zuke tofu, and nagaimo. You can choose from various dressings such as NY avocado, ham, and a large amount of sunny lettuce with boiled eggs. For drinks, there is iced coffee and forest smoothie. The dressings come in syringes. You will be full and the calorie count for Kyoto is 250kcal. I couldn't take a picture of the shop because there were customers, so I got the photo from the shop's Instagram.

ROOT2 LABO, a stylishly renovated Kyoto townhouse with only a neon sign of "√" as a marker. When you open the silver door, you'll be surprised to find a futuristic lab-like space with people in lab coats. This place, which opened in October, is a chopped salad shop with a concept of Wellness & Beauty. You customize your salad with 9 types of salads, toppings, and dressings using a tablet at the entrance. On this day, I customized a ROMA salad with avocado topping and Caesar dressing, as well as a N.Y. salad with okra topping and honey mustard dressing. The smoothies are also customizable with options like low-fat milk and almond milk. The salads are filled with ingredients and the dressings come in syringes. Despite the large portions, the salads were delicious and I finished them all. This kind of shop makes me wish it would open near my home. It's worth a little walk from JR Kyoto Station, as it's just a short distance away. The address is 9-1 Minamiyamaocho, Higashikujo, Minami-ku, Kyoto City. Open from 11:00 to 20:00 (last order at 19:30) with no regular holidays. Nearby coin parking is available.

I visited a branch of the pig slave restaurant that became a hot topic before it became too popular✨ It's a 5-minute walk from Kyoto Station. Is this the entrance? Is this the right place? The exterior looks like a Kyoto old folk house, with a door that looks like a commercial refrigerator. Even though it was opening time, the atmosphere didn't change, so I timidly opened the door... Just like the name of the restaurant, it feels like a laboratory‼️ People in white coats are making something. The menu is lined with chopped salads. They also use Kyoto vegetables♪ I chose the Paris salad with flowers for 1100 yen✨ and added smoked duck for 200 yen✨ I asked for Caesar dressing. Here it comes♪ The dressing is in a syringe. I've never seen a dish like this before‼️ I'll have it with a "chu" from the syringe♪ I thought it might be difficult to eat because it has kale, but maybe because it's fresh, it's very easy to eat✨ With walnuts and apples in it, there are changes in texture and taste, and you can enjoy it until the end♪ The smoked duck is also delicious, so I recommend adding it! The person I went with had olive oil from Shanghai♪ The egg looked delicious, so I got a little, but personally, I recommend Caesar dressing. Green salad with white looks nice✨ The smoothie for 750 yen is Forest♪ It's green. It has komatsuna in it, and I thought it might be a bit much, but it has ginger in it, and the mellow ginger makes it easy to drink! The person who chose Violet said it was delicious with mixed berries and a strong orange flavor✨ The drink filled me up more than the salad did. After this, I also visited the cafe at the root2 hotel within walking distance, so I'll report on that later✨

This time, I visited "ROOT2 LABO", a restaurant where you can enjoy salad bowls made with Kyoto vegetables. They share store videos on Instagram @miyan_oisii. - Atmosphere: Space like a research laboratory - Food: Vegetable dishes - Price range: Moderate prices Zdravstvuyte! (Hello in Russian) This is Miyan. 【Impressive atmosphere! As expected from ROOT2】 The unique feature of this restaurant is that you can have lunch in a laboratory setting like in a movie. When you enter the Kyoto-style building, you step into a silver sterile laboratory that feels like stepping into the realm of science. The staff, dressed in lab coats, are probably researchers with decent achievements. Their focused chopping of vegetables seems to indicate their boiling research enthusiasm. Around here, it's truly ROOT2! I thought the interior design, exclusive to all related stores including hotels, was outstanding. 【A variety of menu options】 The salad bowl allows you to customize toppings from 9 different base vegetables. There are also around 10 types of dressings, which are served in test tubes or syringes for a fun presentation. Eating in this inorganic space allows you to focus on the taste, and it was quite satisfying. Fukusuna! (Delicious!) 【Summary】 This time, the total cost for one person was 1900 yen, including: - Salad bowl: 1100 yen - Smoothie: 750 yen - Soy milk topping: 50 yen The atmospheric presentation in Kyoto is truly impressive as always, making it a remarkable restaurant. Everyone should go and try it out! Spasibo za ugaschenie! (Goodbye)

[2021.10.1 (First Visit)] ■What kind of shop? ✅Operated by the trendy "ROOT2", a salad specialty shop near Kyoto Station ✅Using fresh Kyoto vegetables with the theme of "health and beauty", you can enjoy chopped salads and smoothies inspired by various countries ✅The interior, lined with scientific instruments, is a space that feels like a different world from Kyoto ■Visit Report I visited around 3:00 PM. There were people getting takeout, and the eat-in area was empty. Perhaps because it's newly opened, they offer healthy and trendy salads, which seem to be gaining popularity among women. ■N.Y. (Sesame Ginger) 1,100 yen (tax included) The crispy romaine lettuce with creamy avocado, juicy tomatoes, slightly spicy red onions, and easy-to-eat vegetables! The smoky aroma of the duck meat was savory and juicy, not heavy at all due to the duck, and it paired well with the vegetables. ■Smoothie (Violet) 750 yen (tax included) With acai and other vegetables retaining their texture, you can fully enjoy the flavor. The smoothie has a mellow banana taste with the addition of berries and grapefruit acidity, making it very easy to drink. I'm curious about the other salads, so I would like to visit again. ■Please also check out my blog "Yossy's Kansai Gourmet Food Journey"! https://gourmetyossy-blog.com/2021/10/02/12748/

At LAVO, staff in white coats make salads and you can use a syringe to add as much dressing as you like. It's fun. There are so many choices for salad types, toppings, and dressings, making it hard to decide. And it's delicious. I wish I had one nearby so I could eat healthy every day.

I ate a lot during the day, so I wanted to eat something healthy at night. I decided to order from Route 2 Lab, a place I have used for takeout before, this time using Uber. I ordered a custom menu with options like natto, avocado, seaweed, broccoli, hijiki, and sweet potato. I chose a dressing of vinegar and olive oil. It was light and delicious. I haven't eaten at the restaurant yet, but I would like to try it if I have the chance.
