They aim to infuse Kyoto's traditional cuisine and techniques into their tonkatsu, creating a unique Kyoto-style tonkatsu. The interior is carefully designed, incorporating decorations inspired by Kyoto's seasonal events such as Gion Festival and Aoi Festival, as well as items like Hotei-san, Zhong Kui, Saga masks, and Kiyomizu-yaki pottery, reflecting the elegance of Kyoto. They use their own coarse bread crumbs for a crispy texture, and the cabbage is carefully selected from various regions across Japan depending on the season. The sauce is characterized by its smoothness, made with red wine, apple, and palm sugar. They also offer a rich sauce, which is blended with spices in a balanced manner. Depending on the store and season, they may offer brand-name pork from all over Japan. Sangen Pork refers to a crossbreed of 3 varieties, so it is not a registered brand pork, but it has the advantage of maintaining a high level of quality. It has a moderate amount of fat and tastes relatively light. Grind some sesame, mix it with the sauce, dip the tonkatsu generously, and when you put it in your mouth, the fragrant flavor of sesame blends with the sweetness of the fat.
