Located near the bustling area with countless shops, this new store by Akutagawa-san has opened, which can be considered the "backyard" of Kyoto University students. The store has a slightly different concept this time, being inspired by Jiro-style ramen. Known for their success with the unique house-style ramen in Kyoto, the new direction of the store was met with excitement and surprise. The location is at the foot of Yoshida Mountain, along the Imadegawa slope. Having just opened yesterday, there was already a line of customers waiting outside past the 11 am opening time. I also waited in line behind two groups. It seems like the operation is still getting organized, as there was a slight delay in seating customers until tables were available. The menu lists three types of ramen, but for now, they only offer the "Shirayuki Ramen Regular" (800 yen) and the famous unlimited rice refill (50 yen). The ticket machine also has options for medium size (900 yen), large (1000 yen), and toppings like cheese, boiled eggs, etc., so more choices may be added in the future. You can customize elements like garlic, richness, noodle firmness, and flavor intensity when handing in your ticket. As a first-timer, I went with garlic, normal richness, normal noodle firmness, and normal flavor intensity. The ramen arrived promptly, and despite being a regular portion, it had an elegant presentation with a manageable volume suitable even for Jiro-style beginners. The noodles were chewy, the tender block chashu was enjoyable, and while the vegetable portion was slightly small, the overall balance was excellent. The broth had a slightly dark soy sauce base, which made it lighter on the palate compared to other Jiro-style ramen. It was a great entry-level store for those new to Jiro-style ramen. With more menu options and the ability to control portion sizes, it could become even better. I look forward to returning when they expand their menu. Personally, I prefer it over house-style ramen. Thank you for the meal.
