After work, I took a detour and visited this restaurant, Makoto-ya, which has many locations in Osaka and Hyogo, but this was my first time in Kyoto. About 5 years ago, I had tried their ramen at the Amagasaki Tsugiya branch, so I decided to try their beef bone ramen again at their new store in Kameoka City. This time, I ordered the "Zenbu-nose Gyu-Jan Ramen" (1,089 yen) with firm noodles. This ramen features the main attraction of the restaurant, a beef bone soy sauce broth. The bowl arrived in about 10 minutes, with a red bowl filled with a cloudy soup topped with aromatic oil, chashu pork, flavored egg, seaweed, wood ear mushrooms, and chopped green onions. When I tried the soup, it was surprisingly light in flavor despite its appearance. The use of beef bones gave it a milky and light taste, with a hint of spiciness from the miso and the fragrance of Ma-yu oil. The noodles were straight and thin, with a good bite and a strong wheat flavor that complemented the soup well. The chashu pork was made from pork belly, offering a rich fatty flavor and delicious meatiness, while the flavored egg had a perfect creamy yolk. About 20% into the noodles, I added raw garlic, which added depth to the soup. Then, I added pickled mustard greens, enhancing the umami with its flavor and saltiness. Lastly, I added garlic chips, which intensified the flavor and transformed the initial light taste into a rich and flavorful broth. The restaurant has a large parking lot, making it convenient for those arriving by car. The spacious interior offers counter and table seating, with proper infection prevention measures in place, providing a safe and enjoyable dining experience.
