I bought a spelt wheat bread. It is a dense and heavy bread. I slice it at home and eat it as is or toast it a little. Maybe because it is baked in a kiln, the inside is moist and the outside is crispy, offering a different taste with each bite. It has a slight sourness to it. It goes well with salads or omelettes. When you spread butter on it, it seeps in and enhances the flavor even more. It's a simple, no-frills bread. I like it.

Yaei Kiln in the north of Kyoto Prefecture, starting from grinding wheat with a mill, makes wood-fired bread. The breads are full of subtle flavors, made with traditional ingredients that are not at all modern in appearance or taste. They are my current favorite bakery.
- Brioche Paysanne (Half 500 yen): My absolute favorite, the brioche. At first glance, it looks like a country loaf rather than a brioche. But after lightly reheating it, the buttery aroma fills the air, and it tastes delicious even without any toppings. This bread is said to be the foundation of Yaei Kiln.
- Campagne Bio (Half 600 yen): Made using traditional methods with only wheat and water, this campagne bread has a hint of acidity. Initially, it may not seem exceptional, but when reheated to a slightly firmer texture, the bread's nutty fragrance intensifies, enhancing its flavor. It's a bread that oddly becomes addictive.
Overall, these breads may not be visually appealing or trendy, so they may not be recommended for those looking for that. But for those who want to savor the flavors that gradually emerge with each bite, I believe the true excellence of these breads will be appreciated. There are limited places in Kyoto Prefecture where you can enjoy these breads, but they are available in certain restaurants and locations in the city.

I bought a product that was being sold in the Itotome store, which handles various food products in Tango Omiya. The stone oven-baked bread from this region, known for its rice production, is precious. Although they are currently closed, I hope they can somehow make a comeback, so I wanted to write this review. I am looking forward to their reopening someday.

I purchased two items from a shop in the Noma area that only takes phone orders and specializes in locally made, additive-free bread baked using traditional methods. The first item was the Brioche Bayanne (1000 yen for a whole, 500 yen for a half), made with fermented butter and Jersey milk, using stone-milled wheat from Hokkaido. Despite its rustic appearance, the brioche had a rich and satisfying flavor that gradually unfolded with each bite, pairing well with jam. The second item was the Complet Bio (600 yen for a whole, 300 yen for a half), a whole wheat bread made with organically grown wheat from Tochigi, stone-milled to include germ and bran, resulting in a dense yet chewy texture that allowed the wheat flavor to shine through. Both breads were delicious, and I look forward to ordering from them again.

I purchased online. It will be sold out within a few minutes of the start of sales. [Grand Eportle (Spelt wheat bread)] It is baked in a mold. It has a pound cake-like weightiness. I was able to taste the strong acidity and richness of whole grain flour. It was amazing when eaten with sliced cheese. [Brioche Paysanne (Farmer's Brioche)] In addition to wheat, it uses milk, butter, and raw sugar, and the sweetness melts as you chew. It looks like an "edible tree" at first glance, but the burnt color on the skin surface is actually delicious. The children who usually leave the crust were fighting over it and eating it selectively. The bread from this shop has a complex and powerful aroma. It felt like I had warped into the forest. It may be a bit of a stretch as a regular food item (including shipping costs), but as an experience, it was a very desirable country bread. I envy those who can buy it repeatedly.

Campagne. A tremendous weight. Its solid body has a certain ruggedness and coolness. Sliced and reheated in a toaster. A crispy sound, just like its appearance, rough and tough. Inside, however, it's soft and sticky. A subtle acidity spreads with rich flavor. With the powerful earthiness, it can handle butter, cheese, jam, or prosciutto with a fresh touch.
Brioche. Smaller and lighter than Campagne. When toasted, a soft, milky, and rich sweetness spreads generously. The milky sensation is incredibly fresh and delicious. When eaten with eyes closed, it feels like being on a farm. Fresh butter or cheese is the best match. This bread comes alive in texture and flavor when warmed in a toaster, so be sure to warm it up. I want to try the other two types of bread, packed with plenty of simple ingredients, as well.

I set my alarm to try to get some, but unfortunately, I couldn't get the bread set I wanted. I'm not sure how many sets they have, but I think they sell out quickly. I managed to buy one bread, "Grande Epeautre" for 1,000 yen. It is made with spelt wheat from a natural cultivation farmer in Otofuke, Hokkaido. They use homemade fermented starter and sea salt from Kyotango. It is dense and heavy, packed with bread dough. It has a slightly crunchy texture and a strong aroma of flour. The more you chew, the more deliciousness seeps in. It's the opposite of the trendy high-end bread, with a simple and rustic charm that really touched my heart. The shipping cost to Kanto is 1,100 yen. I really wanted that bread set...

I want to try other breads as well. Winter limited edition Pain D'Epices, a traditional French treat made by mixing plenty of honey and various spices. It is said to have originated in China about a thousand years ago and was brought to Europe by the Crusaders. When the slowly ground rye from Mr. Ueno and the sweet scent of wild honey from the mountains mix together, it becomes very sexy. It can be sliced thinly to about 5mm and enjoyed moist, or lightly toasted for a chewy texture. It has a good shelf life, so please enjoy a slice each day during the casual winter days. Perfect with Chinese tea, coffee, or red wine.

I purchased it online. I stood by to buy it right before it went on sale. Will it be sold out in just 1 minute? Honestly, it didn't suit my taste. I bought two types for 3900 yen including shipping: Seagull and Lee / Dates and Walnuts. Seagull and Lee tasted like soy sauce rice cakes? The stem part was hard and couldn't be eaten. I was able to eat the dates and walnuts.
