I love Hiroshima-style okonomiyaki, so I sometimes drive all the way to Hiroshima just to eat it. During my usual business trips to Tokyo, I often visit Mitchan in Shinbashi. I had been curious about a Hiroshima-style okonomiyaki restaurant in Fushimi for a while. When we visited around 7 pm, we were the only customers. We ordered the classic Niku-tama soba okonomiyaki. To cut to the chase, it wasn't to my taste. Overall, the flavor was lacking. The cabbage, pork, and batter all seemed underseasoned. Even when I added a lot of sauce and mayonnaise, the depth of flavor just didn't come through. It felt like stir-fried cabbage and yakisoba without much seasoning. Even though we added cheese as a topping, there was no noticeable cheese flavor. But this is Kyoto, a place known for its subtle flavors, so this Hiroshima-style okonomiyaki may have been customized to suit the local palate. This is just the opinion of someone from Kyushu who prefers stronger flavors.
