There is a nationwide chain called "Gyoza Keikaku" that may have some resistance to being called "Kyoto Gyoza," but they have a branch in Sanjo Kiya-machi where they also offer Kyoto's unique Negi Gyoza, so I will somewhat forcibly include "Naniwa One Bite Gyoza Chao Chao" in the category of Kyoto Gyoza. The distinctive feature of this restaurant is that they boast a total of 16 types of creative gyoza, with their best-selling item being the "Chao Chao Gyoza 8 pieces/320 yen," which are stick gyoza with eight pieces on a palette with crispy wings that fit perfectly together. As creative gyoza, they first try the "Gyoza 5 kinds assorted 3 pieces each/1100 yen" tasting course (shrimp, vegetables, curry, Kujo leek, black pork) to explore the delicious ones. Among them, the "Plump Shrimp Gyoza 5 pieces/480 yen" with seaweed-infused salt caught my attention, which was the second most popular creative gyoza at the restaurant. Other varieties include chicken cheese gyoza, beef gyoza, mentaiko mayo gyoza, yuzu pepper gyoza, umeshiso gyoza, ginger gyoza (without garlic), red gyoza (red pepper), salted grated gyoza, egg yolk cheese gyoza, cream sauce gyoza, shrimp and asparagus long stick gyoza, water gyoza, and more. One unique item that stood out was the "Chicken Wing Gyoza 2 pieces/480 yen," which is a special dish where gyoza filling is stuffed into chicken wings marinated in wine overnight, making it an interesting and perfect beer snack. While it may feel slightly different from Kyoto Gyoza in terms of concept, the creative ideas are interesting and it is a very popular restaurant, so I introduced it as a one-bite gyoza specialty store, Gyo Gyo (Chao Chao).
