Schnitzel
During my visit to Kyoto in November 2015, I wanted to try freshly grilled quail at Inafuku in Fushimi Inari, but unfortunately I didn't have enough time to go there. So, I decided to buy quail again at Nishiki Market, where I had bought teriyaki quail in March before. Quail is not something you see often in Tokyo, so I brought it back to Tokyo and reheated it to try. However, it was quite tough, maybe because it had been too long since it was grilled or because I didn't reheat it properly. It was hard to even remove the meat from the bones. Maybe quail, wine, and tofu shouldn't be taken on a journey. I still want to try buying domestic raw quail meat and grilling it myself, rather than imported frozen ones from France.
During my visit in March 2015, I impulsively bought a teriyaki quail at a famous fish restaurant in Nishiki Market, Kyoto. Quail (not eggs) used to be a more common ingredient to eat, I remember seeing it on the menu at a yakitori restaurant in Mita called "Fukuya" and at the Tsukiji branch of Torito, where they sold raw quail with the feathers removed except for the wings. However, it has become rare to find quail nowadays. Eggs are still sold normally, so there should be parent birds around, but I wonder what happened. Recently, all I can find is frozen ones from France, which don't taste that great and are quite expensive. About ten years ago, I saw a whole teriyaki quail at Nishiki Market in Kyoto, so I always checked whenever I visited Kyoto, but I haven't seen it in the past few years. Finally, I found it at this shop. The shop had a variety of river fish dishes such as grilled rockfish, simmered carp, and grilled eel. Among them, there was a teriyaki quail, mini quail legs, and quail sausages. I asked the lady who was busy selling grilled rockfish for a teriyaki quail (470 yen) and tried it. The meat was flavorful and delicious. Compared to other poultry like pheasant or Shamo, which tend to have tougher meat even if they are flavorful, quail was quite tender. I preferred the teriyaki flavor over the French cuisine-style fruity sauce. The only downside was that there was not much meat. I would still like to try freshly grilled quail. I want to buy raw quail meat and cook it at home, but I wonder if it's sold somewhere. Since I have already searched thoroughly in Tokyo, I would like to try looking for it in Kyoto. Please note that this evaluation is only for quail and not the shop's main river fish products.
