In August, we were treated to a delicious meal at a hidden gem yakiniku restaurant in Kyoto for the second time. After dining at Ishuuro, five of us, including the chef, visited the restaurant. The freshness of the meat was outstanding! The minced meat sashimi served at the beginning told the whole story. We left it up to the chef to decide, and we were grateful to be served with high-quality cuts like tongue, harami, and sagari, which are currently in high demand. The Ichibo Yukke with Ulte Mabo was a dish that went well with drinks. Although it is hidden, it seems that you can now make reservations via Instagram DM, so I highly recommend it to everyone. - Minced meat sashimi: Minced meat sashimi from Kagawa Prefecture's Juya. Instead of being boiled, it is served raw. While many domestic minced meats are tough or have a strong smell, they carefully select the best minced meat. - Ichibo Yukke: Yukke made from Ichibo of Saito Livestock's Senriwai beef from Yamagata. The seaweed served with it is an elegant Korean-style seaweed made with our original seaweed from Ariake, Seto Inland Sea salt, and domestic sesame oil. - Tongue: Top-class tongue from Kumamoto's finest Aka beef. Our tongue is top-notch in taste, rarity, aroma, and texture. - Harami, Sagari: Top-quality harami and sagari from Sendai beef. These top-level cuts are not easily found even in Sendai. - Ulte Mabo: From Kagawa Prefecture's Juya. A specialty menu item. A unique dish of homemade Mabo sauce mixed with the meat.

■ Introducing a referral-only yakiniku spot that transforms its noren late at night from a certain motsunabe shop where you can also enjoy premium black wagyu beef. Known as #ShinyaYakinikuDaichan, this place is located a 5-10 minute walk from Sanjo Keihan Station and Hankyu Kawaramachi. The exterior features a clean white wall with a stylish wooden door welcoming you. The sign indicates that a referral is required. Inside, the atmosphere is calm with dim lighting, offering counter seats, table seats, and even private rooms on the second floor. The highlight is the black wagyu beef carefully selected by Chef Matsuo, which is cut right in front of you at the counter during the late night hours, allowing you to enjoy it deliciously. The chef's desire to interact with customers while keeping an eye on them means that only about two groups can be accommodated at the counter. On this particular day, I heard that they had an incredible 60-month-old purebred Tajima beef from Okazaki Ranch, and I had to visit! The fat melts as soon as it's taken out of the fridge due to its low melting point. It has a great aroma, rich flavor, and a light, non-greasy texture. I doubt you can find yakiniku with this quality of meat in Kyoto anywhere else!
