Queue: Arrived around 10:50 AM, 2 customers in line after purchasing tickets. Inside the restaurant: 1 owner, 2 assistants, 5 counter seats, 2 tables for 4 people each, total of 18 seats. Self-service water, ticket system for ordering. Order: "Special Soy Sauce Ramen" for 1300 yen. Overall impression: Busy with job hunting and ramen activities, yukio visited this place looking for a standard delicious soy sauce ramen. The restaurant, Ayane, located in Gotanda, has been on my radar for a while. The owner is involved in various businesses, including cafes, and has been featured on Tsujita's channel talking about various things. The restaurant is also known for its sake selection, popular during evening hours. Ramen with sake, how does that work? Also, selected for the 2022 Michelin Guide, so expectations were high. The name "sign" is taken from the famous song by Mr.Children, as the owner is a big fan of the band. Arriving 10 minutes before opening, got the waiting ticket and two customers arrived shortly after. The restaurant opened on time, and I bought the ticket and sat at the counter. The interior was very clean, with a large monitor playing live music, though not the song "sign". Various one-liter bottles of sake were displayed at the counter, showing their commitment to quality. I drink alcohol every day, but I'm not a big fan of sake. After a 10-minute wait, the ramen was served. The wontons, two types of chashu, and menma had a classic look. The brown soup had a good body, and the chicken-based soup was well complemented by the seasoning. The soup had a good chicken flavor, and the seasoning added a nice touch. The noodles, which seemed to have changed from Mikawaya Seimen to Kanou Seimen, were slightly yellow and straight, providing a satisfying chewiness. However, the noodles didn't pick up the soup as much when eaten in small amounts. The chicken chashu was tender and silky, offering a stable flavor. The wontons had a subtle ginger flavor, but the filling was a bit lacking. The flavored egg was perfectly runny, but a piece of the white was missing, affecting the appearance. The menma was crunchy and served as a good side dish. The balance of the ramen was excellent, allowing for a smooth eating experience. Finished everything! Delicious! A stable and tasty chicken-based soy sauce ramen. This kind of flavor is becoming more common these days, but I still like it. The staff provided excellent service, even greeting me as I left, which was a nice touch. The cost-performance ratio was standard.
