Located just a little over a 10-minute walk from Mitaka Station South Exit, this ramen shop originally opened in Sakata City, Yamagata Prefecture in 1960. To celebrate its 60th anniversary, they opened their first Tokyo branch in February 2020. They were ranked first in the Wan Tan special feature on the TV show "Matsuko-ariyoshi's KARISOME Tengoku". I visited around 5 pm on a Sunday and there was no wait. Feeling undecided between soy sauce and salt, I decided to go with soy sauce and purchased my ticket. I was served my bowl of ramen in less than 5 minutes. The bowl had a collaboration with Studio Pierrot, featuring Osomatsu-kun. By collecting points on their loyalty card, you can enter a lottery to win a bowl of ramen or a T-shirt. The ramen itself had a classic look of Chinese-style noodles with toppings such as char siu, wontons, boiled egg, bamboo shoots, and green onions. The soup had a light flavor with a broth made from dried flying fish, sardines, and kelp. The wontons were extremely thin and delicate, made with edible silk to prevent them from dissolving too quickly. The meat filling had a slight ginger flavor and was delicious. The char siu had a traditional firm texture with a rich meaty flavor. The noodles were medium-thin and had a nice springy texture, also made with silk for added chewiness. They also offer a limited option to switch to thick noodles. Overall, every ingredient was well-prepared and delicious. Before visiting the outdoor shop I wanted to go to, I stopped by this place. It has a welcoming atmosphere for women, with all the staff inside being women. It was a hot day, but sweating was worth it because the wonton noodles were delicious. Mitaka has many great restaurants, I envy that.

I became a wontan fetishist after experiencing the intense wontan noodles at that time, but recently the market has been seeking uniqueness in the material of the skin. This is a branch of a famous restaurant from Sakata City, Yamagata Prefecture, that has expanded to Tokyo, but in a slightly more remote area. I ordered the Wonton Men for 850 yen. The restaurant was moderately busy, but the turnover was fast, and my order arrived in less than 10 minutes. The soup had a strong base of kombu and bonito, combined with a smooth broth that was consistently delicious until the last drop. The soup paired exceptionally well with vinegar. The slightly salty noodles also complemented the flavors perfectly. The standout item was the wonton, which was thinly wrapped with well-seasoned meat, creating a great harmony with the soup. It's common for renowned restaurants from other regions to open in Tokyo, but many end up closing unexpectedly. I enjoyed the summer specialty "Chilled Wonton Men" that I have been eating every year. It is usually released around Golden Week in May, but due to a lack of time in the past two years, I finally made it this time. Even though I was working non-stop since morning and suddenly realized it was past 2 pm, I am grateful that they serve lunch continuously even on weekdays. Maybe it was good to avoid the lunch rush? It is always crowded with people of all ages in the local area, and this time I was able to relax and take my time... Sorry for being a slow customer.
<Overall> A Yamagata specialty! A full moon specialty, Chilled Wonton Men! It exudes a simple yet cool and calming aura. It's a great privilege to be able to enjoy the chilled version of the Yamagata style in Mitaka. The coolness makes you feel a certain aura! The soup is poured into the hollows of the ice, creating a strangely beautiful impression. Looking at the photos later, it doesn't seem that different from the regular warm version. Apart from the greens and ice, it has a similar feel to the warm noodles.
<Soup> Bonito & Kelp broth! A light soy sauce-based soup that you can gulp down without feeling diluted by the ice. It has a soft and clear soup feeling. It is very similar to the warm noodle style where the dried fish flavor has melted. However, when you start slurping with a spoon, you will be drawn to the gentle and simple taste, leaning towards a Japanese dashi flavor with a touch of chilled nuance. It has a simple and comforting taste! You can also feel the umami of chicken broth, but the main character is the sweetness of seafood. The combination of the umami of seafood and the flavor of soy sauce creates a very harmonious taste. It may feel more Japanese than the warm noodles. The interesting difference with the warm noodles is the subtle bonito flavor. It's not the sweetness of dried fish, but the richness of bonito flakes that you can taste, with a strong kelp broth flavor. It has a very Japanese dashi flavor and even feels like "Japanese soup". The fact that it stays cold for a long time is also nice! I drank it all without any resistance as it had no greasiness.

However, before being paired with the cold soup, they have been thoroughly rinsed with cold water, making them firm and tight. When paired with the cold soup, you can feel the noodles tighten and have a crispy texture. The appearance is more transparent than usual, giving it an even smoother and more slippery texture. It can be eaten quickly and smoothly, as if slurping it up rapidly. The noodles are easy to intertwine and lift the soup well. The dry feeling of the soup makes you imagine capillary action. Play with the flexibility and ease of the noodles! The meat filling of the wonton escapes from the wonton skin... Enjoy eating it while mixing it with the noodles.

There were also spicy stamina flavor and popular salt flavor options available. You purchase a meal ticket before ordering. The counter is divided by partitions and there are low chairs where you can relax. There are also a few table seats. The number of staff members is sufficient, creating a calm dining space. It's about a 10-minute walk from Mitaka Station South Exit, which felt a bit far. I thought they may have intentionally created a spacious interior due to the distance from the station. The soup has a clear appearance and pairs well with the delicate wontons, creating a beautiful ramen. The soup has a subtle seafood aroma and a refreshing taste. It's on the saltier side. The green onions complement the dish well. It tastes like a clearer version of Kitakata ramen. You can request for a thicker soup, which may enhance the smoothness. I added some pepper for a different flavor. The wontons have very little filling, allowing you to enjoy the smooth texture of the skin as a second type of noodle. The noodles are slightly soft and straight, making it easy to eat. The pork slices are not fatty and thin, making them easy to eat. I was tired of low-temperature cooked pork slices, so I appreciated this more typical version. Overall, it's a well-balanced ramen. This is a relatively new shop that has only been open in Mitaka for about three years. It seems to be a place that will be supported by local customers such as women and families.

This is the only branch in Tokyo of a renowned restaurant from Sakata, celebrating its 60th anniversary. Their specialty, the wonton wrapped in thin skin, is arguably the best in Japan. I arrived at 3:40 PM to find the restaurant not very crowded. I purchased a ticket for "Wonton Men" and when I handed it over at my seat, the ramen arrived in about 5 minutes. The light soy sauce broth had almost no oil floating on top, and on top of the glossy medium-thin noodles were slices of pork, wonton, bamboo shoots, and chopped green onions. When I tried the soup, I could taste the light soy sauce flavor, saltiness, and a rich umami depth. The broth seemed to be mainly chicken-based with dried seafood and kelp, with a hint of acidity from seafood enhancing the overall flavor profile. The soup had a natural sweetness, possibly from root vegetables or the essence of chopped green onions. The noodles were cooked al dente, with a smooth texture that absorbed the soup's umami, creating a subtle depth of flavor. The wonton, filled with a small amount of pork seasoned with soy sauce, had an incredibly thin and smooth skin that melted in the mouth. The pork slices were a bit tough and lacked juiciness, making it slightly challenging to taste the meat's umami. Overall, it was a traditional yet subtly impressive bowl of ramen, showcasing the expertise accumulated over the years. I ordered the Char Siu Wonton Noodle (1040 yen). The restaurant is family-friendly, as they even have a children's ramen on their menu. The children's ramen with corn arrived first, followed by the Char Siu Wonton Noodle. The Char Siu was beautifully sliced in a spiral shape, and the wontons were hidden underneath. The soup was unexpectedly a Japanese-style broth with seafood flavor, which was comforting. The wontons had very thin skin and needed to be handled delicately to avoid tearing. They were smooth and elegant. I usually leave some soup behind, but this broth was so delicious that I finished it all. The children's ramen was also in soy sauce base and was consistently tasty. Even when leaving the restaurant, my companion was still happily talking about how delicious everything was, even though they couldn't differentiate between ramen and udon. However, I finally went on a weekday when I had the day off. I realized that if you take a day off on a weekday, you can actually visit popular ramen shops without much of a wait.
