About a 3-minute walk from Ebisu Station East Exit, there is a popular restaurant tucked away on the first floor of a building. You will always find a line outside, and when you line up, the staff will guide you to purchase a meal ticket from the ticket machine inside the restaurant. Then, you join the back of the line. The restaurant has about 10 counter seats and has a clean and elegant atmosphere like a traditional Japanese restaurant. I tried the special miso ramen this time, which came with three rare slices of chashu pork and a boiled egg. The soup was mild yet rich in flavor from multiple types of miso, along with a strong umami taste from pork bone and seafood. The noodles were medium-thick curly noodles, providing a satisfying chew that paired well with the flavorful soup. The chashu pork was rare and slightly oily, adding to the overall balance and sophistication of the dish. It was a delicious miso soup that maintained its appeal until the last bite, allowing for a leisurely and enjoyable dining experience.

I have tried many miso ramen shops, but I still love this one the most. They sprinkle mountain pepper and serve it with plenty of bean sprouts. The broth has just the right amount of pork fat and a refreshing taste that makes me finish the soup every time. It's not too heavy, so I usually pair it with a lemon sour. I will definitely visit again.

It had a slightly salty taste, but as I ate more, I could feel the depth of the flavor, which was delicious. The shop has a clean atmosphere. The interior of the shop is playing JAZZ music. The attention to detail in the dishes, trays, and the owner's dedication can be felt, and the cleanliness is well maintained. The drinking water has charcoal in it, showing attention to even the smallest details. With such a shop, there's no way the ramen could be bad! I ordered the special ramen. The char siu in particular was exquisite, rare and juicy, delicious on its own or when combined with the soup. The combination of the soup and curly noodles is excellent, with a flavorful soup that isn't too spicy. I added some sansho pepper for a change in flavor halfway through, and it was a perfect match. Rich miso ramen! The soup has a strong miso flavor, not too sweet but more like a slightly peppery taste that is easy to drink. The chashu is thinly sliced and cooked low and slow, making it soft and easy to eat! It was delicious and satisfying!

I wanted to try a ramen shop in Giroppon, but it was closed, so I went all the way to Ebisu for ramen. The shop was located near the exit of Hibiya Line, towards Naka-Meguro, on the first floor of a building. They only had counter seats and you had to buy a ticket to order. The menu had miso ramen as the basic option, as well as miso mixed noodles and seaweed miso dipping noodles. I was hoping to try the seaweed miso dipping noodles, but they were almost sold out, so I ended up getting the special miso ramen. It may not look very extravagant, but the Chashu pork was delicious and the miso flavor was strong, with a nice harmony of chicken, pork, and seafood. The slightly firm noodles also went well with the broth. I couldn't help but search for the last piece of corn. Overall, it was a well-balanced bowl of ramen.

Finally, the long-awaited tsukemen. Is this completing my Hibari collection? Tsukemen takes a bit of time. After a while, it was brought to me. Wow, it looks delicious! It also came with salt from France, so I dipped the noodles in it first. Oh, this is delicious. It's already perfect. The noodles coated in konbu water are refreshing. The konbu water is rich and thick. The soup with plenty of leeks and green onions goes perfectly with the rich miso flavor. When you dip the noodles and take a bite, you'll be surprised. The noodles are coated with konbu water, so it's more like adding the soup on top rather than mixing it. Delicious, delicious, a valuable tsukemen. I poured the soup into the bowl. It's a matter of preference. The noodles are similar to miso soup, with a taste close to miso. It might be good for those who like miso. The roasted pork is thinly sliced and on the fatty side. I think it would be better with regular thick slices of roasted pork. I finished it, but I probably wouldn't choose to go there myself.

It's located very close to Ebisu Station, but not facing the road, a little inside a building on the first floor, which made me a little lost. I ordered the special miso ramen from the ticket machine inside the store. If you don't specify, it comes with thick noodles. It only took 5 minutes to be served. It has a slight spiciness, but it's dangerously good. It's amazing when eaten with white rice. The portion was sufficient, so I just glanced at the rice dish ordered by the young person next to me. The char siu on the ramen seemed rare and was actually grilled with a burner. It was delicious this way. The thick noodles had a nice texture and were tasty too. I finished every drop of the soup. Miso ramen is really delicious.

I have tried miso ramen several times in the past, so this time I ordered the first ever kombu water miso tsukemen. At first, I tasted a bit with just salt to savor the flavors of kombu water and wheat. The noodles were soaked in kombu water, so there was a slight slippery texture. The slippery coating on the noodles prevented the miso dipping sauce from becoming too thick, making it easy to eat. However, personally, I prefer when the noodles have a firmer texture and when they mix more with the dipping sauce, so I found it a bit lacking. The toppings of egg and chashu (ham?) that came with it were delicious. The restaurant was clean with a nice Japanese atmosphere. Perhaps due to the care put into it, the kombu water miso tsukemen was a bit on the pricier side (1600 yen), so the value for money is a bit low. In summary, I prefer ramen over tsukemen.

I really like the miso ramen here, so I ended up ordering it two times in a row. I planned to try the konbu water dipping noodles next time, but I couldn't resist and ordered miso ramen again! Am I afraid of change or is the miso ramen just too good? I think it's because the miso ramen is just too delicious! I will definitely try the konbu water dipping noodles next time. Let's do this!

When I arrived for lunch, there were already about 5 people in line. The inside of the shop was clean and had a calm atmosphere for eating. It's perfectly fine for a woman to dine alone here. Since it was hot today, I decided to go with the special dipping noodles. Delicious... First, just the noodles. Delicious. Enjoyed with French salt. Even better. And then, the dipping sauce. It's rich with miso flavor that won't disappoint. The egg and meat served on the side were also amazing. I will definitely come back!

I visited the restaurant on a weekday before 1 pm. Despite being located deep inside a mixed-use building and being hard to find, it was almost full. I ordered the most basic miso ramen for 950 yen. The service was quite fast. The soup had a rich miso flavor. The chashu was thin but moist and delicious. The corn and bean sprouts were crunchy. The bean sprouts were carefully prepared, giving the impression that the dish was made with care. Personally, it wasn't so delicious that I would want to eat it again, but the miso broth was comforting in the winter. Thank you for the meal.

I was able to get in without waiting when I visited at 4:00 pm. I always thought it was super crowded and passed by, but it seems that the limited number of seats also has an impact. I ordered the special miso ramen and the spicy miso ramen. The spicy miso ramen has three levels of spiciness, and I chose the highest level, Fire. It is said to be twice as spicy at level 2 and four times as spicy at level 3. On the table, there were only chili pepper, sansho pepper, and garlic as condiments, which was quite unusual. The spicy miso ramen had just the right amount of spiciness, but the umami of the miso seemed to have disappeared. If you want to taste the miso, it might be better to go for level 1 or 2. It's not always better if it's just spicy. The special miso was very delicious. The soup seemed to have not been boiled with miso, so I was able to enjoy the fragrant soup. I was happy that the chashu was lean and clean. Also, try eating rice with the special miso soup, it's heavenly, so please give it a try. I had it with lard rice, but it was too heavy for me. I would like to try the special miso again next time. I strongly recommend visiting when it's not crowded. Thank you for the meal!

I had heard from a friend who lives in Ebisu that if you want to eat miso ramen, you should go to Hibari. I had bookmarked it for a while and finally decided to visit. I was a bit nervous because I had read that there is usually a long line. I went around 12 o'clock during the Obon period and the restaurant was almost full, but luckily I was able to get a seat. It seems like a popular place as people who came after me had to wait in line. You purchase your meal ticket from a machine inside the restaurant and then take a seat. There are counter seats and a couple of tables available. You can also get a paper apron. The person next to me ordered the spicy miso ramen, which looked interesting, but since it was my first time, I decided to go with the Special Miso Ramen for 1300 yen. The ramen came with rare chashu pork, corn, bean sprouts, and half-boiled egg. The bean sprouts were crunchy, the chashu pork was tender with less fat, which I liked. The egg had a nice flavor from the broth. The noodles were thick curly noodles cooked al dente, not soggy even when eaten slowly. The miso broth was made from a blend of 5 carefully selected miso pastes, giving it a strong miso flavor. It had a salty kick and richness, but a refined sweetness in the aftertaste. This sweetness and richness seemed to come from the pork fat. Overall, I felt that it was an elegant type of miso ramen.

I ordered the Miso Wae Men (1400 yen). In Ebisu, where there are mostly refreshing ramen options, whenever I feel like having a rich flavored ramen, I always go to Kakitagawa. During lunch and dinner hours, there is usually a line, but around 2 pm, you can usually get in smoothly. My favorite is the Miso Wae Men. The noodles are thick and the flavor is rich. The portion of noodles is generous, providing a satisfying meal! It also comes with a bite-sized bowl of rice (with seaweed), which is a nice option for someone like me who likes to have rice with ramen. Lime is also included as a side, allowing for a refreshing flavor change. My personal recommendation for flavor change is 1) grate the free garlic once for a flavor change, 2) add garlic to the rice for an extra kick, 3) finish with lime for a refreshing taste.

I visited this restaurant for the first time at night, but the kombu water miso tsukemen that I wanted to try was sold out during lunchtime. I could only take a photo of the ticket machine and the exterior and had to wait for a few months. It took me almost two years to finally visit the restaurant. There are many places now that offer tsukemen using kombu water, but this is the only place I have visited that serves it with miso. This time, I was able to try the kombu water miso tsukemen, but to put it simply, the combination of kombu water and miso didn't quite work for me. I prefer the regular miso flavor. A friend who joined me had the same opinion. If I have the chance, I would like to try the regular miso ramen next time. Thank you for the meal.

There were a lot of bean sprouts, which could be seen as a good thing. That's all for my review. I've learned that shops in Tokyo that are open all day tend to have a higher chance of being delicious, even if you go at odd hours. It's more important to rely on your own feet than on advertisements and reviews.
