I arrived at a ramen shop after passing five ramen shops along the main street from the north exit of Kinshicho Station. The shop has an L-shaped counter with seating for 8 people, and there is a ticket machine on the left side of the entrance for cash payments only. If you want to pay with PayPay, you need to check the menu first and then you will be instructed to take a seat. The shop is run by the owner alone. The recommended dish is tsukemen, and when you order, the owner says, "Please wait a moment," without stopping. When the owner is available, you can show a QR code on a tablet for payment and your order will be placed. You can request to change the flat noodles for the tsukemen, but it takes longer to cook than usual. They do not offer hot noodles. In less than 10 minutes, the dish arrived with toppings such as a large slice of chashu, menma, green onions, and ginger (which was not visible). First, I tried the noodles. They were flat noodles that had been rinsed with cold water, slightly curly, with a chewy texture and a delicious wheat fragrance. The noodles are made by Murakami Asahi. The soup is a triple soup made from pork bones, chicken bones, and white fish bones, which gives it a deep flavor. The chashu topping is thickly sliced and hand-cut right before serving, and it is one of the best I've had recently. I ate about half, then added fried green onions and pepper for a change in flavor and finished the dish. They provide a soup-wari bottle on the table. I poured some into my bowl, added the routine vinegar and chili pepper, and enjoyed it. It was delicious. They only serve cold tsukemen, so you can also order a hot stone to prevent the soup from getting cold, but I declined this time (as I might have to wait longer). The owner provides polite service, giving instructions to others, but often says "Please wait a moment" in response to my requests. If the noodle cooking time is a bit long, it might be good to come up with ways to start cooking them earlier. However, I could see the care taken in preparing each dish, and I am satisfied. Although I don't mind the one-man operation, some people may not like the service.
