Served Vegetable Tanmen at 10:08 for 682 yen
I passed by this restaurant the other day and noticed they were serving Vegetable Tanmen, so I decided to visit and try it out. Upon entering, I found that it was a standing-style eatery, so I stood at a vacant seat with plastic dividers. I was promptly served a glass of water. (Later, a pot with more water was placed on the table.) I checked the menu and ordered the "Vegetable Tanmen" verbally. The table was equipped with dipping sauces for gyoza, yuzu-flavored gyoza, vinegar, chili oil, super spicy 10x chili oil, S&B Select Spice Black Pepper (powder), and salt for fried food. The restaurant was managed by two men and one woman, with J-POP music playing in the background. After about 7 minutes, the dish arrived in a smaller bowl than expected.
The noodles were thin, curly, and yellowish. They were cooked just right, slightly soft but had a good smooth texture. The ingredients included pork, cabbage, bean sprouts, carrots, onions, and wood ear mushrooms. The ingredients seemed to be lightly stir-fried before being mixed with the soup. The pork was cut into 1cm cubes and had a firm texture after being salt-boiled. The vegetables like cabbage had a crunchy texture. The amount of vegetables seemed slightly less than 200g. The wood ear mushrooms were small but had a pleasant chewy texture.
The soup was a milky white salty broth made mainly from chicken bones and aromatic vegetables. It had a slightly thin chicken white broth-like consistency with a hint of ginger flavor in the aftertaste. The saltiness was just right, and there was a generous amount of oil, giving it a rich taste. Additionally, coarse ground black pepper was sprinkled in advance, providing a spicy and flavorful kick from the beginning. I finished the noodles and ingredients without adding any extra seasoning. I left about 30% of the soup and paid before leaving the restaurant.
Overall, the soup was surprisingly good, resembling a chicken white broth. The noodles and ingredients were satisfactory. However, the dish felt slightly lacking in volume when ordered as a standalone item, possibly due to the menu being centered around gyoza. The service was polite, and the restaurant had a clean atmosphere. Since it was a standing-style eatery, standing for an extended period towards the end of the meal became a bit tiring.
